It is sad to lose two special women in a week's time. Both are in my church, and indeed I was present when they were formally brought into the Orthodox Church, both were over 70 at the time. These ladies were like my surrogate mom and aunt, and one of them just remarried less than a year ago! One was buried last Friday, the other died that same day and her funeral is tomorrow. They will be sorely missed, two classy ladies with a kind word and generous heart for everyone they met and were more alive and vibrant than many half their age. I aspire to be like them should I live so long!

B: sausage/veggie frittata, coffee with cream
training session, protein shake following
L: Artisan lettuce salad with roasted chicken, 1 medjool date and veggies, small amount of dressing (home-made)
D: "Hot plate" made with pastured ground beef (cooked in garlic and onions) and bok choy with spices

On Sundays I've started something new - cook enough animal protein for at least 5 days, and steam-saute many different types of veggies and roast a squash or two, or sweet potatoes. The veggies aren't cooked all the way, just enough. Makes meal preparation much easier and quicker during the week and allows far more variety. My body needs more than protein and baby spinach or kale :) This is my first week with this new approach and it seems to be working well. I get home from work 3 hours before bed time so there just isn't much spare time to spend in the kitchen on weeknights. With the right mix of spices and veggies I create quite a variety of "hot plates" without a lot of work or expense.

Artisan lettuce is a combination of different types of lettuce sold in a container - typically there are 4 different small heads of lettuce of different types. A review here (http://eatwelleatcheap.blogspot.com/2010/10/rave-review-artisan-lettuce.html).

We buy "artisan" lettuce at Kroger and while we like the product, there's nothing "artisan" about it. There's nothing "artisan" about food grown in the ground. The truth is that the word has become a marketing gimmick and is being misused for a whole host of foods.

Catrin
01-14-2013, 04:35 AM
I agree, it is just the brand name. Good lettuce though, and it is a different variety than what I've seen.

indysteel

Sorry; just read the review you linked to and it also takes issue with use of the word. I do disagree a bit that the lettuce doesn't necessarily spoil as quickly as mixed spring greens. We've gotten a few bad packages of it, despite having purchased well before the sell by date. Kroger is generous in their return policy at least. The only lettuce we've bought that doesn't spoil relatively quickly is at the local farmer's market. Not surprisingly....

Catrin - your meals look so similar to mine!

Can I ask about your pumpkin 'muffin'? I'm guessing it's not really a muffin in the traditional sense. I'm curious about your recipe because this weekend I'm going to be doing some experimentation on some handy post-workout carby things that are sugar free. Pumpkin and other winter squash, sweet potato, etc will figure prominently. Right now, I wait until I get home AND walk the dogs, so I'm not refueling for over an hour and that's not going to be good as my intensity increases. I need something simple that I can eat in the car on the way home!

Is your chocolate chili from Well Fed?

The chocolate chili is indeed from Well Fed and it is pretty darn good! If you like spicy then you will need to add spices, but it is a great base recipe. I've had it over cauli-rice, as well as baby spinach. I bet it would also be good with shredded sweet potato as well.

I've tried different versions of the pumpkin 'muffin', if I can find the recipe I used I will post it. I REALLY enjoy the recipe in Practical Paleo for pumpkin 'pancakes', I made a small batch last night to go with my dinner - nice and savory. I never use the maple syrup such recipes seem to always call for. Recipe here (http://balancedbites.com/2012/10/easy-recipe-pumpkin-pancakes-from-practical-paleo.html) - if you make them thin they can make a nice savory "wrap" kind of thing.

Excellent, thanks! I'll start with that pumpkin pancake recipe and work from there.

Yeah, I made the chocolate chili once and wasn't all that impressed but I know a lot of people love it. Honestly, so far, it is the only recipe from that book that I don't rave about. The citrus carnitas, czech meatballs and sausage seasoning are some of our favorites that we make over and over again. :)

I didn't like the chili the first time either, but I was out of one of the spices. It was MUCH better with the cumin :) I am going to make it again this weekend for the work week and spice it up more this time, and thanks for the meatballs rec., hmmmm

Citrus carnitas? Sounds good.
glass of almond milk, ran on the treadmill for 15 minutes, did some core work at home

Catrin, what kind of protein powder are you using? I'm not sure what's considered "acceptable" by Paleo/Primal, but I need a backup plan for post-workout nutrition when meals aren't an option. Thanks!

Catrin, what kind of protein powder are you using? I'm not sure what's considered "acceptable" by Paleo/Primal, but I need a backup plan for post-workout nutrition when meals aren't an option. Thanks!

I HAVE to supplement on days I work with my wild trainer, whether for group or individual training. My protein powder is vegan and uses hemp/pea protein: no dairy or dairy by-products. The nutrition profile is pretty good though I am certain a "by-the-book" Paleo person wouldn't like it. I noted that Mark Sisson himself sells a line of protein powder and other supplements.

I really like the protein/carb ratio (20 grams of protein to 5 grams of carbs). I use Biochem Vegan Chocolate Protein Powder (http://www.amazon.com/Biochem-Protein-Powder-Chocolate-16-2-Ounce/dp/B001NGJKIS/ref=sr_1_4?ie=UTF8&qid=1358973246&sr=8-4&keywords=biochem+protein+powder), and this Amazon price is lower than the $20 I pay at Whole Foods. I will toss in 2 strawberries or perhaps 1/4 of a banana in the blender to cover the taste that all protein powders have. It seems to work fine, has a decent profile, and is affordable. My trainer (who is Paleo) turned me onto it. It does NOT contain stevia (a plus for me), and doesn't have a large amount of fiber and not many unnecessary ingredients. The reviews on how it tastes goes from one extreme to the other - meh - IMO none of these powders ever "taste good", and that isn't why I use them.

If you choose to try it I will be interested in hearing what you think about it.

A lot of the paleo people I know use pure egg white protein powder. I have one I buy on Amazon from NOW and it's good. I blend it with fruit and coconut milk and it basically has no flavor. Because it is unflavored though, it would not be good for a mix at the gym type powder.

I've also tried Mark Sisson's (the chocolate flavor) and while I was able to get it down without gagging or anything, I haven't used it since the first time. Personally, I'd rather just eat a piece of cold salmon or chicken. ;)

For me the shake just gets the protein into my system faster, and I can tell the difference. I get plenty of other protein, and it also helps me to keep my fat intake down to my preferred percentage. I only do it when I work with my trainer - he pushes me to my limit - and our limits are always further out than we think ;) I thought about Mark's, but it is a lot more expensive, and has more carbs in it than I like - plus it has Stevia - which I try to avoid.

The pure egg white powder sounds interesting, but unflavored probably wouldn't work well...

This is the one from "Well Fed", and it is indeed a new comfort food for me! I used almond butter for the sunshine sauce, and so far I've been unable to find the "5-spice" (whatever the name of that asian spice is), but it is quite yummy regardless.

This weekend I am going to try her recipe for Citrus Carnitas if I can find a good pork shoulder that won't break my budget. Have you tried that one yet?

What I really like about her recipes are the spices. Most are common, but I've never really been too brave with the use of them and the Well Fed recipes have been introducing me to a new world :) Practical Paleo does the same - they are my "go-to" cookbooks. I've also an electronic paleo cookbook but I really need to break down and print it...

You should be able to find the Asian Five Spice in any grocery store spice section. It's not that uncommon. Try Trader Joe's if it's not in your regular store.

Catrin

THAT'S IT :) Perhaps I've just not been looking in the right place. I assumed Trader Joe's wouldn't have it since Whole Foods doesn't. Thanks! Now I need to find a better way to store my little batches of bulk spices - those little bitty bags are getting irritating and cluttering my cabinet. Makes using spices much more affordable though!

I did try the citrus carnitas. They would have been delicious, except that I burnt them. When she says, "watch like a hawk!" at the end, she means it! I used a pork loin that I already had and I think I should have used a fattier cut for better, moister results.

I love the Czech meatballs....staple #2!

Around here, Whole Foods occasionally has sales on their ground lamb that is comparable to the ground beef I get from them ;) That being said, it will probably be ground beef, though I am looking for a local farmer to hook up for lamb. I recently found a local source for grass-fed bison that is actually pretty affordable - at least the kind of cuts that I am interested in! nothing wrong with braising the so-called "lesser" cuts!

Czech meatballs is a staple in our house, too. I do those with half ground pork and half ground beef. Yum!

I can't eat the pad thai recipe anymore. I made it the day before I got a miserable stomach bug last year and when my husband reheated the the leftovers, the smell made me sick again. I just can't even think about making it anymore! :(

The citrus carnitas are AWESOME! A couple of things to note: 1) use a very heavy bottomed, high quality pan. Thin ones suck and will not only burn the meat, but will make it stick so bad you want to cry. 2) country style boneless pork 'ribs' are the same thing as pork shoulder but already cut into strips and it's often significantly cheaper than the whole roast - so keep your eyes peeled. 3) don't use a super deep pot or you will be cooking these things for what seems like DAYS. I found I had the best luck doing them in a enameled cast iron dutch oven.

And if you haven't tried it yet, make her sausage seasoning. I make it in double batches and we use it to season grass-fed ground beef for any other recipe that calls for sausage and it ROCKS!

Also, try the bacon apples exactly as written. They are SOOO good!

GLC - thanks for the tips! I will certainly be on the lookout for the "ribs". I've a 7-quart enamel dutch oven and while it is quite deep, it is probably the only thing I have that is appropriate. My other cookware is low-temperature stainless steel - and while it is quite good it might be a bit thin for this purpose.

Thanks the rec. on the sausage seasoning. I've been experimenting with this on my own as it seems that regardless of the quality of the pork itself that I've found in bulk pre-mixed sausage that they always have canola oil or other ingredients that I won't use.

The dutch oven should be fine. The last time I made these, I didn't have my dutch oven (it's still at the old house) so I improvised with a super heavy bottom stainless steel stock pot. The problem is that the stock pot was too narrow across the bottom so the pork was piled too high and therefore I needed too much water. I also kind of forgot about them and had a similar experience to what Melissa describes here:

http://www.theclothesmakethegirl.com/2011/04/29/stovetop-pork-carnitas/

Indy - the above blog is the home space of the woman who wrote 'Well Fed', the book we keep talking about. Her pad thai recipe is on the blog too as that is where I first made it (before the cookbook was released). She also has a variation of the carnitas that makes a 'Greek' version in her 'Deconstructing Gyro Salad" post which are very good too.

Good choice Crankin, it is a great cookbook! It is also about cooking, not just recipes. I never thought about pre-cooking for the work week until I read her suggestions. With MY schedule it is the only way that I can get enough vegetables and any kind of variety in my diet.

B: usual frittata, bacon, coffee with cream
1 hour hard group workout, protein shake afterwards
L: arm pot roast with carrots, sweet potato, small salad
S: small roasted chicken thigh, a small amount of chard
D: sardines, sauteed red cabbage with onions and pear

I am thinking about trying this three-meat chili recipe (http://www.paleomusings.com/2013/01/down-home-texas-chili.html#) this weekend as well - it looks good!

I wish I COULD workout on as little food as some here do - my body just won't let me do it. I cut back on my breakfast portions on days that know I will supplement my protein after my workout but I've still got to have a reasonable brekkie. It is a balance between having enough energy for the level of effort required but not TOO much that my stomach rebels during the workout.

Catrin--Are you using fresh or canned sardines? And where do you find them? The local Kroger only has them packed in mustard sauce (uh...) or soybean oil. Do you do anything to them? I think there's an Indian recipe for almost a curry or spicy tomato sauce for sardines, but I'm a sucker for nearly anything in a spicy tomato sauce...

Canned, and I don't do anything to them, I've not tried using them in a recipe. Both Trader Joe's and Whole Foods has different varieties packed in extra virgin olive oil, mustard, or tomato sauce. I won't touch canola oil in anything so I do have to watch out for that - TJ has more varities of small fish packed in canola oil than WF :( I also like herring. Whole Foods has canned trout but it is quite a bit more expensive so I've not tried it.

Catrin, I have to ask: If you need a neutral-flavored cooking oil, what do you use? Canola or peanut are the only two that I can think of, and peanut is probably out, and apparently canola is too (too processed? wrong mix of fats? sticking it to the big-agribusiness man? ;) ). Coconut oil certainly isn't neutral-flavored, and I can taste ghee.

I'll have to head over to TJ's sometime, then, since we don't have a Whole Foods in Dayton...and never mind the delicious snack food that TJ's has.

For cooking I use coconut oil (both refined and un-refined. Cold pressed refined coconut oil is fine, and if I don't want any hint of coconut flavor then I will use refined coconut oil. Trader Joe's sells unrefined coconut oil at a lower price than Whole Foods - still not cheap but well worth it. It also has a kind of fat that is good for you (middle-chain triglycederides - MCT) and is hard to get.

Canola is highly refined/processed - probably the most processed out there. Here is a brief summary (http://www.marksdailyapple.com/dear-mark-canola-oil/#axzz2Jt82CDAH) on Mark's Daily Apple that discusses some of the problems with it.

I'm starting to feel like a minority in here. Guess what? I eat bread, butter, sugar and canola oil. I don't think coconut oil is a miracle substance. And I damn well enjoy my food and cooking it.

Also, I'm poor. I'll see if I can find some around here. If nothing else, I can cook some more Goan food. Only place that coconut oil makes sense to me. ;) I love coconut, but that flavor doesn't belong in many things.

Anyway:
B: 3 slices bacon, small piece of sourdough toast with butter, tea with half-and-half and sugar
S1 (at work): 4 gummy worms, 2 pretzels. (You'd think that we'd have slightly healthier options at a bike shop...)
S2 (on way to lab): Bag of "potato skin"-flavored chips. Apparently my memory of how these things taste is significantly at odds with how they actually taste.
D: Pasta with a whole can of olive oil-packed tuna, spinach, grape tomatoes and Parmesan. (Also lemon juice, S&P and red pepper flakes.)
Dessert: 2 small cookies (trying to get rid of them!) and a blood orange.

B: 1 bowl shredded wheat, coffee
Played 2 1/2 hours of tennis from 12-2:30
got home around 3: had a handful of walnuts
Wow, no wonder I was so hungry when I ate dinner!
D: Fajitas grilled sirloin steak slices, sauteed red onions, red and yellow bell peppers, gaucomole, salsa, cheese with beans on the side on a flour tortilla, 1 glass of wine
1/3 slice of tirimisu

Ditto Catrin - refined (cold pressed) coconut oil is flavorless (and odorless). The unrefined stuff tastes like coconut and I really only like that flavor in sweet things, so I don't use it much.

I also cook with clarified butter (less flavor than ghee - it tastes like butter), good bacon fat (only from known-source, ethically raised, sugar and nitrate free bacon) and olive oil. Olive oil is fine if you aren't frying in it (ie, not super high heat).

I do use unrefined coconut oil for eggs if I am not using butter or bacon fat (same source as yours) as I like the flavor. I make ghee for myself from grass-fed butter - it is less expensive than the store-bought version and I KNOW what kind of butter was used ;) These days I reserve olive and avocado oil for salads - and I generally use walnut oil for making mayo with. For me olive oil is too strong to make mayonnaise with - at least for me it is. Walnut oil works great in mayo, milder flavor than olive oil, and it is less expensive than avocado oil.

Don't fee alone Owlie - there do seem to be quite a few paleo eaters here right now; and of course, gluten free diets as well.

But, I'm not one of them either. I try to eat lots of veges and lean meats, but each sugar and other "bad" things. and, of course, I drink wine and beer and an occasional margarita. I cook most of my own food and dont eat too much in the way of processed foods.

I eat breads (mostly WG), I eat pasta, white rice when I don't have time to cook the brown, etc. I feel healthy, have no adverse effects from wheat so I'm lucky I guess and try to get my nutrients from my food. Of course, I fail some days and then realize I better get some more veges in and fruit.

Have you tried extra light olive oil for mayo? I don't notice the olive taste with it like I do with extra virgin or blended olive oil and it's cheap! I'll have to try walnut oil sometime...that sounds delicious!

Yes, but I just don't care for the flavor. Walnut oil is really good for mayo - though I DO add between 1/8-1/4 cup of extra-virgin olive oil - my recipe calls for 1 1/4 cups oil in total. That little touch of the stronger olive oil appears to strike a good balance without the mayo tasting TOO much like walnuts. Avocado oil is nice, but I really prefer walnut oil.

Vegan Goat Cheese? http://www.cestlavegan.com/2009/10/peppered-cashew-goat-cheese/ If you're avoiding canola, I bet it would be good with just about any oil - perhaps a nut oil? It comes out lemony - which might be nice for salmon. Maybe with some dill?

Catrin - for the rutabega - I shredded it and then browned it in a pan of bacon fat with finely diced onions...kind of like hash browns. It was the leftovers that I tossed into the eggs. Yum! I got the idea from here:
http://paleomg.com/rutabaga-egg-nests/
I started drinking my coffee black by putting it in a travel mug with a lid so that I couldn't see it. And you want good quality, strong coffee, too. Once I did that for 30 days, I stopped liking cream in it. I also know of a lot of people who love coconut milk in their coffee. I never did, but maybe that's an option for you?

Crankin - I've heard of vegans making cheese and spreads and stuff out of cashews. I've never done it but I'm going to attempt a 'cheesecake' as my birthday treat for this weekend: http://mynewroots.org/site/2011/01/raw-cashew-dreamcake-2/
Perhaps there is a good 'cream cheese' recipe out there somewhere?

I will look at the ingredients in the vegan cream cheese. If it's full of soy or weird additives, I am fine with using a small amount of cream cheese. Just being realistic for myself.
Wow, I have always been a black coffee drinker. I can barely taste the coffee with more than a drip of milk or cream in there. A few years ago, I got DH to stop pouring sugar and a ton of milk in his coffee. He lost 10 lbs.

Thanks for the link GLC, I need to try rutabaga. I'd forgotten about coconut milk, I DO like it but prefer cream. I do use good quality coffee, but will likely need to make it less strong if I am going to back off of cream for a month. I don't put sugar in it so that isn't an issue.

I just got a chance to check out that rutabaga hash recipe - mmmmm I think I will try that Saturday morning. Any tips on what to look for when I am shopping for rutabagas?

It's been a couple years since I last bought them, but you probably don't want the really big ones or the really tiny ones because they're woody. Also avoid the ones with cut marks or cracks.
They do seem to need longer cooking times than other root veg. The only way I've cooked them is roasting them with other not-potato root veggies and onions, then pouring apple cider over the top and letting them cook a little longer. Mmmm. (Rutabaga is now no longer a word.)

Don't take this the wrong way, Paleo people, but: I note the lack of regular potatoes. Why are things like rutabagas that fill the same role as a potato (i.e., a starch reservoir) okay, but not potatoes?

("Potato" and "rutabaga" are no longer words...)

GLC1968

I have no idea how to buy a rutabaga but I must have gotten lucky. I knew not to get really huge ones but other than that, it was a guess! I did the 'hash browns' in small batches, some with bacon fat, others with clarified butter and found that both were good but I got a better browning with the butter.

Owlie - there really isn't a good reason not to eat white potatoes other than their fairly feeble nutritional profile. It's not the starch because sweet potatoes, winter squash, root veggies and a host of other starchy things are fine.

Personally, I try to avoid them simply because I love them so much, I'll overeat them. I have a very unhealthy obsession with white potatoes!

Today was a bleh day for me. I slept awful last night (late night moving and coffee after dinner is a bad combination!) and because I was tired all day, I really didn't care much about my food.

B: leftover sweet potato, jalapeno, sausage hash and a hard boiled egg, clementine, black coffee
L: lara bar, hard boiled egg, clementine (see? useless meal!!)
S: beef jerkey
D: scrambled eggs topped with salsa and a side of blueberries

Nothing non-compliant but my nutritional profile for the day is lame. Ugh.

You want bad? You should have seen last night's dinner. 2 bowls of cereal followed by a bowl of coconut rice pudding with almonds. (Granted, I came home with a splitting headache and couldn't be bothered...)

I think you're allowed an occasional potato. Just send the rest to me! ;) (I love them, but don't eat them a whole lot because I'm mildly allergic to potato juice (immune systems are stupid!) and can't cut or peel more than a couple at a time.) Oddly enough, most of the things I've read say potatoes have a pretty good nutritional profile--provided you eat the skin or scrape every.last.thing off the inside of it. Too much work for me!

Potatoes are members of the nightshade family - which I avoid (which really helps my skin conditions). I will, rarely, have tomato, but I don't like potatoes enough to risk it. Paleo/primal athletes will use them as needed. Thankfully sweet potatoes aren't nightshades :)

OK, the pork carnitas are made and eaten. My take is, that it needs more spice than in the recipe calls for, as well as more lime juice. The author most likely did not live in the southwest! It cooked up pretty much the way it said, and I had the right kind of pan. But, not all the pieces got browned, as I felt it was getting too dry to continue (I was right). Next time, in addition to the spices, I will use even more water than I did, as I added some a long the way, and I will turn the temperature down even more.
And, I would have preferred some steamed corn tortillas and black beans to accompany it, instead of the kale and hearts of palm!

I know this is not really bad, but I'd been eating pretty clean. Well, now I'm going away for a long weekend of x country skiing, which always includes lots of eating. I will try to be good, but don't think I can be totally Paleo.
I did make the Shepard's Pie recipe from the Eat Well cookbook. It was kind of a fail. Not sure what happened, but I think I need less broth and more meat. The mashed cauliflower on the top was a big hit though, and very easy to make. That will become a staple.
Will start posting my food again next Monday.

Today:

B: scrambled eggs with baby spinach over small amount of sweet potato hash, 2 thin slices of fresh side pork - I call it bacon (cooked with salt and pepper - yummm :), coffee (no cream!)
90 minute HARD workout!
post workout snack: boiled egg whites, 1/2 banana
L: chili over baby spinach, the other half of that banana
D: Probably sirloin steak if I can make up my mind how I want to cook it, green beans, salad. Perhaps a small baked sweet potato, perhaps not.

Still kind of hungry after lunch, I might have to have a snack of a few hazelnuts or macadamia nuts with some strawberries...hmmmmmmmm

I won't get into what I ate when I was on vacation. None of it was really awfully unhealthy (i.e. fried or sugary), but I did have a lot of bread and other grains that I don't normally eat. I did manage to only have dessert one night out of 3, so that was an accomplishment.
I am still sick, but somewhat on the mend. No semblance of normal exercise yet, although I did one hard snow shoe and one pretty intense nordic ski, due to conditions during the weekend. I did nothing but eat yesterday. Today I did a very light 30 minute work out on the trainer, like one of those old ladies at the gym that just sits and spins slowly. Since that started a bit of wheezing, tomorrow will be yoga and some weights. I am hoping to be able to go to spin or do the trainer on Wednesday.
B: 2 eggs and some egg whites with kale, an orange and blueberries, coffee, 6 oz. almond milk
L: we had no food in the house, so I rolled up a whole wheat tortilla and put the last of my hummus inside, which I ate in the car, in between clients. It's a weird day, since it's school vacation week here, so I saw 3 clients, even though my office is closed.
S: nuts and cranberries, a piece of cheese when I got home, and 2 whole wheat pita rounds and more hummus
D: 3 very small chicken thighs, sweet potato, broccoli, 2 squares dark chocolate
S: just finished about 4 oz. plain Greek non fat yogurt with blueberries, to help with the effects of the antibiotic I took

Well, I'm back home but we are still a little short of prepped food in the house. I will remedy that this evening.

Today
B: eggs with spinach, topped with salsa and avocado, black coffee
L: two chicken apple sausages and a pile of mixed veggies steamed and drizzled with olive oil
S: handful of mixed nuts
D: grilled salmon, mixed greens salad, and a baked sweet potato (topped with cranberries and macadamia nuts)

Becky - I just saw this! I should have posted more of my meals. This trip was weird because I stayed at my parent's house for half of it, so it was 'cheating' in terms of traveling while paleo.

I leave again next week for a trip to New England, so I'll be sure to post more then. Basically, I always look for TJ's or Whole Foods to stock a hotel room fridge and then Chipotle (their carnitas are Whole30 compliant) or Panera for restaurant options. Steak houses are typically pretty good too. I also always carry a container of olive oil/vinegar in my liquids bag, a couple of pouches of tuna and a couple of packets of Justin's almond butter for emergencies. Grab a banana from Starbucks and squirt almond butter on it and that'll hold me for hours. And it's usually possible to find veggie salads in airports, so with my own tuna and salad dressing, I'm good to go.

So the only meal I've had today is dinner, unless you count the cup of coffee around lunch time: Chicken breast (honey Dijon-marinated), brown rice, big pile of kale cooked in bacon fat (and the bacon)

1. wheat sprouts, cream and dried blueberries
2. grapefruit
3. musli with whole milk and 1/2 scoop protein powder
4. on the bike during 3 hours ride: 1 almond bar; 1 eclair (looks like this (http://www.demetrabg.eu/pics/p24.png); 1 oats bar (only 30 gr).
5. post ride: banana milk shake: 1 banana, 500 ml milk, 1/2 scoop protein powder
6. salad: cabbage, carrot, garlic, dill, olive oil
7. I must choose between pasta with butter and cheese or pork stake with steamed vegetables.

Yesterday:

B: eggs and spinach, 1 thin slice fresh side pork, coffee
1 hour hard workout followed by 1 boiled egg & 1/2 banana

L: This was in the planning for quite some time :) Several co-workers and I went to Fogo de Chao for lunch - lots and lots of meat - and veggies. I certainly got my money's worth and didn't need to eat for the rest of the day! Yeah, I ate far too much meat - and enjoyed every bite of it ;) Oh yes, there was also a good amount of plantains, and a (very) small salad.

Today:

B: see brekkie from yesterday
another workout followed by boiled egg whites and the other half of that banana from yesterday
L: sirloin steak, steamed carrots, blackberries
D: Citrus carnitas, sauteed kale and a baked plantain

Aneila - personally I would choose the pork steak and veggies - but I don't eat pasta...

L: 2 small chicken thighs, lettuce, walnuts, dried cranberries with grapefruit vinegar, an apple
S: nuts and cranberries at around 2, lots of carrots and some hummus at 5
D: scrambled eggs with chicken, green chilis, tomatoes, onions, with a side of avocado, onions, and cilantro, glass of red wine

did a half hour on the trainer, including 2X1 min intervals in an easy gear and then 5X2 min intervals in a very hard gear
B: stir fry with salmon, sweet potato, kale, an orange, coffee
S: nuts, chocolate, cranberries
L: went out with DH. Had a cup of split pea and ham soup, G-d knows what was in it, but it was delicious. Then a salad with arugula and pecan encrusted chicken breast. There was a little goat cheese in there, too.
S: 3 slices of low salt ham rolled up with mayo
D: 3 Czech meatballs with mashed cauliflower, salad with romaine, green onions, cranberries, chocolate vinegar, glass of red wine. I used ground turkey, instead of the lamb in the recipe, but that's all I had.

Yummm Crankin, I LOVE the Czech meatball recipe! I also like your idea about a salmon stir fry for breakfast - I need to do that soon and mix things up. I get in ruts for breakfast - I have my timing down to a science :)

Today:

B: eggs scrambled with parsley, 1 thin slice "bacon" (side pork), and coffee without cream! I've set dairy aside for a month and I am finding out that I actually like black coffee (which is a shock)
1 hour workout - post-workout snack of 1 boiled egg + strawberries
L: roasted chicken salad made with a few veggies, home-made mayo (hazelnut oil) over baby spinach and more strawberries
D: last of the citrus carnitas and a parsley/fennel salad with a bit of extra-virgin olive oil. blueberries for dessert.

I want to try a salmon cake recipe tomorrow or Friday evening, I've some canned wild salmon that keeps getting my attention. Of course, I COULD make a scramble out of that in the morning...hmmm

6 oz. almond milk, handful of walnuts, 2 dried apricots before boot camp.
B:4 slices chicken breast over sliced tomatoes, with a sprinkle of shredded cheddar, 1/4 avocado, blueberries, coffee
S: nuts and cranberries, more coffee
L: I am in a 2 day seminar. They provided sandwiches, chips, cookies. Ugh. I took half of one sandwich (which were on horrible dry looking white rolls), and ate the turkey, on a pile of lettuce and tomatoes. I squirted some mayo on this, as the turkey was really dry. Luckily, I had brought an apple, but about 1.5 hrs. later I was starving. Really starving. So, I took half a tuna sandwich, scraped off the tuna salad and ate it as a snack, much to the dismay of my co-workers who were munching on cookies.
S: an orange and a small piece of Machengo cheese.
D: 2 thin pork chops with paprika/cumin rub, mashed butternut squash, roasted brussel sprouts, 2 squares dark chocolate.

D: after 2 days of sitting 8 hrs. in a seminar, I decided I wanted to go out. We went to a very local lovely restaurant where I had a large cup of beet soup, and I got adventurous
with my entree: roasted rabbit with purple brussel sprouts and pureed squash. That part was healthy.
Not so much the 2 glasses of red wine and splitting an apricot bread pudding with pear ice cream.

S: one slice of uncured bacon
L: kale, broccoli, orange pepper, with 3 slices chicken breast, and a little egg whites, fried up. an apple
went on a 3.5 mile hike, which included a 350 ft. climb. I was wearing my hiking shoes and ice spikes, which were fine until we got to the climb and the snow was a little deeper, so it was a lot of work. Had a handful of nuts and cranberries at the top

B: beef tip roast from dinner and 2 eggs, coffee
1 hour hard group training session
L: very last of the beef tip roast, banana "muffin cup" (banana, 1 egg, almond butter - all microwaved together - yummier than it sounds :)
S: 1 slice bacon
D: Shepherds Pie and sauteed Lacinto Kale with a few blackberries for dessert. This is the first time I've made this recipe out of Well Fed (I used ground pork rather than lamb), while it fell apart and I didn't have enough cauliflower for the topping - it tasted very good - so much that I ate more than I should have...I will make this again.

Crankin
02-24-2013, 03:19 PM
The same thing happened to me when I made the Shepard's Pie. I'll try again, too.
I am exhausted from 2 hours of Well Fed cooking. I love to cook, but, I didn't plan well. I had planned to make the spinach-meat muffins this morning, but I didn't. Got home from a short snow shoe, showered and started at 4:15. I had planned to make the Pad Thai for dinner, too. I hadn't cooked the chicken thighs (obviously no grilling), and even though they only take 25 minutes to cook in the oven, the muffins took 40, and I had to prep the Sunshine sauce, and eggs, veggies.
It better taste good. Going to put it together now.

Catrin
02-24-2013, 03:27 PM
I love the Sunshine sauce, and did enjoy the Pad Thai when I made it. This kind of cooking is teaching me how to be more thoughtful about my shopping and how better to organize my cooking time/kitchen. I certainly do enjoy having the fruits of my labors throughout the week :)

Crankin
02-24-2013, 04:14 PM
I have no issue with the shopping, as I always have planned the meals and make my list accordingly. The Pad Thai was delicious! Since I am allergic to peanuts, this was a great sub for me. However, I did use my soy nut butter instead of sunflower butter, as the only sunflower butter in my regular grocery store had sugar and other gross stuff in it. I will probably sub almond butter I get at the natural foods store next time, as well as have pre-cooked chicken.

B: DH made me a breakfast sandwich on Ezekial bread, with 2 poached eggs and chicken sausage, as well as a bowl of blueberries and orange slices. I've had a good eating week, so I am not guilty about the Ezekial bread, as it's better than the white flour waffles he usually makes! But, I had too much coffee.
L: We went to do a couple of errands in the snow storm, and then went to a restaurant for a late lunch. I had a cup of chicken-veggie soup (good, but too salty), and a very plain salad with arugula, grilled chicken, roasted red pepper, and a little sprinkle of walnuts, with vinaigrette.
S: nuts and cranberries, with chocolate bits
Did a 3.5 mile snow shoe in the heavy, wet snow. I didn't bring my poles and it was very tough going up the ridge to my street. I'm tired!
D: Paleo Pad Thai with spaghetti squash noodles, chicken thighs, red cabbage (I hate snap peas), sauce as noted above, and a sprinkle of almonds and cilantro.

Ugh. Feel better, Catrin!

(and do you have a recipe for the salmon chowder?)

This is the recipe (http://mypaleocrockpot.blogspot.com/2012/12/salmon-chowder.html) that I loosely followed as a guide. I used sweet potatoes rather than white potatoes (I don't do nightshades) and was my first attempt at anything like a "fish soup". It came out rather tasty! I cut the broth in half, only 2 slices of fresh side rather than a full pound of bacon, and a couple of other changes since I didn't want to make a large amount of it. I did use a full can of salmon.

That's a lot of bacon! I think I'll be cutting that down a bit...

Think I can use milk or something higher-fat (but still dairy) in place of the coconut milk? I might fuse this with a second salmon chowder recipe (both halved, because I don't want to be eating this forever), and perhaps add some kale. I think I have everything except the bay leaf and cream, and I need to go to the grocery store anyway (nearly out of garlic!).

I had a bowl of butternut squash soup, and DH and I shared a "pizzeta," which was a mini pizza, with tomatoes, artichoke hearts, proscuitto. I had 2, 4 inch pieces.

D: friends came over for dinner. As usual, the skiing made me ravenous, so I probably ate too many appetizers, some Machengo cheese, yellow pepper, and hummus. Had one chicken thigh with a spicy rub, roasted asparagus, sweet potato, and a green salad with vinaigrette, 2 glasses of red wine. Had a very small amount of chocolate and chocolate chip gelato.
