It depends on how I feel when I get up. Part of it, is that it's 5:30 in the AM. I can eat a Lara Bar, or a very small bowl of whole wheat cereal and almond milk, but I don't have time for that always, and it's a fine line between too little and too much, where my stomach hurts during all that jumping, twisting, etc. If I feel ravenous when I get up, I eat more. I wouldn't go out to ride on 5 almonds... this morning I rode 15.5 miles at the same time (it was already 74 out), but I had a Lara Bar. If I am going on a longer ride, that early, I eat a small breakfast and bring a big snack or plan a restaurant stop. Another issue is I don't want to have to leave the class to use the bathroom, and if I eat a lot, that will happen.

I get up at 3:50 most mornings and leave the house at 5 :eek: It isn't as bad as it sounds...I guess I've adjusted to that over the years. I like my schedule though, but the price is that I've got to rise that early if I am going to have a decent breakfast and not have to hit the door rushing. I hate to start my day in a rush as it seems to set the tone for the rest of the day.
Today:
B: eggs scrambled with veggies, fresh side, coffee
s: banana
L: last of the Czec meatballs
D: parsley/fresh side omelet (am shopping tonight)
SO not enough calories and I can tell it but it has been an unusual day

Well, I get up at 4:50 if I am going to the gym and leave at 5:15, as it's very close. At this time of year, I often wake up naturally at 4-4:30, though. I come home after the class and eat, shower, get ready for my day, so I am not rushing, unless I have an early appointment.
I got ready at the gym 2 times a week for like 20 years, including the years I taught a 5AM aerobics class. Now, it seems like an onerous task. I did it twice in the early spring, before I convinced a school counselor that seeing one of my clients at 8:30 AM did not fit my schedule. Truthfully, I had no way to get coffee until almost 10 AM, unless I wanted to stop, and it interferred with my whole morning routine. Since I stopped teaching, I am on a later schedule, as I don't get home until 6-7:30. But I still get up early. I have one day where I have to leave my house by7:40, and it's generally the day I rest or do an early AM ride.
Edit to add my food:
B:Lara Bar before 15.5 mile ride at 5:15 AM, followed by breakfast of almond milk, 2 eggs scrambled with kale, bowl of strawberries, coffee
L: ok, I had a going away party for a colleague to attend, but I didn't want to eat pizza. I brought the left over stuff I thought was soup (veggie basmati rice), about maybe half a cup. Then, I ate a small amount of pasta salad and some fruit.
At about 2:00, I stopped to get an iced coffee before going to my eye dr. It was 96 out and my last session had been in an un-air conditioned house. When I got to the cafe, I realized I was starving, so I got a veggie wrap on whole wheat. It wasn't too big and hit the spot.
D: I made curried pork wraps with a side of refried beans. Glass of rose wine. Then we went out and got soft serve with chocolate dip (4 oz)
I weighed a pound more this morning :).

before my ride I ate a slice of Ezekial raisin bread with almond butter, as it was 11:15 already. Ate a Lara Bar near the end of the 32 mile, very hot ride, and a bottle of Accelerade Hydro and a bottle of water
L: a vegetarian burrito
D: went out again, had a turkey burger and cole slaw, one beer

Too much food this weekend.
B: I rode for 8.3 miles, including a climb and went to breakfast. I had apple cinnamon French toast, which was not what I expected. It was like a giant piece of apple cake with streusel. Oy. Had one cup of coffee, rode home (3 miles) and had more coffee.
L: around 2:30 I finished the left over curried pork filling that I had put in wraps for dinner a few nights ago. It made me feel kind of sick.
D: 2 very thin pork chops with thyme rub and grilled peaches with a teeny bit of marsapone cheese and arugula. Glass of rose.

L: such as it was, a small slice of frittata halfway through the afternoon after some errands

Snack: Ice cream bar at the pool
Dinner: at a great italian restaurant, boy did I eat too much! It was my birthday! 1 piece italian bread with olive oil and garlic, 1 glass of pinot grigio, huge plate of pasta with shrimp scampi and the sauce had lots of cream (WOW!) so good, salad, and then three samples of creme brulee, one chocolate, one classic and on with raspberry shared with hubby, another glass of pinot grigio. I went home and layed down - could not stand myself!!!!

Hey, it's your birthday; celebrate!
B: had some nuts and dried fruit before boot camp, then a can of tuna and olive oil over sliced tomatoes, with melted cheddar and a small bowl of blueberries, strawberries, brown rice cereal, and almond milk.
L: salad with arugula, chicken, chick peas, avocado, cheddar, fig vinegar, half an orange
S: nuts, cranberries, chocolate bits. half the bag spilled in my work bag and I was starving when I got home
D:huevos rancheros: 2 fried eggs on a corn tortilla, with black beans, melted jack cheese, avocado, cilantro, salsa with sliced pineapple, glass of red wine

D: not sure yet.

went for a 2.2 mile hill walk just before the tropical storm rain started
B: corn tortilla with chicken slices, jack cheese, salsa sauteed in olive oil, an orange, coffee
L:cup of butternut squash soup, chicken breast left over from Wed., refried black beans
S: 3 whole wheat pita chips
D: we went to one of my favorite restaurants before theatre, the last play of the season. Had a salad with kalamata olives, artichoke hearts, vinaigrette, and scallops on a bed of quinoa and kale. Shared a dessert with DH, chocolate cream something, like a mousse. It was small and perfect sized. Glass of red wine

I've not been posting the last few days - just busy I guess. I confess, my best friend knew if was my birthday about a week ago and she baked me this sinfully delicious cake on Friday; I've had a piece for three days in a row and i am just so full of cake I can't eat any more! It was a three layer carrot cake with cream cheese filling mixed with coconut and orange (yum oh) and topped with a chocolate glaze. Decadent, decadent decadent! I love my friends!
Yesterday:
B: 1 piece wg toast, butter, coffee, cereal, milk
a small helping of leftover pasta and marinara sauce b4 tennis
2 hours tennis
a small beef roulade filled with blue cheese and sundried tomato
D: 1/2 chicken breast grilled, broccoli, boiled red potatoes with a bit of butter and parsley, 1 glass prosecco
1 piece decadent carrot cake

My schedule has been very busy, but I need to get back to this. It makes me feel more accountable, and that is never a bad thing.
Yesterday:
B: frittata, black coffee
1 hour group training session - but I was the only one who showed. We wound up focusing more on form for some movements I've problems with so it was a good one. Not as intense, but I needed the focus. Followed by a protein shake + small banana
L: roasted chicken thigh, "slaw" made from broccoli, other veggies, a bit of home-made mayo for dressing
D: More roasted chicken thigh, sweet potatoes sauteed with spinach and onions (yummm!)
Today:
B: see yesterday :)
1 hour solo workout - I made up for the lower intensity yesterday. Protein shake following
L: last of the roasted chicken thigh, sweet potatoes sauteed with spinach and onions. Also have some strawberries and pineapple.
D: Unsure, it will depend on time. Making Czech meatballs tonight but that might take too long and will have to eat something else.

Saturday:
B: 2 waffles, with blueberries, walnuts, 2 slices uncured bacon, coffee
L/snacks: I led a 29 mile ride that started at 11:30. Before the ride, I had a slice of Ezekial raisin bread with soy nut butter. During the ride I had a Lara Bar and one bottle of water.
When I got home, around 2:30-3, I had a 6 inch whole wheat pita, 3 slices of chicken breast, and pumpkin seed/veggie spread
D: (sort of) went to a party and had 2 glasses of red wine, one boneless chicken tender on a skewer, 2 bacon wrapped scallops, 2 little cheesy things, and 3 meatballs
Sunday:
B: endive stuffed with light cream cheese and lox, an orange, coffee
15 mile ride
S: spelt bread and almond butter
Brunch at around 2 PM. Ihad "North African" eggs, which was 2 poached eggs in a tomato sauce with veggies, polenta, and one piece of pita. more coffee
D: half a chicken breast with rosemary, wheatberry salad and a green veggie salad, watermelon. oh yeah, a rum swizzle
Today:
Lara Bar before boot camp (I felt much better)
B: 2 egg omelette, lox, a peach, coffee
L: salad with chicken, artichoke hearts, cous cous, lettuce from my neighbor's garden, an orange
S: nuts and cranberries
D: sauteed tofu in a rice vinegar/chinese type sauce with soba noodles, glass of red wine

L: small roast chicken thigh, small piece frittata, 1/2 sweet potato
HOPING to ride after work, we shall see what the weather does

D: I had a bit of a miscommunication with a friend; we were supposed to meet for dinner and we each went to different restaurants that we had talked about. I ended up having a blackened chicken sandwich, cole slaw and a beer. The sandwich had way too much blue cheese on it.
Thursday:

Part of me wants to cut back on food for rest days, but my coach slaps my hands when I do that. I can certainly tell the difference in my performance the next day when I DO cut back on calories on rest days (and not in a good way).

I started feeling really sick while I was eating. I've been sort of off all week, but this was bad. Then I went to the dentist and found out I need a graft procedure, probably as a result of the Invisalign braces I had. By this time, I had to go see a client at a school. No exercise for me today.
L: tuna in oil on a 6 inch whole wheat pita, an orange
S: piece of spelt bread with hummus, lots of water
D: scallops seared in olive oil and a little butter on a bed of green beans marinated in oil and white vinegar, whole wheat cous cous
I have to lead a ride tomorrow and still feeling bad, though not like this morning. Not looking forward to a 1.5 hour drive, riding in the heat, and hanging out for dinner. Hope some sleep will help.

S: one roasted bacon-wrapped medjool date (well, fresh side)
D: braised brisket (from a local farmer), roasted brussel sprouts, carrots

B: see yesterday :)
L: braised beef brisket, 1/2 sweet potato, carrots, 1 small pear
D: Planning on more brisket, broccoli "slaw", and some berries
There is a LOT of brisket :)
Hoping to get in an hour's bike ride if it doesn't storm!

I'm joining in again. We are back from Hawaii and I've got some serious weight to lose before the long bike rides we've got planned at the end of the summer!

No exercise today. I had my clothes out to ride at 5:15 AM. I still feel sick, so no go.

D: home made guacamole, with a burrito on a whole wheat tortilla, black/kidney beans, chili powder, green onion, tomatoes, salsa, half a mango. 2 squares dark chocolate
I'd better feel better tomorrow. Have a trip to the Berkshires on Friday-Sunday, supposed to do a 40 mile ride with a 7 mile climb :eek:. Of course, it's probably going to rain, so it's a moot point. But, I feel suspiciously like I did in February, when I had bronchitis. Going to bed now!

It was broccoli "slaw" from Trader Joes. The chorizo was ground and from a local farmer - made from pastured pork. Quite spicy and yummy! I needed to mix it up and it worked pretty well.
Dinner tonight was brisket sauteed with cabbage, onion and little slices of apple. Strawberries and a couple squares of dark chocolate for dessert.

Very descriptive, and yet completely non-descriptive as well. ;)
The answer for today is "not enough".
However, I made up for it by making a thoroughly awesome dinner: Chicken thighs (cut into cubes...or as close to cubes as you can get with chicken thighs!), soba and broccoli with chili garlic sauce and broth, with a generous squeeze of lime juice and cilantro at the end. It was fantastic.

L: raw veggies, brisket with a homemade sauce to dip the meat
D: more brisket, sauteed cabbage with thin pear slices and onion. Coconut "milk" (beverage) smoothie for dessert with fresh strawberries and blue berries. I rarely get the boxed coconut drink beverage but it is nice from time to time - I prefer the real thing :)

Not enough calories today, though the small amount of coconut milk "ice cream" may have gotten me closer, and certainly needed more veggies...kitchen is getting bare and no time to do real shopping just yet.

I then rode 7 miles to a group ride that was fast and humid, kind of hot, too. I drank 1.5 bottles of Accelerade Light, ate a Lara Bar, and one Shot Block. Poured about half the other bottle over my head and down my jersey, and drank the rest. The ride was 39 miles. Got back to the start, at a member's home and had lunch:
one chicken thigh, salad with vinaigrette, about a half a cup of rice/beans, lots of lemondade/
Then I had to ride home. With a backpack, as I had brough fresh shorts and my hair brush, hygiene supplies for the lunch/ride home. Another hot 7 miles. Total of 52.3 miles
S: had a 6 inch whole wheat pita and hummus, lots of wter
D: I blew it... went out and had an individual pear/gorgonzola pizza and a green salad. The crust was thin, but i did not have to eat the whole thing. But, I was starving.

The meatball recipe is great, but the name is most appropriate "Bora Bora Fireballs", I cut the cayenne pepper way back but it is still quite spicy. Very good mix with the pineapple in the recipe!

Well, yesterday was a big eating day for the metric, which had about 3,200 ft. of climbing. I can deal with it.
B: whole wheat bagel, light cream cheese and lox, with 2 scrambled eggs and one cup of coffee.
During the ride I had about 2 bottles of Accelerade and half a bottle of water, 2 Lara Bars, and 2 Shot Blocks.
Lunch was part of the after ride festivities, and I did not want the vegetarian option! I had a pulled pork sandwich, cole slaw AND a small piece of corn bread. Also 2 beers were free with the lunch, and I had 1.5, compliments of the Sam Adams Brewery.
D: went out for a really good Italian dinner at a restaurant in the town I used to teach in. I ate a whole plate of parpadelle, tomatoes, and ricotta and had 2 glasses of wine.
Back on track today, but still pretty hungry :eek:.

I've seen the scale creep up a couple of pounds, it seems to really help posting here so time to get back to it. Interesting that the gain happened when I started allowing dairy back into my diet - I think it is likely to be causing some bloating so back to only having dairy on very special occasions after today.
Today (rest day):

L: 4 Bora Bora Fireballs, more greens, followed with 1 small scoop of decadent chocolate/bacon gelato!

Crankin, you SHOULD have been hungry after that ride :) I might consider a bike ride tonight, but considering I've worked out the last 4 days in a row at one thing or another, and I've plans for the next three days...I need a rest day. Perhaps a gentle stroll after dinner.

The cumin-roasted carrots I had with dinner were incredible! I then charted my food for the last few days and figured out why I put on a couple of pounds in a few days (outside of the dairy-bloating), I've not been getting enough calories... I KNOW better than to not chart my food, for my calorie intake always drops when I do that and I am far too active for 1,200 calories!!! My coach has been known to slap me on the wrists for this, and he is right.
HERE is the cumin-roasted carrots recipe (http://edeandanna.wordpress.com/2012/08/20/recipe-report-cumin-roasted-carrots-a-well-fed-recipe/). I was starving and ate the entire thing...though it wasn't a full pound of carrots :eek: This is my favorite way to cook carrots. I diced them into half-inch coins rather than slicing them like fries. Also added 2 Bora Bora Fireballs when I saw my total intake for the day, even WITH the gelato - which was only 100 calories.

I am obsessed with gourmet vinegars to be used as salad dressing. They taste so good, I only add olive oil for more special dinners. You can get them at various places like farm markets, cheese shops, TJs, etc. We have an olive oil and vinegar store in town where you can do tastings and that's where I get mine. I used to order on line until the store opened, though.

I went on a 17 mile ride and deduced I had had too much coffee. Plus, I don't think I rested enough after the metric. I usually take a total rest day on Tuesday, but it was so nice out, I rode early in the AM. This puts my body into a very regular progression of symptoms I just live with... well, I still had a kind of fast ride.
L: salad with all kinds of veggies and chicken, fig vinegar. Then I ate the other half of the bagel. My stomach was a wreck and I couldn't finish the salad
D: made home made gazpacho, which came out a bit salty (Won't happen again) and a modified salad Nicoise. No eggs or anchovies. 2 squares dark chocolate

The frittata was an experiment and while it was good, I doubt I will make it again. I miss not having greens in it, I like the combination of spinach/cabbage better.

Today:
B: eggs scrambled with spinach, 2 slices fresh side, coffee
60 minute Funday group training that featured many, many, many kettlebell swings and cleans, as well as a series of heavy deadlifts mixed with plyo-lunges...AND a protein shake to follow.
L: romaine lettuce/roasted chicken wraps with avocado, tomato, and a small amount of blue cheese. Banana for dessert
D: A divine braised brisket with a 100% cocoa/coffee grounds rub - I've been wanting to try this but have been afraid of cooking with ground coffee! It was quite yummy however, and of course there were other spices as well as coconut milk. Almond-Coconut green beans, and a small amount of fruit with a couple small squares of 85% dark chocolate for dessert. While there are brisket leftovers for a couple of meals, the NEXT time I make this I am going to use a larger piece of meat!

I don't currently HAVE a crockpot and I don't miss it because I have a much larger enameled cast-iron dutch oven in which I braise anything that will fit in it. It is pretty darn big so that isn't much of a limitation. I find my recipes seem to turn out much better with oven-braising rather than crock-pot cooking anyway. It works for me. I used the full rub recipe though my brisket was a bit under 3 pounds rather than the 4 lbs called for in the recipe. It might be time to figure out just how big a brisket I can fit in that pan so I've LOTS of leftovers :) I am also wondering how well this rub might go with a large pastured pork shoulder roast waiting for me in the freezer...

Went on a 51 mile ride with about 3,000 ft. of climbing. Lunch during ride was almond butter and peach jam on a whole wheat bagel. This is the best/most satisfying on ride lunch I've come up with. During the ride, I had 2 bottles of Accelerade Light and a Lara Bar.
S: 2 whole wheat crackers and cheese
D: one whole wheat tortilla, with a pinto bean/hominey/goat cheese filling. Home made salsa made of tomatillos and poblano. One beer.

My alarm didn't go off this morning at 4:50. I guess my cleaning people messed it up. Usually, I mean, almost every day, I get up well before my alarm goes off, but today I didn't. I had 20 minutes to get dressed and drive to boot camp, and I just couldn't. Instead, I stayed in bed until 5:30 and got up, went up to my home gym, which rarely gets used in the warm weather. I did a 5 minute treadmill warm up, then all 3 sets of the Graham Street Body Weight Conditioning program. Then I did 2 minutes of jacks and a stretch.
B: egg white omelette with cheddar, salsa, pinto beans, blueberries, and coffee
L: 4 left over small turkey meatballs and an orange.
S slice of cheese
D: one grilled chicken breast with cumin/chili powder, salad with fresh tomatoes, avocado, and fresh corn kernels, yogurt dressing, slice of really good whole wheat garlic bread. 2 squares dark chocolate

I'm going to skip the weekend eating. Not terrible food, just a lot of eating out.
Boot camp this morning, after a night with almost no sleep (always on Sunday)
B: 3/4 cup plain no fat Greek yogurt, wild blueberries, walnuts, a sliced peach, slice of ww spelt bread with almond butter, coffee
L:veggie salad with cannelloni beans, an apple
S: I came home for about 45 minutes before my last session; ate a 6 inch whole wheat pita with hummus and did paperwork
walked for about 40 minutes with my client
D: veggie protein with black beans, salsa, 2 corn tortillas, 1/4 avocado, tomato, glass of red wine
I am about to keel over from tiredness. Still have one more note to write.
Leaving for 10 days in Italy (8 days Torino, 2 Milan) on Wednesday. No cycling involved, but will be doing some hiking, maybe rent a city bike. Lots of walking, but mostly eating! Then, I'll be home for 5 days and fly out to Monterrey/Salinas for my former exchange student's party celebrating his wedding, which took place a few months ago, in Berlin. Just a 3 day trip, but again. lots of food (his wife is Mexican-American).

I am hooked on roasted veggies). One very small slice of chocolate cake.

went on a 43 mile ride with 2,400 ft. of climbing. I drank one bottle of Accelerade and about 1/4 of one with Gatorade. I also had a full bottle of water with lunch.
L: We stopped for lunch at the Nashoba Winery in Bolton. We pre-ordered our lunch, and based on previous experience DH and I shared a turkey/cranberry sandwich on foccacia and half a brownie. I deserved it after the climb up to the winery!
S: had a beer when we got back to our friends' house
D: I made chicken Milanese... chicken breast pan seared with panko, since i had no whole wheat bread crumbs, topped with spinach, fresh tomatoes in a vinaigrette, roasted broccoli, glass of red wine. Later I had a chocolate biscotti.

I'm back!
Our family has recently had to go gluten-/sugar-free. Gluten-free because my 4yo son was experiencing significant neurological development delays (disruption might be a better word than delay) and sugar-free because my daughter was having chronic bladder-/yeast-infections and other digestive tract issues. She is only supposed to have 12 grams of sugar a day for the next two months--that includes naturally occurring sugar. . . . Needless to say its been a challenge and I am the Health Hutt's new best customer! My poor daughter cannot even eat fruit right now while the rest of us have simply given up 'added' or 'refined' sugars.
Breakfast: Eggs and salad with homemade salad dressing (apple cider vinegar, dijon mustard, almonds, white wine, and a couple of raspberries)
Snack: Chocolate Chip Bar (made from coconut/arrowroot flour, Cream of Buckwheat, Quinoa Flakes, Coconut Oil, Sunbutter, and just a smidge of honey and Enjoy Life chocolate chips)
Lunch: Big Salad with homemade salad dressing, almonds and an apple
Snack: Carrot Sticks
Dinner: Roasted Vegetables: Beets, broccoli, cauliflower, onion, sweet potato and Kale
Dessert: Green Smoothie: Kale, parsley, scoop of Endura (recovery mix), coconut milk, frozen blueberries and raspberries.
Sometime today when I'm feeling hungry, because I will: A banana with a smear of Krema Peanut Butter (YUM!)

I was so bad when I was home, though much better than I could have been. Unsure about other parts of the country but in the south when people give food to someone with a death in the family they pretty much focus on sweets. I don't mean cookies either, I mean huge decadent homemade things dripping with chocolate and other good things. One aunt brought a carmalised pineapple upside down cake that was to die for. I didn't succumb to temptation much - and I've not had a grain in over a year. One day I allowed myself a couple of small treats and my body wasn't happy with me. Lesson learned!
Yesterday:

1 hour group training followed by protein shake
L: frittata with small salad, banana
D: not much outside of some brisket and later a tablespoon of almond butter/raisins mixed (stuff is like crack) I need to do better today!

I'm joining in again, too. I just got back from two weeks on the road for work and even though I tracked everything, stayed in nutritional range and got in all my exercise, I didn't lose an ounce. Grrr. At least I didn't gain.
Sunday was my first day back on home prepared food and what a difference in how I feel! It just goes to show how much sodium, fat and other hidden things are in restaurant foods.
Yesterday
B: chicken apple sausage, 1/2 apple, 1 oz almond butter, coffee
S: Quest bar
L: Chicken fuji apple salad from Panera - no cheese, dressing on the side
S: other half of this morning's apple
D: sweet potato shephard's pie made with ground bison (yum!)

L: carnitas on a spinach salad with red pepper strips and cucumbers
S: orange and cold grilled chicken
D: veggie and beef meatballs over spinach and crushed tomatoes
I've been tracking my food and exercise very closely since late July and I'm down 15 lbs or so. Only another 15 to go! ;)

I feel like i'm in constant lose/gain cycle after the weekends. I am tired of trying to starve myself and I don't want to go back to Paleo. I lost some weight then, but nodifference in the way I felt and my cholesterol shot up. I've gone back to limited whole grain carbs, and more vegetarian meals. I haven't stopped eating animal products, mostly limiting red meat to 1-2 times a month, with lots of chicken and fish. I did a bit of carb loading for the failed century and now my body is recovering from my crash. I don't like the way I look, despite boot camp and a moderate amount of riding.

L: I was starving so I did something I rarely do and hit a local restaurant for a huge salad that featured lots of chicken along with blue cheese, candied pecans, assorted greens

D: such as it was - some full fat greek yogurt over blueberries and a small amount of cacao powder
SO READY for life to get back to what passes as normal and I've my kitchen back!

I wish I could eat as healthy as you do!
I just saw this - for me the problem isn't what I eat but how much...I've problems with not eating enough. THIS week I've lost 4 pounds and I know that is why. Normally when I don't eat enough I actually gain a bit, so to lose that much in a week tells me my calorie intake is WAY low. Things are just so unsettled with my move and I refuse to buy much in the way of groceries until the move is complete. I am not complaining about the 4 pounds itself, but am a little concerned it might be muscle. I am VERY active...
Today I hope to do better, and will supplement with my protein shake if I need to do so. It doesn't have many calories or carbs, but it will give my body some protein to work with.
Breakfast this morning was my usual eggs scrambled with spinach and coffee but am out of my fresh side or other protein sources. This is the easy meal to manage. I might break down and have an ice cream break today between moving activities ;) Beer sounds better, but I refuse to drink when I am under this level of stress - between the loss of my mom and the move my stress level is...high. I love the new apartment though :)

Catrin - if you are still lifting and eating enough protein, even really low calories for awhile won't hurt your muscle much. Your general diet is such that you are already likely a 'fat burner'...so you are probably OK. I'm currently eating low calories, lifting and I haven't lost any muscle in the past month. Since your diet is so similar to mine, my guess is that you should be fine.

We went to do a 40 mile on the south coast of MA/RI. Last year we helped lead it, but this year we were supposed to be participants only. Didn't end up that way when our friend who was leading realized he had 30 riders of greatly varying abilities, so we volunteered to lead the "fast" group. DH went a little nuts in his interpretation of fast, but after 16 miles, I reeled him in.
L: had a cranberry-walnut chicken salad wrap, with a small bag of baked potato chips. I only eat chips on longer rides. Had some fruity health type drink with no sugar, that I put in my bottle after lunch.
S: after the ride, we drove to the Sakonnet Vinyards, where we had wine and DH and I shared a cheese/cracker/walnuts and fruit plate. Perfect to hold us over for the 60 mile drive home.
D: I made Shushuska, which is basically an Israeli version of huevos rancheros. Very good.
I had eggs for 2 meals today!

My diet has been absolutely terrible for the last month. How terrible, I won't say, except that there were days that the only thing I'd have until I got home in the evening was a Snickers bar, maybe coffee to go with it. :o
I've actually gone grocery shopping this week (still need to pop over to the other store for a few things), so I'll be able to cook! Yay!

I think I do worse than you. I have might have a Snickers bit size bar, with four other bite size pieces along with it to finish the "meal" off. I don't drink coffee, though, which I is probably healthier than the MIO I drink.
And then I follow up the whole thing up with a half a peanut butter and jelly sandwich. Well, at least the bread is whole grain.

pottering around new apartment getting things in order, hanging stuff, etc. long slow effort :)
D: Too tired to cook much - planning on making a chorizo sausage/greens baked egg casserole. I suspect one beer will be part of things once I slow down enough to sit down to drink it.
I had other things planned for dinner but that requires shopping. THAT will just have to wait until tomorrow morning! 2 days of vacation left.

The eggs are fine - this is often my go-to breakfast and I get a good number of meals/snacks from this. The recipe, such as it is, is about as simple as it gets. I just use whatever I happen to have so it is always different, but this is how I made it last night:
Pre-heat oven to 375
1 lb bulk chorizo sausage or some other ground protein
12 eggs
3 cups mixed baby greens (really any green leafy veggie works here, also great if you replace some of the greens with shredded cabbage or nappa cabbage) If using straight ground pork rather than chorizo, parsley is quite good as part of the greens.
dried basil (depending on choice of greens)
salt and pepper to taste
Depending on how lean the meat is, I will often add 1 tablespoon of coconut oil or bacon fat - but it isn't totally necessary.
Cook/drain sausage
Crack eggs in huge bowl, mix in veggies and spices (I don't measure spices, so use.
When well mixed add protein
Pour in parchment paper lined large baking dish
Bake for 25-30 minutes
Allow to sit for 5 minutes
Enjoy!

I started off my day with a slight weird feeling and it went downhill from there. I did go to bootcamp. When I got home and started sipping my coffee, my stomach went into full blown overdrive (don't want to give TMI). I did eat though, as strange as it sounds, I was hungry.
B: egg whites, avocado, salsa, an orange, coffee
a snack of 2 doses of Pepto, with a side of Claritin. I had to see a client at a school at 9:30 :eek:.
L: I ate about 1/2 of the chicken, avocado, chick pea, tomato salad I had brought to work. By this time, I was hungry, but starting to feel achy and allergy like, too.
I came home at around 2 and had a slice of spelt bread, as I was craving carbs and then went on a 3 mile fast walk with my last client of the day. I am exhausted. Not sure if it's something I ate at DH's birthday diner (beets?) or the fast ride I did Saturday.
D: I made the Waldorf salad recipe from the Paleo cookbook.
I hope a good night's sleep cures this.

Today was a rest day. I still felt awful for most of the day, better now. My weight is also up into the danger zone. I am the only person who gains weight when she has an upset stomach.

Apparently my body needed the small amount of carbs I've added - I've lost 3 pounds in the last two weeks! I seem to be stablizing now at 124, and am VERY happy with that. Given my activities I don't expect to drop below 120 and I am unsure that actually matters. More concerned about body composition - at my age that is very hard to change. Not giving up though ;)

I did 30 minutes of yoga at home. Really sore from my run.
L: had a hummus-veggie whole wheat wrap at my lunch with Hirakukibou. I admit to eating a few chips. Had more coffee, which then made me ravenous, so I ate a couple of whole wheat pita chips, and 3 dried apricots.
D: It was our first theatre night of the season, and we went to an Italian place, but I did pretty well. Shared a rosted fig/veggie appetizer with DH (it was yummy, but small) and had grilled swordfish on a bed of cannelloni and frisee, with 3 small fingerling potatoes. I ate it all. Had 1.5 small scoops of blueberry sorbet, one glass of red wine.
Of course, my weight is up today, but I've been struggling to keep it at 107 for quite a few weeks.

D: Might look like lunch with dressing this time made from the fresh garlic lime mayo I just made :) Was thinking about some angus ground beef and a roasted acorn squash...it will be one of those two meals :)

Dinner- elk marinated in soy sauce, maple syrup, ginger root, garlic, onion, celeriac mash with sourcream, fresh herbs; stir fried shanghai choy with onions, fortified red wine (which tasted like port with blackberry notes), tea with milk.

Sure! Experiment with the number of eggs, amount of ground protein and veggies. I do line my baking dish with parchment paper to prevent sticking. I would not drop lower than 9 eggs or 3/4 lb of ground protein unless your baking dish is very small. You can also place the mixture into lined muffin cups but I find the refrigerated texture of these to be a bit different and I do not like them as much.

Crankin - do you have access to a Trader Joe's? If so, have you tried their frozen scallops? For some reason I am a bit leery of making my own scallops - but then again I've had mixed results from scallops at restaurants.

Yes, we have a TJs about 3 miles away. The key to making good scallops: melt a combo of real butter and olive oil to a high temperature and make sure your windows are open, so your smoke detector doesn't go off! Put the scallops in the melted oil with tongs after you have patted them dry... Let them cook for 2-4 minutes and then use the tongs to gently turn them. Let the other side cook for the same amount of time.
We have a very good fish market close, too. Scallops are the only shellfish I can eat, so I eat them a lot. If you have access to a fish market, I would try doing the fresh. Don't buy grocery store scallops (or any fish). But, I can see how getting really fresh fish might be harder in the Midwest.

I suspect it had to be deer/venison. The cut we had was low fat more on chewy side. But dearie did a great job of pan-searing. Alberta raises bison, deer (of which some maybe wild) and sells a lot more it compared to other areas of Canada. It's because of our climate, feeding areas and ability to buy /have more acreage of ranchland in the prairies.
I actually have not bought any pork nor chicken for home to cook in ...past several years. Otherwise I buy seafood. We only eat meat 3-4 times per month.

I am doing some serious cooking for the week - really enjoying the cooler temps and being back in an apartment that extends across the entire floor - which means I have windows open in in front and back so I've a nice amount of fresh air ventilation going on - can't do this when there are only windows on one wall!

What size baking pan do you use? Maybe I ended up with relatively small eggs, but the volume looked pretty small for one of the bigger pans. I think a 9"x9" might work a little better, but all I have are 9"x13". (Three of them. How, I don't know.)

It won't fill the pan to the top, and by all means, experiment away with different veggies, spices, whatever you like. Nothing wrong with increasing the volume of the veggies :) This recipe is about as versatile as they come! I need to replace my oven-proof skillet so I can actually start this on the stove-top and transfer to the oven like a true frittata. The recipe WILL fill a full-sized skillet - I've resisted buying a smaller baking dish but I need to either do that or break down and find a skillet. I would LIKE to find an enamel lined cast iron skillet that perhaps won't stick as badly as unlined cast iron.

I can't imagine that mine is smaller than yours - so I am obviously using more than 3 cups veggies :) The decrease of 2 eggs won't make that big of a difference. As I said, I don't measure much. My baking dish is about 3/4 full when cooked - and it does take at least 25 minutes to bake.

I just saw this. Have you tried seasoning bare cast iron with flax seed oil (instructions and science here (http://sherylcanter.com/wordpress/2010/01/a-science-based-technique-for-seasoning-cast-iron/))? I've been doing all of my cast iron this way, slowly, as I destroy the old seasoning and find the time. I did a griddle with flax seed oil and it's definitely holding up better than anything else I've done.

Yesterday at home after a 42 km. bike ride, the Thanksgiving dinner was:
seared bison marinated in soy sauce, maple syrup, ginger root with sasktoonberry sauce. Served over sautéed fennel bulb. Squash-potato gnocchi on the side that he made. Saskatoonberry wine. Then we had each slightly smashed (from a bike ride) tartlets for dessert. (Turkey is not really part of either his or mine tradition at all. We like it when other people make turkey. :))
Today --another extension of Thanksgiving weekend:
B- cornflakes with plain yogurt dollop, a huge dollop of homemade plum-peach-wine compote and milk, tea with milk. Added in half eaten small chocolate biscotti
Then we went for 65 km. bike ride with some short hills all over in a large river valley park area where I seldom go since am unfamiliar. Midway during ride and fabulous fall colours, we stopped for lunch at restaurant.
Brunch- smoked salmon eggs benedict over light cornbread with capers, lemon sauce. (last time I had eggs benedict was over 6 months ago) Orange juice with sparkling wine. Small beignets (French for donut) with wine whipped cream and strawberry coulis sauce for dipping. Coffee with milk.
Supper - a bison sausage with saskatoonberries, fresh tomato slices with boccocini cheese and fresh herbs. Tea with coffee. Half of a small pumpkin-fig tartlet.
Maybe because the temperatures were 5-10 degrees C throughout the day, I burned off more energy than expected. Or maybe I was unfit. Doesn't matter much. A lovely Sunday of special meals and great scenic cycling. :)

We went on a 45 mile ride, with 2,300 ft. of climbing. It was colder than I thought it would be...
L: My usual almond butter on whole wheat spelt raisin bread sandwich that I bring on rides, some nuts and cranberries, 1.4 bottles of water, I ate a Lara Bar throughout the ride.
S: I had some Machengo cheese, pita rounds, and hummus when I got home and was preparing dinner, when friends came over. I get ravenous after these kinds of rides, and I kind of give in to it. If I just eat a little or have, say, chocolate milk, I still am hungry and end up eating more.
D: Had some more of above appetizers. 2 glasses of red wine, 4 oz. of delicious sirloin steak, sweet potato, and broccoli. Fresh strawberries for dessert.

Down to 124, the loss appears to be sticking - totally unknown how what made the change but there it is. I suspect that my carbs were a bit too low so I changed my macros a bit, same calorie target range.

I am struggling with keeping my weight where I want it. There seems to be no rhyme or reason to it. I am trying to get more sleep, avoid too many carbs, etc. Eating lots of meatless meals, but still getting a lot of protein, mostly fish and chicken. Usually this happens in the winter. By all accounts, I should be fine with my eating. It seems like after a while, my body gets used to just about any type of food I eat. When I weighed 103, I was having my glass of red wine and a piece of dark chocolate daily. I've cut back on the wine, but it hasn't seemed to help. I don't eat a lot of sugar or crave it to begin with.
I guess it's just carry on.

D: sausage/kale soup with more roast chicken - VERY tasty on a cool fall evening!
In the end I don't think I ate enough - I think most of my calories was from the mocha :eek: For some reason I am being really tempted by mocha and pumpkin lattes right now. I KNOW what is in them, there are only 2 independent coffee houses from which I will get them but still...I also note that I am starting to crave sugar again and I don't think that a coincidence. Time to shut down the sugar train!

This is the first time I've worked with an actual pumpkin - treated it just like I do other squash. It was interesting, I found it less sweet than butternut or acorn squash. It worked well in my savory recipe however.

D: we went out to celebrate me getting my counseling license... the actual dinner was pretty healthy. We drank a bottle of red wine :eek:, and then walked across the street where I had a kiddie sized scoop of coffee and cookies ice cream.

Maybe regularly posting in here will get me back on track as far as actually eating goes... Last weekend I went up to Phoenix to celebrate my birthday with DBF and his family. His dad made pork chops (stuffed with ham, cheese and pickles...tasty!)... I ate a whole pork chop prepared that way (everyone else had half of one, because they were rather large), as well as the grilled veggies, and I still had room for cake. Apparently 2 meals a day will do that to you.
Yesterday:
B: 2 pumpkin waffles, plain.
Iced chai
An apple with peanut butter and cookie butter to dip it in, goat cheese, tea with sugar and half-and-half
D: Granola with 1%
Brunch: 2 pumpkin waffles with butter and maple syrup, 3 slices of bacon, coffee with sugar and half-and-half.
27.3 mile bike ride. Ate 8 Shot Bloks and still felt hypoglycemic after the ride.
For some reason, I really wanted a burrito or something, so I went to Chipotle and got a carnitas salad with rice, all four salsas and cheese, and a tortilla on the side. And a Coke.
Cake for dessert!

Goldfinch, it's really not that difficult to eat the way I eat. As you can see, I don't deprive myself of beer, wine, or my almost daily 2 squares of dark chocolate. When I start feeling deprived, that's not good. However, I do like to cook, plan meals, even shop for food. So, it might be hard to eat this way, if you are used to buying more prepared stuff. And, I do spend a lot of income on buying fresh, sometimes organic food. I also go out at least 2x a week for dinner. But, I make my own lunch on the days I work and I always eat a bigger/good breakfast. I *never* go to fast food places and I don't buy or eat junk/snack food. It's just not in the house; so if I am really hungry for a snack, the worst thing I am going to do is eat a piece of spelt bread with almond butter or a Lara Bar.
My weight is not where it was 2 summers ago, but, it's not terrible, either, in the total scheme of things. I have really cut down on the carbs in the last 2 weeks and trying to institute more portion control, which is hard for me. I try to look at food as medicine. At my age, eating and cooking good food not only helps me control my weight, but contributes to my overall health. I'd rather do that than pay for medicine!

Today:
B: frittata, coffee, 1/4 avocado
65 minute harder than usual conditioning group training - followed by protein shake
L: last of the chicken wings from a local paleo food truck with some butternut squash + creamy spinach gratin (from Trader Joes - and it was GOOD - I hardly ever get prepared food)
S: small apple with a bit of plain yogurt mixed with some protein powder
D: Planning on a beer, a few of the Czech meatballs currently in the oven and roasted brussel sprouts.
Crankin - I did break down and buy the new Well Fed 2 and it is a great companion to the original. No repeat recipes, a couple of different sections - along with several pages with different spice blends to use for burgers, meatballs, or bangers. I rarely stick with cookbooks but I love her recipes!

B: had my carb fill for the week. DH made waffles, and I ate 2, with walnuts and dried cranberries, 2 slices bacon, and a small bowl of blueberries and strawberries, coffee
L: chicken salad with almonds, cup of butternut squash soup
went for 22.5 mile ride, very hilly (4 mile climb with 4-7% grades), windy. I ate a Lara Bar during the ride.
S: my stomach is hurting from taking Advil, and I felt the need to eat, to ease it, when I got home. I had some whole wheat pita rounds and red pepper hummus
D: I made some sweet potato soup (yummy) and DH insisted on making some toasted garlic rounds out of a baguette (well, part of one), which I did not refuse.
Catrin, I find I don't use the Well Fed cookbook as much as the other Paleo cookbook I have, only because it's based on the premise of cooking a whole bunch of stuff and freezing it/using it all week, and I just don't like to do that. I do use a few of the recipes a consistent basis, though, so I might look at the second version. I love buying cookbooks.

Crankin - what other Paleo cookbook do you have? Nom Nom Paleo is releasing one in mid-December. My favorite internet recipes are from her site so I must...have...cookbook. I do have Practical Paleo - which is a great reference book with both information and lots of good recipes. She also has a cookbook being released in the next couple of weeks... By the time I have the 3 new cookbooks I have my eye on I won't need any more for a long time - 2 are certain, one is a maybe. I DO have an electronic paleo cookbook but that was a waste of money - the cookbook itself is fine - I've found I really prefer a physical book for a cookbook.
The nice thing about cookbooks is they force me to broaden my horizons - and I do like to pre-cook for the week as much as time allows so Well Fed is a great match for me. Well Fed 2 doesn't duplicate information or recipes from the first one, so I think it would be a fine addition to your cookbook library :)

The other Paleo cookbook I have is called "The Food Lovers Make It Paleo" by Bill Staley. Not quite sure of the last name. The recipes here are really good and I use this all of the time, even though I am not eating strictly Paleo anymore.

I am, just not so good about doing it every day as I should. It does help and provides a bit of accountability.

D: I love hot dogs and was glad to find a brand I don't feel guilty about eating, haven't had one in many years! Grass-fed/uncured/no ingredients that I can't pronounce :) Trader Joe's sells, them, Applewood? is the brand - "Organic Hot Dogs".
2 hot dogs, sweet potato, brussel sprouts, 2 squares dark chocolate, small glass of milk.

I went to the gym and did a 25 minute interval hill program on the elliptical and then did a yoga/stretch class that was very intense

did a metric, during which I ate a Lara Bar during the first 35 miles and drank a bottle of Accelerade.
Lunch, during the ride was half of a large chicken honey mustartd wrap, infused with bacon crumbles and lettuce and half a bottle of Gatorade, poured the rest of the Gatorade into my bottle and drank that during the rest of the ride
S: got home, drank water and had 3 slices of Machengo and a few whole wheat pita chips, one left over pork-quinoa meatball. This was nothing compared to my normal post long ride eating!
D: we went out to a very nice Italian place in another suburb, for my birthday. It truly was like being in Italy. Had a glass of Prosecco and DH and I shared a tapas sized portion of burrata and something else... forget the Italian name, maybe arrancini. I had the small sized squash ravioli; 7 small raviolis, which were delicious and it was just the right amount. Tpped it off with a glass of red wine and an affogato for dessert. I was celebrating, after all.

Crankin, those Czech meatballs are wonderful, like meat candy :) looking forward to trying some of the new meatball spice blends in the new cookbook.
Still home sick but starting to feel, and eat, better.

This is the first time I've tried it. I am getting tired so am foregoing the cauliflower rice tonight, I will make that tomorrow night. I don't feel like having to clean my food processor tonight ;)
Added: OMG that stew is incredible! It is really more like soup because I didn't have any arrowroot powder and didn't feel up to heading out and hunting some down, but this is a great cool weather recipe! I bet it would also be great cooked with no poultry & paired with pulled pork. Or perhaps even used as a base for fish stew - fish stew curry anyone? hmmmmmm

Yes, the Czech meatballs are definitely like crack.
