Yesterday:
B: 2 whole eggs, Kashi cereal with a few almonds, skim milk, coffee
26 mile bike ride - for some reason I was starving and ate an entire Cliff bar before the return part of the trip (HRM told me later I burned far more calories on this ride than expected)
L: Pro Bar Superfood Slam (still hungry afterwards but this packs a lot in one little bar - and there wasn't time for a real lunch)
S: almonds, raisins
D: roasted skinless chicken breast, small baked sweet potato, mixed fresh salad greens and a very small amount of fruited vinegar/oil dressing
Party! A little bit of this and that and 2 beers.

Way too much.
B: 2 gg omelette with sauteed apple slices, cinnamon, brown sugar, and Greek yogurt, 3 slices of turkey bacon, coffee
S: slice of Ezekial sprouted grain bread with soy nut butter before 12 mile hilly ride
L: salad with romaine, spinach, turkey breast, grape tomatoes, red peppers, goat cheese, chocolate balsamic vinegar, cup of tomato soup
D: at restaurant with my son, tilapia with green chilis and peppers in a somewhat creamy sauce, black beans, 2 glasses of sangria

Uh, well.
B: 2% Greek yogurt with a generous drizzle of honey and granola
L: Turkish restaurant. 2 small falafel, a bit of a pepper-walnut-olive thing on bread, 2.5 pieces of beef/lamb kofta.
S: Small frappucino. Piece of chocolate
D: I haven't eaten it yet. I think I'm going to cut up the remaining kofta and put it over a green salad with goat cheese, radish and bell pepper.

B: sliced tomatoes with tuna and a sprinkle of low fat cheddar, an orange, coffee, after Boot Camp class. I was so full from yesterday, I didn't even feel like eating before I went.
L: cup of tomato soup, 4 turkey breast slices rolled up with low fat cream cheese, an apple
S: nuts and cranberries at 2:30, 3/4 a Luna Bar at 5:00. I rode 5.5 miles with a teenaged client, who likes hills.
D: finished the chick pea, spinach, and whole wheat pasta soup, with some blueberries, 2 squares dark chocolate.

Snack: apple, 1 fresh kiwi, 2 coffees with milk
Snack 2: small cup of yogurt
D: less than fistful of lean beef stir fried lightly with onion, garlic, red pepper and gai lan veggie. Tea with milk. A large slice of cantaloupe.
I cycled to and from work...only 8 km. round trip.

I am back--guess what everyone-- i had the chicken pox!!! Yes, i had them when i was younger too and nope--it wasn't shingles...it was actually the chicken pox again. :eek:
anyway, i'm back now!!
AM Workout: 1 hour of BODYpump class
Breakfast: 1/2 cup of almond/cashew mix with coffee and bottle of water
Lunch: PB&J (whole wheat, sugar free jelly, natural PB, with naner slices) and a sliced apple
Snack: Orange
Dinner: Hubby beat me home after our hair appointment date (yes we do that), and he surprised me with a steak dinner, THE BEST MUSHROOMS EVERRRR, sweet potato, and vegetables...ah lucky girl..

D: 1.5 tuna burger patties (with whole wheat bread crumbs, egg whites, dried mustard), sweet potato, tomato slices 1/4 avocado slices, glass of red wine, 2 squares dark chocolate
I am leaving early tomorrow for Grand Junction, CO for my former exchange student's graduation from university. Since he has achieved an incredible amount in the past 9 years (pro cyclist, started and continues a very successful coaching business, coach of the CMU racing team, 3 years of college totally paid for by the university, straight A average), I am going to sign off for a few days. I will be prudent, but might indulge a bit. We will do some hiking while there.

Yesterday:
B: 2 eggs, steel cut oats with almonds and dried cranberries, skim milk, coffee
S: 1/2 Power Bar (I simply must go to the grocery store!)
L: Homemade beans and brown rice (very little rice) with a roasted skinless chicken breast. 12 Trader Joe's Sweet Potato Tortilla chips
S: The other half of the Power Bar
40 minute upper body weights workout
45 minute advanced Bosu class (he kicked our butts) It's an hour class but I twisted my ankle and had sat out 15 minutes icing - it is fine though :)
Ravenous after that - another Power bar on the way home
D: roasted skinless chicken breast and non-fat cottage cheese, skim milk
Calories were too low, and no veggies to speak of...I'm learning that when I get home from an especially long workout or ride I am much too hungry to cook anything. I think it is time keep some veggies cooked in advance like I do chicken so I can just heat stuff up. I don't care for left-over veggies but I need to do something.

PM Workout: Wednesday Night Ride with the team...so. much. fun! 30 miles of hills--HILLLSSS...i love finishing that ride--it feels so good.
Dinner: Lean pocket pack of turkey/ham/cheese with 1/2 an avocado. Also ate a few pizza bones from Hubby's pizza (i would say they were equal to a few crackers)
Snack: Mangooooooo!!!:p

I think it is time keep some veggies cooked in advance like I do chicken so I can just heat stuff up. I don't care for left-over veggies but I need to do something.
You might try this:
I get a weekly CSA basket from a local farm. I set aside a few hours to clean, slice, dice & chop the bounty, then store it all in tupperware containers. So, when I get home from a long day at work, everything is ready to be tossed into a saute pan or steamed or dumped onto a salad or whatever. If I had to take the time every night to clean and chop, I'd eat a lot fewer veggies and half my CSA stuff would probably go rotten in the fridge.
So, it's time consuming just once a week!

Welcome Back! Sorry to hear about the chicken pox.
BUT< don't you ever get tired of nut mixes for breakfast and pb&j for lunch? I'm thinking for nutrition too, you could use a little more variety in your diet. More, reds, yellows veges, fruits, etc???
Don't mean to get on you, just thinking this is a bit too one dimensional

hmmmm, good idea. I always have the best intentions when I go shopping...but somehow I only winding up getting kale or chard and that is that. I need to change that.

I feel like I did so badly today, but the numbers say I barely made my 2K target
B: 2 eggs, Kashi Autumn Wheat cereal with skim milk and almonds, coffee
13 mile chilly bike ride to work
S: starving...Power Bar (fruit and nut bar) still need to go shopping
L: Pita Pit Chicken Souvlaki (whole wheat pita)
3 mile ride/meander to gym
60 minute weights session (including warm up and stretching)
15.5 mile ride home - stopped to inhale another Power Bar (protein bar this time - starving again)
D: 1 cup leftover bean/rice soup with a few sweet potato tortillas, 1/2 cup no-fat cottage cheese (pretty much all that was left to eat in the fridge)
Grocery shopping time :)
S: 1 slice Ezekial bread, 2 ounces herbed sliced turkey, 1/4th avocado slices, and 1 beer
Apparently my body doesn't know what to do when exercise is spread out over the course of the day - it wants to eat all of the things! I could still eat...but I've made my target for the day and enough is enough.

I've been eating out too much. None of it terrible (save the giant burgers this week, but that time of the month is approaching and I'm getting beef cravings), but it's getting a little expensive.
Yesterday:
Ham, egg and cheese sandwich, coffee
Broccoli and cheddar soup; avocado, lettuce, tomato, smoked turkey and bacon on sourdough (mm!), water
Coconut water
19.2-mile ride (1 Clif bar and 1 shot block)
Brown rice with andouille (sp?) sausage, green bell pepper and onion. I was going to put kidney beans in it but forgot. Oops! Also a salad with Caesar dressing.
Piece of milk chocolate.
Today:
Bolthouse protein shake
Late lunch due to a busy lab day. We went to Chipotle. Chicken fajita burrito with brown rice, tomatoes, hot salsa, sour cream, cheese and lettuce. I ate about 2/3 of it. Glass of Coke.
Coconut water, 1 Clif bar
Fast 14.8-mile ride. 1 shot block
The other 1/3 of the burrito, and some tortilla chips.
I'll probably have some rice pudding as dessert.

Got back from my trip about 5 PM. I'll post today's food, but I was not able to be really strict during Thursday, Friday, Saturday. We did hike 5 miles, pretty strenuously on Friday, of course followed by salad, soup, and a bottle (:eek:) of wine at an Italian bistro. All of a sudden, I feel kind of flabby.
B: before leaving for the airport, I had a little 4 oz. size of light and lively strawberry non fat yogurt. Probably the first time in 5 years I've had a flavored yogurt. At the Grand Junction airport, I had a Subway flatbread breakfast sandwich with egg whites, pepper jack cheese,spinach, and tomatoes, coffee.
S: Ate a Luna Bar waiting for the plane in Denver
L: we upgraded to first class, so we got a real lunch. grilled chicken breast with a spicy tomato sauce on the side, green beans and brussel sprouts, a green salad, which I used just some lemon juice on, and a side of smoked salmon and capers. I skipped the rice and had one bite of a roll.
S: 2 whole wheat pita rounds, one piece of Machengo cheese
D: grilled chicken breast marinated in oil, honey, and tabasco, brussel sprouts, and a salad. 2 squares dark chocolate
S: an apple

48-mile bike ride--8 shot blocks, water
Stopped for a mid-ride lunch at a little restaurant in Corwin/Waynesville. Had a chicken sandwich on a multigrain bun, chips, a pickle, half a can of Pepsi, and a cookies-and-cream ice cream cone. I'll have to visit this place again, because people were very enthusiastically talking to their riding buddies about it and there were some things on the menu I'd like to try. Maybe I'll have to ride just to eat there!
Frappucino after the ride.
Homemade mac and cheese with ham and broccoli
Sunday:
Cereal with 1%, tea with 1%
Mocha with whipped cream, grilled cheese.
Brown rice/sausage/green pepper, 1 slice bacon, radish greens+spinach cooked in bacon grease
Glass of iced Thai tea...I mistimed that caffeine consumption!

Today:
Had to go so someone's thesis defense, forgot about it until someone called me. Hence no breakfast except a cookie provided at the defense. Also no coffee. :(
Post-defense party: two small plates of Chex mix, probably 4 fl oz champagne. That was probably not the best plan... Small amount of brown rice/lentil/barley/carrot thing.
Turkey sandwich and a Caesar salad
3 mini Reese's cups, half-decaf latte.
Spaghetti with marinara and a generous allowance of cheese. :D Also a pile of raw veggies (radishes, broccoli, red, yellow and green bell pepper) dipped in hummus. I'll round it out with some Greek yogurt with nuts, honey and pomegranate seeds for dessert.

And...I finally hit my rest day calorie goal - or at least the lower limit of it :) I am in training out of the office all week so I don't have any real chance to vary my snacks and lunches this week.

D: I had to eat at a client's house, so we could observe the kid's "manners" and social interaction skills (my colleague works on this stuff). I had 3 meatballs, one piece of ravioli, lots of salad and a small piece of garlic bread.
I had a glass of wine when I got home.

Very full.
I feel weird walking around the same streets I walked with my youthful boyfriend, with my DH.

Today:
One of those mini quiche things from Panera (the bacon and spinach kind), iced coffee with a bit of vanilla syrup (WHEN will these people learn that sugar does not dissolve in cold water?!) and half-and-half.
2 sourdough rolls, most of a wedge of Cotswold cheese, bell pepper strips, an apple.
1 beer with my PI
Went out for Mexican with a friend. I had steak fajitas (3 tortillas, bit of rice, guac, sour cream, lettuce). Salty! The one redeeming feature is that I don't have to cook tomorrow.
Small bowl of rice pudding.

L: 1/2 pulled chicken po'boy and a small side of mushroom etoufee
30 minute weights workout (mainly upper-body)
13.5 mile ride home
D: Green leaf salad with roasted skinless chicken breast, raisins, almonds, tomato, shredded Gouda, small amount of extra virgin olive oil/apple cider vinegar dressing, skim milk
S: strawberries with no-fat Greek yogurt
I did hit my total calorie target pretty much on the button, but net calories were WAY down there. I am contacting my dietician for help in figuring out my target on days when I burn more than 1k calories in exercise. On easier days I don't worry about net calories but as my efforts increase...

Yesterday was a race day... short and intense. Here's what I consumed:
B: oatmeal with peaches and almonds, 2 slices of buttered toast
Pre-race: 1 Gu, 1 Roctane
Post-race: 10 oz nesquik, Some chips and guacamole
Lunch: nicoise salad with smoked salmon
Dinner: potato gnocchi with asparagus, sardines, fresh squeezed lemon, and shaved parmesan
I'm riding 50-60 miles this morning... probably just start my day with a PB + J!

we went on a 40 mile ride, mostly rolling, false flats and slightly uphill.
L: during the ride I ate a chicken salad sandwich on whole wheat. Lunch was a little early, but I was hungry. I should have just had half a sandwich. I also nibbled on my mix of nuts, cranberries , and chocolate as we rode/stopped.
S: I finished the mix as noted above on the 1.5 hour drive home. Then I ate a piece of Ezekial bread with hummus.
D: blackened swordfish, sweet potato, vegetable mix of carrots, broccoli, cauliflower, a salad, glass of red wine

2 homemade crepes with lovely fresh asparagus, a light white chive sauce over the crepe. (Asparagus from local farmer means the asparagus cook under 5 min.!)
1 crepe with freshly cooked rhubarb, saskatoon berry and blueberry compote that he prepared. Only honey was used as a sweetener.
apertif with maple syrup, anise seed and water
A perfect holiday...it's Victoria Day in Canada tomorrow.

24.5 mile tandem dinner ride – didn’t fuel properly for this and wound up with dropping blood sugar

My weight was really low this morning and then my ride was cancelled due to rain that never happened

L: So, on my way home from work, Hirakukibou called me to tell me that rain was predicted at 2. We were supposed to ride at 1:30. It was cloudy and very threatening out, so we cancelled. DH arrived home at the same exact time. We deduced we were ready to start the holiday weekend, so we went out to lunch, where I had an eggplant, pepper, and mozzarella panini, with a beer.
Of course, I was in no shape to ride then, even though it never rained. A real rest day, like a "normal" person.

D: (late) Chicken sausage, green salad, one slice sprouted grains bread
Didn't hit my net calorie target but didn't do too badly. I felt like i had eaten far too much :eek: It is hard for me to eat when I've had a long ride in high heat. 91 may not be all that high, but we aren't used to it :eek:
Sunday: Rest day
B: Steel cut oats with blueberries, PB, coffee and skim milk
L: baked sweet potato, roasted skinless chicken breast, kale chips
S: cookie, a couple of almonds

I feel like a beached whale, but have barely met my rest day calories goals - I think because the volume of my food today has been more than usual. Yummy fritatta though, I made it in my muffin tin and just made a small amount for my dinner. It was a good experiment.

D: (restaurant) chicken breast with poblano mole sauce, refried beans, a couple spoonfuls of rice, 4 chips and salsa, one beer
kiddie sized soft serve ice cream with chocolate dip
Today:
B#1 one slice Ezekial raisin toast with soy nut butter, blueberries with a bit of Greek yogurt
16.2 mile ride, at mile 11.5, stopped and had second breakfast of breakfast burrito, which was on a whole wheat wrap and had eggs, cheese, and some potato, coffee

Brunch: Tall made-from scratch virgin bloody mary with a celery salt rim, biscuits with poached eggs, ham salad, and hollandaise. Almonds.
Dinner: 1.5 Hot dogs with relish and mustard, baked beans, watermelon. One of those mini ben and jerry's ice creams that you can buy at the store.
Tomorrow I've got a century ride planned. Big day! I'll start out with a giant bowl of oatmeal with apricots and almonds. Bringing along 2 full bottles accelerade, more accelerade in a baggie, 2 clif mojo bars, $$$ to get more food as necessary. After the ride I'm planning on downing a nesquik (now made with actual sugar), a baggie of salt and vinegar potato chips and a PB + J I made tonight.

I am no nutrition expert, but I would think a nice meal of rice or potatoes, some kind of protein, lots of veggies, maybe a salad sprinkled with nuts and dried fruit, and fresh fruit would be great and help you to recover but still be healthy.
I did a half century this weekend in 88 degree weather and noticed the other cyclists at the rest stop eating all kinds of refined carbs, sugar, and junk. Part of me wishes I could do that - but it just sets up craving for more of the same and won't help me get to my goal. I was actually content with a big ole' banana and some powerade zero. Ended the ride with a 16.8 mile average!!

we did a 2.2 mile hike that was about 460 feet of pretty steep climbing. About half of it was on a road that made me think "I wonder if I could ride up this...?" We saw one rider coming down. I did 105 miles today in the searing hot sun with a 30 mph headwind 2/3 of the time (ugh and I was riding north 30 miles before the winds picked up so no benefit of tailwind either). It might have been more tolerable had I had someone to commiserate with, but alas. I'm feeling pretty good right now!
I started my day with a giant bowl of oats with apricots and almonds
On the ride:
4 bottles accelerade
1 snack pack of fig newtons
1 bag of kettle cooked salt & vinegar chips
2 clif mojo bars
1 Orange gatorade (I would have done anything for a cold drink by mile 90)

the most heavenly 'deep dish' pizza with fresh handmade tomato sauce, roast chicken, roasted garlic, and roasted red peppers. It's from a place in St. Louis/D.C. called Pi. Their deep dish has this crispy corn meal crust that is just to die for. Carbtastic but not junky at all. I ate half of a 12" pizza. :D I figured that was going to be better than the massive milkshake I was thinking about having for dessert.

HARD workout..they don't call it high intensity for no reason :eek: I was so wiped out that I bought a container of Muscle Milk on the way out the door. Pretty cool I was able to keep up for the most part :cool:
Still under my 2,000 calorie goal today enough that I need to eat something, so will have a slice of Ezekial bread toast with a tsp of PB, and probably a cup of skim milk. I KNOW I must eat but it is hard after such a workout. At least the Muscle Milk gave me enough protein, but not many carbs.

Each week I try to find a new veggie I've not had before and this week it was Fennel. I don't think it roasted quite long enough, but I think I will try it again. Is it worthwhile to do anything with the stems and leaves? I did keep them, if nothing else I can use them in the stock pot
Oh yes, I sliced into my palm when slicing the Fennel bulb lengthwise :( Thankfully my tetanus shots are up to date...there has to be a better way of slicing the bulb. I've a 38 mile ride planned tomorrow so hopefully the wound won't get in the way.

D: I went out to a local winery/restaurant that i hadn't been to in 20 years. No exercise at all yesterday; I felt awful and ditched the 5K I was supposed to do as it was pouring out, I couldn't breathe, and I was aching all over. By the time I went out, the aches had left, but I'm still not 100%.
I ate a lot. Slice of bread and apple butter, 2 glasses of red/blueberry wine, a couple of crostini and goat cheese/grapes, swordfish with tapenade on a bed of risotto (I ate half of the risotto), tea and a couple of tastes of DH's dessert.
I was starving yesterday and since my weight was way down Friday, I ate a lot more bread than usual. I think my body is reacting to the increased exercise. Weight is up 2 lbs. today, but it should even out.

Catrin, it's OK to eat that late! You had a lot of exercise. I know that insatiable feeling when you've done a lot in one day. If I don't eat when i get that feeling, I wake up in the middle of the night so hungry that I have to get out of bed and eat.

Hey spoke wench! I gotta be honest-- i dont get tired of BF and L ever...i hope it's not bad. For dinner, i get plenty of colorful veggies and different kinds of meats. We usually switch off tilapia, chicken, steak, or beef. DH loves to cook so he enjoys going to the store and picking out the best, fresh veggies for us to have for dinner .
no worries, i dont feel like i'm getting picked on at all!! Love the input.

I always have a bedtime snack! My doc recommended something with a bit of protein to help me sleep through the night. It has helped :)

Thanks for the feedback, I am never sure about eating more than a snack close to bed - but I knew my body needed something substantial.
Interestingly enough I woke up after midnight, well I always do that, but when I got out of bed and walked across my apartment my quads were just on fire :eek: They are fine today, and I DID stretch and foam roll when I got home - perhaps bed came too quickly after my efforts?
Regardless, it was probably too much to do all that work at the gym and then ride in the wind for an hour to get home. I won't do that again without cutting out either the weights or the Bosu class. Both today and tomorrow are rest days as I've a 3 day weekend of mountain biking coming so I want to go into it fully rested and with fresh legs (and neck). I don't like taking 2 rest days in a row, but it seems wise.

Yes indeedy :D It has been 8 full months since my neck injury on the mtb trail, and I have managed to get in 3 easy rides on a very basic beginners loop recently (my only local option). After the Women's Clinic I will be more confident about riding by myself in Brown County State Park - but it's been so long that it seemed good to do the clinic first.
So, to get this somewhat back on topic, I am considering what kind of fuel to take with me for 3 days ;)

Apparently I have the appetite of a man because I seem to be eating a lot more than what most of the Team Estrogen women are posting. My current 37yo (5ft 1in, 112 pounds) appetite is actually only about 33% of what it was when I was 18yo and I am trying to restrain myself so that I can get to my goal: previous weight of 104 pounds at my wedding.
I'm trying to be less hungry by filling up my stomache with water and little scoops of protein powder here and there (which does seem to curb my appetite a little).
Yesterday:
B: Large cup of water with 50% water and 50% low fat milk and a scoop of protein powder with a scoop of Citrucel
S: 2 medium sized Chocolate Chip Vegan Cookies;Water with a scoop of protein powder and a dash of caffeine and a dash of milk.
L: Large bowl of chicken salad and Dorito Chips (2 large handfuls)
S: Small amount of Shredded chicken. mango, protein bar, handful of nuts.
D: 8 dumplings in a bowl of soup with noodles.
Exercised on my Elliptical machine for 30 minutes along with sit ups
Today:

Tiger Mom, have you thought about changing your breakfast to something more substantial, that includes protein, like eggs or egg whites, veggie burgers, or even tuna? You might find you are a lot less hungry.
You and I are about the same height and I recently shed 5 lbs., to get to the same goal weight you have. I eat quite a lot, but I lost the weight with the above, plus absolutely no white rice, Asian food (too much salt and high glycemic carbs), increasing my veggies and watching my intake of carbs overall. I lost the weight in 8 wks. and I pretty much have continued eating the same way (which wasn't much of a switch for me), except for fueling for my longer rides.
You will get sick of having water and protein powder for breakfast. There are a lot of good things to eat for breakfast that are real food; they don't have to be traditional breakfast foods. Instead of focusing on getting to a goal weight for your wedding, it might be easier to think of it as a quest to find a new way of eating that you can sustain for life.

I guess I should clarify about the wedding weight...I've been married 11+ years and want to be 104 pounds again like when I was younger.
Actually, having the water and protein powder with a splash of milk for breakfast and the protein bar about 45 minutes later is a lot less than I used to eat (my typical dinner at age 18yo used to be 1 basket of chips and salso from Acapulcos along with the entire chicken enchilada combo platter and a dessert. Now I eat about half that amount at age 38yo).
But, in answer to your question, yes, I do eat 3 eggs and 4 slices of bacon on the weekends for breakfast along with the protein and water and skip the protein bar on the weekends before lunch. I do eat an energy bar/granola bar before bike rides though for the carbohydrate energy to prevent the "bonking" that everyone talks about. I eat so much veggies that my daughter thinks that my favorite food is "salad". I'm hungry all the time and think about either food or biking...the protein powder in water helps curb my appetite, so that I crave snacks a lot less than before. Luckily, biking is a good food distraction.
The only really good part of my diet plan is that I don't like juices/sodas/alcohol. So, I don't drink any of that stuff.

L: I had a weird day, with only one client, so I took myself out to lunch and bought 2 pairs of sandals :eek: I had a veggie sandwich, which consisted of a portobella mushroom, artichoke hearts, tomato, lettuce on what was called a South Shore sweet roll... it was a thin Portuguese roll, kind of like a wrap. I swore I wasn't going to eat it, but I hadn't had bread in 2 days, so I did.

B: sandwich on Ezekial bread, one egg, slice of low fat cheese, blueberries and a banana, tea
L: Ate half a soy nut butter and jelly sandwich on Ezekial bread after riding 13.8 miles to the start of the ride we were leading. We then led the 15 mile ride, where all I had was a bottle of Nuun, and then rode another 12 miles home, for a total of 42. something.
S: ate a left over chicken thigh when I got home
D: Went back to the bike rally (by car) for dinner, happy hour, and a speaker. I had a glass of wine, one piece of cheese and a couple of carrots with hummus, followed by a small chicken thigh, broccoli slaw, black bean salad, and a piece of corn bread. Dessert was a small portion of lemon cake topped by strawberries and vanilla ice cream.
I am still not feeling well; it seems to be moving up, into my head/chest. I worked really hard riding today, both physically and mentally, as we had many "situations" with our group of participants, so I really needed that food!

90 minute hot ride. Rewarded myself with 3 tablespoons of Blue Bell Chocolate Mint Ice Cream....yummmm! I figure a couple of tablespoons won't do too much harm and as long as it is good quality full-fat ice cream, that small amount satisfies me. This isn't the way to make up the missing calories.
Today at the farmers market I picked up a new veggie - Amaranth (the leaves, not the seeds). The leaves are striking, I will try them first in a fresh salad, we shall see. They also had Purslane which was quite interesting, but I will try that next week.

I love ice cream far too much to do that, and while my blood sugar is in the normal range these days, it is always in the back of my mind that if I slip too far then the diabetes can return...So a few tablespoons here and there will have to do....unless I've ridden at least 35 miles on the road or trail ridden all day, then I can have more ;)
hmmmm, watch my longer rides increase in frequency now :D

Didn't realize you had had problems with diabetes. That is a bit scary - I can definitely understand you wanting to be careful with things like ice cream!
I've always been kind of lucky with what I eat; I have a fairly high metabolism and if eaten in moderation, I can have things like ice cream and cookies and they don't seem to bother me (blood sugar or cholesterol). So far so good. I do struggle with the little bit of extra fat around the middle that most of women over 50 struggle with, but all in all am doing well so far.
Keep up the good work with your fight against diabetes; that is impressive!

I think I forgot yesterday's meals and I can't remember what I had for breakfast or lunch. But, we went out to dinner where I had a 1.5 roasted eggplant/mozzarella appetizer, 2 glasses of chianti, and a grilled salmon open faced sandwich with a side of spinach. I ate one piece of the bread and 2/3 of the salmon.
Today:
B: ate the left over salmon in an egg white omelette, blueberries, coffee
L: 2 veggie burger patties, cole slaw, an apple
S: a popsicle
D: grilled tofu in hoisin sauce, whole wheat soba noodles in a soy nut butter/chili paste sauce, 2 squares dark chocolate

60 minute HARD workout - cross training class at the gym
post-workout - other half of the Power Bar
D: 6 ounces roasted chicken - turned it into chicken salad with onions, tomato, a few almonds, reduced fat mayo, Amaranth leaves and Ezekiel bread. Skim milk.

you know how I used to eat the same thing every day?? NOT ANYMORE! you girls will be proud!
My husband and I decided that it will be worth it to add $60 extra dollars to the food budget every month to try our best to eat natural foods.
OH and I also started commuting to work instead of doing the gym every morning.
Thursday (yesterday)
Morning Commute: 20 miles ride to work(has a few hills on the first 10 miles, then a long flat stretch on the last 10)--took me an hour and 15 min. (side note: they started a 4 month construction project on the highway that I drive to work on-- so my DRIVING commute took an hour each way. BAHAHAHA and only 15 minutes more...ON A BIKE!! yeehaw!)
Breakfast: 1/2 c almond/cashew mix (i can't seem to get off that stuff) with coffee and bottle of water
Lunch: 2 apples and peanut butter and some amazing granola that had pumpkin seeds, almonds, little bits of fruit, etc.
Snack: orange
Afternoon Commute: 20 miles home-- a nice headwind for me.
Snack: handful of trailmix
Dinner: 7 pieces of pork tenderloin, baked sweet potato, and asian veggies courtesy of the hubbin :)
Snack: Mango and 10 pistachios

Dinner will either be a nice big salad full of veggies and Amaranth leaves with homemade vinaigrette, or a small home-made "pizza" with same veggies. It depends on how lazy I get :) One Blue Moon will be included at some point, though skim milk will go with dinner

Today:

12.5 mile ride to gym (ate a banana when I got there)
1 hour advanced Bosu class with kettlebells (had a Power bar afterwards)
15 mile hot ride home - starving and as no food was ready had another small Power bar
I seem to get much more hungry when riding in hot weather than when it is a bit cooler - also notice my heart rate tends to trend higher when it is hot.
L: very late - roasted chicken breast, salad with amaranth leaves, carrots, cherry tomatoes, onion, balsamic vinegar, a bit of sharp cheddar cheese. Blue Bell Mint Chocolate Chip ice cream for dessert
D: more roasted chicken breast, strawberries with non-fat yogurt, 1 beer
Still 300 calories short for the day, but that is enough food for one day....at least I am getting much closer to my net calorie targets on heavy exercise days than I once did.

L: 4 oz roasted skinless chicken breast and an incredible pasta salad (lots of spinach, olives, a small amount of pasta, tomatoes, onion, feta cheese, I think the dressing was a Greek feta vinaigrette) I bought the salad as I had left part of my lunch home, but it will be easily duplicated
S: 1/4 cup ice cream.....
D: 4 oz roasted skinless chicken breast and Kashi winter wheat cereal with skim milk - not at the same time though. I SO didn't want to cook or do much in the kitchen so settled for whatever required no work at all :o I spent all evening resting/elevating my knee and reading.

I obviously haven't been good about reporting, so I was wondering what you all did...
Here is today -
B: smoothie - 1/2 banana, 1/2 c strawberries, 1/2 c blueberries, 1/2 c spinach, 1/4 c coconut milk, 1 scoop of egg white protein powder
S: Lara bar and coffee w half n half
L: huge bowl of mixed frozen veggies, 4 oz of chicken, 1 T olive oil, greek seasoning, juice from 1 lemon wedge, 1 c cherries
S: apple and 1 oz uncured salami
D: cabbage and sausage stir fry
Tomorrow I am starting a Whole30, so things will clean up a bit (no more lara bars, salami or half n half for the next 30 days!).

Like Crankin, I generally post right after dinner. Outside of the weekends my diet doesn't vary all that much so it is pretty easy to remember, I also track it in Lose It to keep track of my numbers. Posting it here keeps me honest.
Today:

L: Remainder of the spinach/feta pasta salad and added some sweet basil turkey chicken sausage. Blueberries + 0 fat Fage Greek yogurt for dessert.
S: Power bar
1 hour group training class
30 minute Bosu class
D: Skim milk, 4 oz roasted skinless chicken salad with the last of the amaranth leaves, mushrooms, sweet peppers, carrots, cherry tomatoes, homemade vinaigrette and a bit of grated sharp cheddar. Dessert was a few strawberries with 2 tablespoons Blue Bunny mint chocolate chip ice cream :) At this rate the 1/2 gallon is going to last until September ;)

Breakfast is my favorite meal of the day. About 9 years ago I bought a low glycemic type eating plan/cookbook, which had a 3 phase eating plan to help lose weight and keep it off. I did lose 5 lbs., and also found lots of good different things to eat for breakfast. Some of the recipes are a little out of date now, like with artificial sweeteners, but I like the combinations of foods in there.
I've always eaten "real" food for breakfast. Except now, it's not left over pizza or Chinese food, cold, right out of the fridge.

Ate meat for the first time in six years and I really don't feel so great. :( Had a luncheon with a group of older "church ladies" and I realized late last night that I hadn't told them about being a veg. No time this morning to prepare something to take and not wanting to hurt feelings, I ate some of the chicken casserole. Green salad had bacon in it and rice salad was prepared with chicken broth. I'll be just fine, but today's experience confirmed that I am quite happy and satisfied with my plant-based diet.

D: well, sort of. Met a friend for drinks, I had 2 glasses of red wine, and shared some veal/proscuitto meat balls (3) in marinara, bread, and some flat bread with veggies among 3 people. That was it; we went and helped our son move some furniture and I just ate a slice of Ezekial raisin bread

S: one scoop of kahlua and fudge frozen yogurt on the way home from the ride, slice of Ezekial bread and hummus when I got home
D: restaurant; big tossed salad, blackened salmon, sweet potato, green beans, one piece of bread, one glass of sangria (which was terrible)

S: 1 cookie, the other 1/3 of the Gatorade
D: Large salad with flank steak, daikon and red radish, with a wasabi vinaigrette.

Ate meat for the first time in six years and I really don't feel so great. :( Had a luncheon with a group of older "church ladies" and I realized late last night that I hadn't told them about being a veg. No time this morning to prepare something to take and not wanting to hurt feelings, I ate some of the chicken casserole. Green salad had bacon in it and rice salad was prepared with chicken broth. I'll be just fine, but today's experience confirmed that I am quite happy and satisfied with my plant-based diet.
Oof. I'm not vegetarian, but I was de facto vegetarian for a time in college when I was taking summer classes, couldn't afford to eat out much and didn't have access to dining halls or proper storage/cooking facilities for meat. When my parents came to pick me up to take me back home, they took me out for dinner. I am a carnivore; I ordered a steak. Good steak, but I regretted it that night!

Yup, Newton, MA.
I hesitate to say I'm from there, because, well, if you know the area, you know why.
It was a wonderful place to grow up, suburban, with lots of woods to play in, and about 5 miles from downtown Boston. We considered moving there after the kids left home, but in the interim, we started cycling and realized we live in an area that most of eastern MA comes to for their rides. Newton is very crowded and full of traffic now.

Didn't hit my exercise day net calorie target, but wasn't too far off. I am getting better.

Yesterday I had a flat I had to take care of around breakfast time so I did not get to eat the huge feast I really hoped for. We did 100 miles the day before and 90 miles yesterday (today is a rest day):
Breakfast: full fat greek yogurt with blueberries and honey, some tortilla chips when I realized they had packed up breakfast for the road
During the ride: Clif builder bar, 1 sleeve of clif shot blocks, 2 clif shot energy gels, 1 huckleberry ice cream sandwich, electrolyte supplement in my water, a few ribs of celery with peanut butter, clif mojo bar, pickles, granny smith apple
After the ride: recoverite
Dinner: We had it catered by Billings company Beyond Basil-- Montana ribeye steaks, grilled salmon, potato salad, quinoa salad, spinach salad, apple pie, and pound cake!
FEAST!
I woke at 5 am starving though so I had some trail mix to tide me over until people get up for breakfast. Hope there's something open at 7 am on a Sunday!

Then we went for frozen yogurt. I had a 4 oz. size of chocolate.

I am trying to cook as little as possible, it is just too hot! Need to cook tomorrow for my camping trip but the heat is supposed to break tonight/tomorrow.

Yesterday was a rest day outside of a lengthy gentle stretching session with some corrective exercises at my gym. Still rehabbing my bent boob/chest muscles. Much better, but still somewhat sore.
Yesterday:

Rest day again today - so my diet won't differ too much today, though a beer will likely be added. Tomorrow I plan on starting to ramp up my activity levels, starting with a ride. I may ride later today depending on weather.

When we first moved here from AZ, DS #1 was addicted to corn dogs. Alas, no grocery store within Greater Boston or southern NH carried them. He had to go cold turkey. He just recently told me he served tofu corn dogs at a bbq he had at his house. That just seems wrong.

I had way too much bread yesterday, but, I seem to need it when I'm riding in the heat.

I remember corn dogs, I always loved the taste but my body doesn't like them :( Kind of like popcorn, my taste-buds and body have different reactions to them, sadly.
Today:
First Breakfast: Kashi Autumn Wheat cereal with skim milk, 5 almonds, coffee
22.5 mile bike ride
Second Breakfast: 4 ounces pulled chicken breast with a bit of cheddar melted on it, salsa, 1 slice Ezekiel bread toast
1 hour advanced Bosu class with weights (HARD class)
1.25 hour hard metabolic/functional fitness group training (I never know what to call it)
post-workout snack: Power bar (toffee chocolate chip)
L: chile-onion tortilla with 4 ounces pulled chicken, a bit of cheese, salsa, romaine lettuce. Skim milk and 1 cup Blue Bell Mint Chocolate Chip ice cream for dessert.
Dinner will probably feature garlic chicken sausage, brown rice medley, a small salad and a beer. There will be an evening snack of fruit.
I won't be meeting my net calorie targets for today... Had fun though :)

Yowza, Catrin. That's a lot in one day for somebody who is recovering from a couple of injuries and has had some muscles prone to overuse issues.
ETA: I know you love to push yourself and that's great. Just be careful! :)

I didn't INTEND to do all of that, but it was fun. It was also using different muscles and I would have stopped at the first suggestion of pain. There wasn't any :) These workouts are very different from anything I've done before - though I won't be mixing those two classes in the future.
Thankfully my new group trainer forces the issue and makes certain we get enough rest during the workout. He pushes really hard, but he also keeps an eye out for proper form and needed modifications.

39 mile ride. I ate a Luna Bar throughout the ride and had one Shot Block and one and half bottles of Nuun, with additional water. It was hot and humid.
S: ate some whole wheat pita rounds and hummus when I got back.
L: salad with left over chicken, avocado, black bean filling from burritos the other night, an orange, coffee
S: had a guest from Germany over... ate some cheese and crackers and a glass of wine (business associate of DH).
D: We took above guest to some historical sights in town and then to dinner. I ate 1.5 tiny meatball appetizers, and an entree of 4 scallops with beets and grapefruit, a beer.
I am stuffed, but the heat took it all out of me today on my ride.

I have the same reaction (to both corn dogs and popcorn) so eating those would not be 'living' in my world! ;)

D: meatza (pizza made with a meat crust, homemade pizza sauce and topped with mushrooms, onions and tomatoes
Sunday
B: bacon and eggs scrambled with veggies, black coffee
L: chicken apple sausage, apple with almond butter
D: veggies with guacamole, salmon with hazelnut butter, green beans with fig vinaigrette, butternut squash and roasted garlic puree, arugula salad with olive oil and vinegar and poached pears in raspberry creme for desert. YUM!

Rest day today, and much to my surprise I am not sore outside of a little tightness at the top of my quads :D

S: a little more autumn wheat cereal, no fat yogurt
L: pulled chicken, brown rice medley (can't tell the cupboards are getting bare?)

S: orange (I generally dislike oranges, but am craving them for some reason - figure my body wants something in them)

L: I went to out to lunch and found a coffee shop that has a Paleo menu! Not that I eat Paleo all of the time, but I like that type of food. I had sweet potato hash browns, with 2 poached eggs, and spinach/onions.
D: grilled salmon, whole wheat penne, marinara, beer

L: I met SheFly at a cupcake place for lunch. They have sandwiches, but yesterday, the lunch choices were quiche or gazpacho. I had gazpacho and a blueberry cupcake, which was really a very small muffin. When I got home, I had a few whole wheat pita rounds, as I was still kind of hungry.
S: piece of Machengo cheese
D: home made salad Nicoise. It was kind of a pain to make, but very good.
2 squares dark chocolate.

I ate the babyfood because I needed a snack AND because I wanted to try it. This is the food I elected to bring to the hospital to eat after my surgery on Thursday when they make you eat before they let you leave. I didn't want to eat unknown jello and applesauce!

I have been starving. Don't know why, but weight was at the low end today, so hence, the waffles.

18 mile ride
S: a few whole wheat pita rounds and cheese
D: went out to a local "fine dining" restaurant. We don't go to this place more than 2-3X a year, but we should go more. Had a bottle of red wine, cherry soup (delicious and no cream), and rack of lamb, but only 2 ribs of the lamb, the rest ground up and put in an empanada, with farm fresh squash. We split an ice cream sandwich dessert.
Got to ride a lot this weekend!

Cherry soup? Interesting idea! I had to resist the lovely cherries at the store. Good price per pound but they were in 5 pound bags - a bit much for one person.

1hour 15 minute hard workout (it was for "fun" and was just wild). Apparently my hip flexor is happy with anything outside of running - not the slightest twinge otherwise :) Resisted the desire to take the equally hard advanced Bosu class afterwards...I doubt I really had the energy anyway - it was pretty intense.
S: small Muscle Milk drink
L: A bit of watermelon and a wrap that uses seasoned lamb/beef with a few tomatoes and tahini sauce - yummy! This was at a local middle eastern festival.
S: a bit less than 1/2 cup Blue Bell ice cream
D: sauteed cho fun? (looks like a small bok choy but a bit peppery, and I probably have the name wrong), with brown rice and chicken breast. Skim milk. One beer shortly
