Crankin - congratulations on being able to snow shoe! My body is asking for something different to do...but with the weather we've been having all I can do is to ride outside/inside, or go hiking...I can't run and I won't learn how to swim (and my new gym doesn't have a pool anyway, but that isn't a problem).

It was nice to do something different, albeit, right in my own neighborhood!
We are going cross country skiing today (about an hour away in southern NH), and who knows when we'll be doing that again, as tomorrow and the next few days will be almost 50 degrees and rainy. Hoping the rain will not reach north of here, so we will still have the possibility of going further north or west next Saturday and ski.
I know this is the food thread, but I can't seem to separate my exercise from eating. I had my first piece of bread this morning, in 2 weeks, in preparation for some good climbing today.

I can't separate the two either, one informs the other...
I did make chicken salad for dinner last night as I speculated and put the chicken salad over salad greens (no other dressing required), finished off the half of the apple that didn't get chopped into the chicken salad, and two small glasses of beer.
The Machengo cheese is fine, but a bit mild for my taste. Currently trying a Wisconsin sharp white cheddar from Trader Joe's, and also picked up some good smoked Gouda (which I love). I will try another imported cheese once I've gone through these.

Half a roast beef sandwich from Panera (beef, cheese, lettuce, red onion, tomato, horseradish sauce), and a cup of broccoli-cheddar soup, Dr. Pepper
Cheese (Cotswold, and Red Dragon) on whole wheat toast, water.
I keep forgetting that calories (or a deficit thereof) carry over to the next day. It seems like dinner on Friday night wasn't adequate (not enough protein, I guess?) I went to the mall and my head was spinning by the time I left, even though I ate breakfast.
Today:
Bowl of cereal, tea with sugar and half and half
30 minutes on the trainer
Tortilla chips and salsa, the entirety of a chocolate bar (one of the thin flat ones, so probably not as bad as it could have been!)

I have no idea what's up with my body today. I actually ate dinner last night. I ate breakfast. I ate lunch. I had a snack. I was starving by the time I got home. I had another snack. It took me another two hours to get dinner ready. I'd think it was lack of sleep, if I didn't already know that lack of sleep has the opposite effect...

While I consider myself "in training", I am working with my personal trainer/coach to drop 15 lbs before summer time. Racing is incidental and is not what I'm really training for. I'm training to ride across the country. All
of my rides in the last two months have low intensity. I've also been weight training so I've been gaining serious muscle mass and losing fat. Clearly something is going right. Once I am closer to my weight goal and amp up miles and aerobic levels, naturally I will eat a commensurate amount of calories.

Yeah I was eyeballing the big carton of egg whites wondering if it was a better value than a tray of 18 large eggs. There was no estimating in that fashion. Still, I have a place for the yolks. Once I'm doing making my egg whites, I just dump the yolks in the pan while it's still hot and they cook on the residual heat. Then chicken treat time!
Although sometimes my dog gets one as a treat :)

I buy the big carton of egg whites. I started out just dumping the yokes a few years ago, but since I buy organic eggs now, that's way too wasteful and expensive. We manage to still go through quite a few eggs a week, even with me using the whites from a carton. Sometimes I mix the whites with regular eggs, sometimes I just eat regular eggs. But, since this is the only way I can up my protein at breakfast (I'm allergic to whey), it works.

For me, this is the best way to increase my protein to the levels I've been told I need with the least number of additional calories. I am supposed to have high levels of protein and low fat...
I have been, however, mixing things up a bit by adding a few more good whole fats (small amounts of good cheese, almonds, etc.) and pulling back a bit on carbs. I am feeling pretty good, and while I am not currently losing weight I am not gaining any...
A couple of times a week instead of having 3 egg whites at breakfast, I will have 2 egg whites and 1 whole egg - yummy!

Yummy, where did you get the sweet potato Gnocchi? That sounds so good. Did you make it from scratch?
I made it from scratch with quinoa flour. DEFINITELY overestimated how man potatoes I would need and was too lazy/hungry to dry the sweet potato fully in the oven after I scooped it so I had to add a LOT of flour to make them into a moldable rollable dough. So now I have enough sweet potato gnocchi for weeks to come! (I froze the ones I didn't eat). Then I just chopped the ends off the bacon, fried em up in a saute pan, turned off the heat and added chopped swiss chard and then tossed in the gnocchi after the chard was kind of par cooked. Realllly delicious.

I'm not interested in posting what I eat every day here, because I log it all on Livestrong on my iphone. But I did want to pop in and say that since March 1 I have eliminated all refined sugar and bread, pasta, cereal, rice, and potatoes in an effort to reduce my chronically and mostly genetically high cholesterol in three months on doctor's orders. I am not overweight, but if I lose a few pounds, so much the better for climbing!
The first five days were agonizing, as I was totally addicted to sugar and all that comes with it in more ways than I chose to admit to myself or anyone else. All I could think of was angel food cake, cinnamon toast, and fluffy pancakes drowning in maple syrup! But for the last couple of days I feel great and the cravings are gone. I'm eating lots of veggies and fruits, yogurt, a few nuts (I don't like them), eggs, and either chicken, fish, or beef for dinner. Kale chips have become my staple it seems.
I don't have problems with gluten, nor do I think that grains are necessarily bad. I do miss baking bread, although I have gotten over the need to eat all the time. I need to do this to proactively prevent future problems that might come about from my chronically high-cholesterol. I am eating fats, including half-and-half in my tea, and a bit of cheese, and that's perfectly okay even though it seems counter intuitive. Cutting out the sugar automatically eliminates things like ice cream and cakes anyways. I don't have to focus on reducing fats because eliminating the sugar and potatoes takes care of most of that. There are many fats that are good, and I eat them as much as I want. Avocados and olive oil come to mind.
From what little I've read, I guess this is what paleo is all about, but I'm just focused on removing the sugar and white grains. Whatever, if it works I'll be happy no matter the labels. So far, I'm finding delicious things to cook and eat.
Anyways, just wanted to chime in. When I get my blood tested in a few months, I'll let you know if eating like this helps lower my cholesterol. If it doesn't, I'll likely have to go on meds, and I'd really like to avoid that.

Tulip, your results will be interesting. Dietary change didn't help my DH, who went on meds, and that was still too late to avoid getting 2 stents for 80% blockages. Even cycling 4,000 miles a year with the cholesterol meds didn't stop the plaque. Genetics suck. I hope you succeed.

Catrin, if you're used to eating a certain way, it's hard to change your habits--this goes for eating too little as well as eating too much! For the last couple months, I haven't been eating enough to fuel workouts. Now that I'm actually riding again, I end up draining my fuel reserves and then going overboard when dinner rolls around, which isn't good for me or my wallet because there's a good chance that I'm too lazy/tired to make dinner, so I head to Chipotle...to the point that I've gained a few pounds this month, though I can put some of that down to stress and slightly too much beer. Somehow I still haven't learned to back off while riding. But the speed is fun!

Indeed Owlie, that is true...and that includes changing my food budget  Well, this is rather important - and they convinced me that I won't lose my remaining extra body fat until my body has enough intake on all days. I understand the science but it still seems odd that I need to eat more in order to change my body composition. At this point I don't really care about losing - but upping my lean muscle mass. Thankfully my actual diet is fine from what they tell me.
I like Chipotle, but yeah, it is easy to over-do it there and it isn't all that inexpensive...

Interestingly enough, I finished the day with roughly the percentages of carbs/protien/fats that my nutritionist wants me to have. You have to fuel your body for your activity level, and as Crankin said, you exercise at a much more intensive level than most of us here do. Ya need food for that :)
This thread really helps me, especially when we've women posting with a wide variety of activity levels. I've gotten food ideas from here. I post because it helps provide me a bit of accountability and while I don't post daily (I track everything I eat with Lose It on my phone), it does help.
Lose It! is a fine phone application, the phone application keeps track of my nutritional proportions along with caloric intake and allows custom foods/recipes. The associated website provides me with reports of different kinds and even shows me what my favorite foods are - in case there was any doubt. I've used this since I started all of this 2.5 years ago and it is very helpful.

Heavy weights workout yesterday with a caloric goal of 2,000 calories (real, not net). Didn't quite make it but I got closer than I have since I started working to increase my intake while working with the tweaked nutritional splits the nutritionist advised:

120 minute weights workout (this includes warming up and extensive stretching afterwards so the actual workout was closer to 90 minutes
L: Luna Chocolate protein bar (had to run errands and no chance for a real lunch)
S: ANOTHER Luna bar regular, not protien (still on errands and got HUNGRY)
D: Fresh seared Tuna steak, Bok Choy, 1/2 cup brown rice, homemade veggie soup, small lettuce salad with a bit of raspberry vinaigrette dressing. Skim milk.
S: friend came over and brought a lovely largish homemade chocolate chip/coconut cookie. I actually wanted a beer but didn't want both. It was worth it, delicious!
Goal of 2,000 calories for a workout day, actually consumed 1800, I am getting there. My weight this morning is back down to what it was before I started tweaking my diet. I think I would have made my goal if I had eaten real food for lunch. Perhaps...my normal lunch has the same calories as that Luna protein bar.

Me too. I never post in this thread because I eat about three times more than the people who post here.
That is why I don't post here...I eat more, eat out more and I drink more! No wonder I am stuck at this weight!

Oh but I always think it's interesting! Everyone here has different metabolic requirements based on age, size, and activity level. Also various unique health problems. I started the thread just because I'm curious how others eat within the cycling community. I figured I'm getting just a tiny cross section though. By the same token, I tend not to post here when I'm not trying to accomplish something in training or with fat loss. It just helps to write this stuff down somewhere for me.
Yesterday was weird because my body just wasn't that hungry.
3 eggs with parmesan for a late breakfast
half a bag of buttered movie theater popcorn
16 mile bike ride
1 oz cheese
beef shawarma on basmati rice with pickled beets
I guess I just wasn't that hungry. Today my brother and sister and their SOs are coming down to my mom's for dinner so I am putting on my chef hat.
I'm making pork butt braised with apples and herbs (optional bbq sauce and rolls), warm german potato salad, carrot and purple cabbage slaw, deviled eggs for starters (mmm).
I'm trying to find a sexy new deviled egg recipe. Maybe something with craime fraiche and herbs? If anyone has any ideas I am all ears!

I made an interesting variation a couple of years back that used canned crab, it was pretty good! The problem, however, is if someone bites into it expecting more traditional stuffed eggs they get quite the surprise! Your idea sounds good and probably safer :)

I can't help with the deviled eggs, but shawarma...drool. Anyway.
Yesterday:
Cereal with 1% milk
Small white chocolate mocha
the equivalent of 2.5 glasses of wine, small amounts of salad, jambalaya, California roll, vegetarian paella (good, actually, but I think it needed that flavor from that comes from browned meat bits), chocolate truffles and peanut brittle. Yes, I was a little tipsy by the end.
12 oz frozen yogurt (non-fat strawberry/low-fat cheesecake swirl, with strawberries on top, then a layer of low-fat coconut with shredded coconut on top. I have a coconut problem.)
Today:
Big bowl of cereal with 1%
Tea (with 1% milk and sugar), 2 chocolate cookies.
Chickpea and cauliflower "curry" (really, they're just in a spicy tomato sauce...), brown rice, salad (1/2 arugula, 1/2 spring mix, with sliced radishes and Caesar dressing--it was what I had in the fridge.)

Rest day today, so a target of 1600-1800 calories. I made it, barely, but I did make it :)
B: 1 egg white + 1 whole egg, 1 cup steel cut oats with fresh blueberries + 6 almonds, skim milk and coffee. 1 small chunk of low-fat Celtic white cheddar
S: small banana with 1 tsp PB
L: Leftover seared tuna steak sandwich with sprouted wheat bread, a little more white cheddar, steamed bok choy
S: 8 almonds + a few raisins
D: roasted skinless chicken breast, brown rice, steamed/sauteed kale, bok choy, and onion. 1 Bad Elmer's Porter
S: small apple with 1 tsp PB

B: omelette with 2 turkey-sage breakfast sausages, goat cheese, marinara
L: 1/4 lb. of chicken salad with red grapes and almonds from the Concord Cheese Shop. This place has the best salads around. This was during the lunch break at the club bike workshop we were presenting at... some of the other presenters grilled us about why we weren't eating the crappy sandwiches they provided for us.
S: packet of nuts and cranberries, one piece of Iberico cheese
D: OK, went to the North End, had a stressful drive and time finding space in the parking garage, so we did have a nice walk to the restaurant.
DH and I shared parts of the 3 course Restaurant Week menu. Shared an eggplant/mozzarella melanzzine and a delicious blood orange salad. Perfect portion sizes. I ordered farfalle with spring veggies for my main course. It was delicious, and it was easy to only eat half, since there was cream sauce involved. I actually found myself scraping the sauce off.
Had about 2 glasses of red wine and we split the most delicious piece of flourless chocolate cake.

Rode today so had a target of 2000 calories, didn't meet it but didn't do too badly:
B: 2 egg whites, 1 cup steel cut oats with fresh blueberries + a bit of PB, skim milk and coffee
L: Cliff bar + 2 small cups of coffee at church. Then I went to a baby shower at a hospital (she is on total bed rest at the hospital until she gives birth/they induce) - had a strawberry, 3 Townhouse crackers with a bit of cheese and two tiny roast beef roll-ups with cream cheese
Pre-ride snack: banana/pb sammy on one slice sprouted wheat bread
1 hour pretty hard ride :)
D: roasted skinless chicken breast, 1/2 cup brown rice, roasted kale, sauteed bok choy and mushrooms in olive oil, 6 almonds and a few raisins, 1 beer (pretty shocking how many calories were in this meal  I needed them but still!
Just a little over 1,800 calories consumed, just a tad bit more fat than I needed but other than that I won't complain. Hard to really calculate the calories from what little I had at the shower, so I may be closer to my goal than I know.

I love bok choy but need to get better at cooking it. I've never been good at stir-frying, which is strange because it should be easy.
I saw watercress in Chinatown today and wondered what to do with it. Do you cook it?

Heh, I hate bok choy. Never tried watercress, though. What do you do with it?
Brunch: Tea with half-and-half and sugar, bowl of cereal with 1%
S: 1 chocolate chip oatmeal cookie (with walnuts)...fresh out of the oven. Mmmm.
D: Flank steak (Beef, how I've missed you!) and udon noodles with a soy sauce-based dipping sauce, daikon radish slices, salad. Holy carbohydrate overload, Batman!, but so good. Also, I have leftovers, so I can ride and eat them for lunch...that would be a useful application of carbs!

I just sautee bok choy in a bit of olive oil (or olive oil spray) and often include minced garlic and mushrooms. It is great raw as well - I love that you can eat the entire thing, no waste of leaves or stalks. It is great raw as well, and I was surprised to find out that it is quite good for you. It isn't the crunchy water that celery is.

Watercress is awesome! I've been told that in Europe when you order salad that often what you get is watercress rather than what we would consider more traditional lettuce. I don't know about that, perhaps one of our European members could confirm this? It is great raw in salad or sandwiches, it is great sauteed with shallots or green onions with a bit of olive oil.
Not all stores carry it, but I've had no problem finding it. Some say it is peppery - I don't find the flavor strong enough to call it that, but it is pretty tasty. Quite nutritious as well, and inexpensive.

Watercress is definitely punchy, kind of like radishes. I like putting it in my cold avocado soup.
