The Machengo is the real deal, it's imported from Spain, which is where I was introduced to it.

today:
matzah brei (fried matzah). Yes, it's not Passover, but since we didn't have the right bread for French toast, it's a good sub. I put walnuts and cranberries in mine, with a little powdered sugar. banana, grapes, and coffee

went on a 48.8 mile ride. During the ride I drank about 2 and 3/4 bottles of Nuun/water and another half a bottle of plain water. Had a chicken and provolone sandwich on a whole wheat roll with mustard for lunch, with a Luna Bar. With about 12 miles left, I ate 2 shot blocks at a point in this ride I always feel dragging on.

post ride snack of a few ww pita chips and hummus. I was craving salt. Iced coffee

paninni on ww ciabatta, with a little pancetta, sun dried tomatoes, basil, goat cheese, olive oil and cole slaw. 2 pieces of chocolate

Trader Joe's, you say? Hmmm...(now I'm going to have to find a source of good ham...)

Bowl of cereal with 1%, OJ
5 shot blocks and water on a very sticky 22-mile ride
Frappucino, chips
2 slices French bread with jalapeno hummus, a nectarine
2 granola bars
Half a salmon fillet, broccoli, roasted potatoes
maybe ice cream and cherries...?

Me too!
I had to stop drinking even decaf after dinner with dessert. Once in awhile I get a feeling that I can drink coffee at dinner and be fine and it usually happens. It's weird. Yesterday I had a big iced coffee when i got home from a ride, at 5 PM and I was up all night.

veggie burger on ww English Muffin and 3 potato pirogies = 500
grilled zucchini on ciabatta roll with fresh mozzarella = 475
avocado oil potato chips = 320

a Greek yogurt = 120
Oh, and I ate some raspberries off the bush, and a piece of candy but those don't count. I don't count coffee, either. It's just a little milk.

This is a very typical day for me, and I don't think I'm a pig (and I'm sure you're not a pig!). I must have a hollow leg. ;)

I admit, I did ride. I probably wouldn't have had as many potato chips if I didn't.

Muirenn, this thread occasionally makes me feel like a pig! I'm pretty sure I'd starve (well, be very cranky) on some of these diets. I have no idea how many calories I'm eating, though.

I average around 1500 calories on non-ride days, and try to net at least 1,200 when I ride. Sometimes that latter is difficult to do. I ate too much yesterday for a non-ride day - hard to say what the total was since I went out for lunch, but it was probably closer to 1700 rather than 1500...

Yesterday was a non-ride day :(

B: steel-cut oats with 5 almonds, dried cranberries, skim milk and coffee

L: I rarely go out to lunch - but went to a Spanish Tappas close to my workplace for lunch - they have a nice buffet with a wide variety of things: just had two saucers of food (can't really call them plates) - a very small amount of spinach salad with about .5 ounce of goat cheese, 2 shrimp, 3-4 marinated mushrooms, roasted cauliflower and some green vegetable (don't know what it was), a couple strips of roasted red pepper and grilled skinless chicken with mushrooms.

S: 1/2 cliff bar. Then my boss bribed me with 1/2 of a chocolate chip cookie from Subway...I could have resisted the full cookie but a half cookie is harder to resist :o Catrin the cookie monster...

D: Roasted chicken breast sandwich with Ezekiel bread, lo-fat Havarti cheese, tomato and low-fat mayo. Yummy :)

S: bran cereal with a little skim milk and a couple of almonds - I crave this sometimes.

Dailyplate counts my calories for me. I average (when I'm eating on track) 1800-2200 calories a day. I try and stay around 1600 on non exercise days which is basically almost never. Even if I don't have a "scheduled" workout, I find myself furiously cleaning house for several hours or playing with the kids.

B: Ezekiel Bread toast 2/ eggs and bacon

It was a crazy day yesterday. I laughed when I realized my lunch was a croissant, 3 clam cakes, and an ear of corn. I kind of picked all day, and now I can't remember everything I ate. I know there was pasta with summer squash for dinner, and throughout the day, lots of amazing cherry tomatoes, half a cantaloupe, bites of pastry, a peach?, cherries, and I think cereal for breakfast. There were slices of baguette, and a cheese sandwich on ww with tomato. It's coming back to me. :D Oh, and sorbet for dessert, I remember eating that, too.

There are so many farm stands popping up this year, people selling corn by the side of the road. I love shopping this way. It's all so fresh and delicious, and I love the surprise of it. The "Oh, corn!" moment when you notice the stand reminds me of an earlier time, not from my life. It seems like it must have been that way before supermarkets.

Red, I know what you mean about this time of year. I loved coming home from my trip yesterday and saying to DH, "go down to the farm and get some.... " so we could have dinner. I sorely miss having the time to ride my little Jamis to all of the farm stands. It reminds me of my childhood, when my mom would "go to Mr. Valenti's" at around 4 PM, to get stuff for dinner. One of my biggest thrills after moving back here was once, when I was driving closer to where I used to live, I saw Mr. Valenti's farm truck on Rt. 128. It must be his grandson by now!

I'm not a big chicken person, but roasted chicken is my favorite dish, if done well. I fell in love with it in Paris, where is it is (mostly) executed so perfectly. DH proposed over the first roast chicken I made him! So now we call it Engagement Chicken. I'll have to look into a Romertopf clap pot. Does the skin get crispy with this method?

Mm... roasted chicken! I still haven't perfected it, but I've come pretty close.
Indy, we used to have a Romertopf, a long time ago. My dad hated it, though I can't remember precisely why. I don't remember that we ever cooked chicken in it, though.

While we're on the topic, which method do you use to cook it? Short times at relatively high temps or a long time with low temps? Foil or no?

Soak Romertopf for 30 minutes in cold water. Put garlic slivers under skin of chicken. Put veggies (I used onions, potatoes, carrots) and herbs (I used whatever is in my garden: thyme, sage, Rosemary, garlic chives) in the soaked Romertopf. Put the chicken in, pour 2 cups of beer (wine would work, too). Cover. Put into COLD oven. Turn oven on to 480F for one hour. After 1 hour, remove cover, baste, put back in oven for 10-15 mins to brown chicken.

While we're on the topic, which method do you use to cook it? Short times at relatively high temps or a long time with low temps? Foil or no?

I've only tried a couple of recipes. My first and favorite so far is Cook's Illustrated's recipe for crispy skin chicken. You basically separate the skin from the meat on the breast side. On the other side, you punch holes through the skin and flesh. From there, you sprinkle a mixture of kosher salt, pepper and baking powder. It's then placed in the fridge for 24 hours. The thought is that the skin dries out prior to roasting so that it crisps up.

You bake it at a fairly high temp for a relative short time, flipping it breast side up halfway through (you use a V rack) and then blast it at an even hotter temp for 15 minutes or so until it's golden brown.

Assuming you've used a good chicken (organic preferably), the results are delish. My quibble with this method is that it takes advanced planning and makes my kitchen so hot that I'm sort of over it by the time it's done. I only make it in fall/winter.

My other favorite chicken dish is coq au vin. It's time intensive but the results are so yummy. I make it for New Years as a special treat.

Ah, Spokewrench, I went on my honeymoon in Oak Creek canyon. It was Dec., we rented a cabin, and it was such a long time ago, there was NOTHING to do in Sedona for entertainment. We decided to drive to Flag to see a movie, got caught in a snowstorm and our rear wheel drive car ended up in the center median of I-17. We went home early!

Today:
B: non fat Greek yogurt, blueberries, dried cranberries, almonds, 2 slices of turkey bacon, coffee
S: nuts and cranberries
L: salad with lettuce, tomatoes, ham, chicken, cheddar, balsamic vinegar, an apple
S: Luna bar
D: spicy Mexican style soup with chicken, chilis, tomato, baked tortilla strips with chipolte powder, avocado, 2 squares chocolate

I don't usually participate in this thread, but the roasted chicken talk caught my attention. I use a super simple Thomas Keller recipe that I found on Epicurious a while back...high heat, little adulteration, perfect yummy chicken every time. I probably do one of these a week when cooler weather sets in. The "recipe" (if you can really call it that) can be found at http://www.epicurious.com/recipes/food/views/My-Favorite-Simple-Roast-Chicken-231348

And in the spirit of the thread, I actually do track my food. I take pictures of my food every time I eat and post it to a blog that no one but me ever looks at. I mostly use it to remind myself of what time it was when I last ate something.

Yea, well, I wasn't from out of state then, just from Tempe. My DH was bragging how he learned to drive in the snow in PA, but I am pretty sure he had snow tires or chains there! And the way AZ handles snow is different than in the east; here the roads are plowed and down to the black top in minutes (hours). It seems like in AZ they minimally plow the main roads and just close the other ones! I am sure that may have changed since the last time I was in in Flagstaff, in a blizzard in Feb. 1990.

I've been having a hard time with food lately. My appetite has been tremendous since I upped my exercise. Plus, I have been traveling and there are many temptations on the road. Yesterday I started fine with some no oil added granola, blueberries, raspberries, and a third of a banana, with milk for breakfast (400 calories worth). Then I had a ride and afterwords an ounce of cheese and two dates (150 calories). Now I am already up to 550 with a daily limit of 1200. Then I really blew it, I had a homemade bar made by a neighbor. It had to be 400 calories. Now I am up to 950 and it is barely noon and I only have 250 left. I struggled and had some salmon pasta salad with lots of cilantro, totaling about 300 calories to finish out the day barely over my limit. But what I ate was terrible, I can't afford a 400 calorie bar and still get good nutrition. :( And no vegetables to speak of!

Today I started out with an egg and Canadian bacon, plus two carrots, totaling 200 calories. I hope the dose of protein helps keep my appetite in check. And today I eat some veggies!

Have you upped your calorie intake to reflect the increase in activity? I'm not sure whether your 1200 calorie restriction is for non-exercise day. Because if you're exercising and only eating 1200 calories, it's no wonder that you're hungry.

Yeah, I do up it on days where there is a lot of exercise and now am generally averaging 1250 to 1300 a day over a week period if I am exercising a lot, rather than the 1100 to 1200 I started with back in January. This takes me down a pound a week roughly. When I am traveling I try to keep it at 1200 per day because I get very little exercise when I am on the road. If I am sedentary I will not lose near to a pound a week on 1200 calories as my basal metabolic rate is not even 1200. I need at least some exercise. I had a week where I did 1500 average per day (mostly due to two big days) and I gained .8 pounds, my first gain of my weight loss journey. But that amount is really statistically insignificant and could just be the usual ups and downs a person has based on hydration, etc. But it is hard to balance weight loss and exercise needs. Given how small I am (4'11") even with exercise my calorie needs are not large.

Crankin

Goldfinch, I am also small, though not as small as you. I found that it's virtually impossible to maintain my normal weight, exercise, and have enough energy on the amount of calories you are consuming. So, while I am not trying to lose now, I have been there, and I can say that losing a pound a week is just too tough for people who are small.
One of the things that works for me, is to periodically "mix up" or trick my body by changing how I eat. Like, do dinner for breakfast, concentrate on more protein, etc. I also have to trick my body with different kinds of exercise. That might mean nothing more than hiking a couple of days a week, or brisk walking, yoga with some brief cardio warm up, and weights/core work. Your body is a very efficient machine and is going to learn to survive on 1100 calories a day. Perhaps you should see a nutritionist. I know that at my activity level, I need to eat at least 2,000 calories a day, even though in theory, it looks like I should be able to survive on 1200. On high activity days, I probably eat more than that. My weight is stable within 3-4 lbs., but it took upping the protein and watching carbs on days I am less active.

Heh - I was about ready to freak out on you about not eating enough until you said the above. I know a number of small women who really struggle to keep a deficit when trying to lose. Yeah a 400 calorie bar will definitely destroy your totals...but really, I probably would have just eaten as normal for the rest of the day and let that be a 'surplus' day instead. Don't make yourself miserable to make the numbers! It won't leave you with enough energy to function and certainly not to exercise...and then your burn suffers and it's a vicious cycle!

How long have you been in a deficit? I ask because if it's been a long time, it may be time for a maintenance period and a bit of a 'refeed'. You may be able to reset your metabolism at a higher level if you give yourself a month or so of eating at maintenance or slightly above. You won't lose and you may gain a small amount, but then when you start cutting back again, you'll likely be able to lose more while eating more than you are now. :)

You won't lose and you may gain a small amount, but then when you start cutting back again, you'll likely be able to lose more while eating more than you are now. :)

I have been running a deficit since the end of December, 2010. I have lost now 38 pounds, which is close to 25% of my starting weight of 158. At not quite 4'11" that put me well within the obese category. I am down to about 120, which is about a pound a week. At first I exercised not at all strenuously, but walking a fair amount. In the spring I really kicked it up when I started to bike.

I know a fair amount about nutrition and have read quite a bit pf the science about diet. I started low carb and worked up to adding carbs. My appetite is less on low carb but as far as a diet I can eat forever, I needed to add more carbs to make me happy. But I minimize rice and flour, I rarely eat bread, and my carbs are mostly from fruit which I truly love. I try to mix it up and in the last month I've allowed myself days where I eat just about anything and close to how much I want. I also vary my calories so that I average 1250-1300 a week. Some days are less. Some are more. Frankly, it is easier for me to be somewhat rigid and stick to an exact count. I vary it though to take into account activity and to try to stay out of starvation mode. Given that my weight loss has been without plateaus it has worked well.

For the most part I am ok with energy. I take walnuts and an apple on long rides. Someone here posted about making bars out of dates and cashews (not exactly low carb!) and I make them once in a while as a 100 calorie energy boost. But it has been hard kicking up the exercise and still doing weight loss. Research shows that exercise really increases the appetite and that people on weight loss diets often overestimate the calories they are burning through exercise and then over eat as a result. I am mindful of that. But being hungry lately has been a struggle.

I have thought though about taking a month off to see how maintenance will go, see if it helps kick up my metabolism by helping me build up some muscle, be less hungry and see if it helps give me even more energy for exercise. A month ago I had the goal of only losing a half a pound a week and upped my calories. This ended up causing some fluxuations, with some weeks more than a pound loss and one week with close to a pound gain. I am only 10 pounds from my goal weight. Actually, my goal is a body fat goal and I am still too high on my rough measures of body fat, just barely within normal and far from being athletic.

I also have added more walking and am doing my core exercises religiously. When I am in one place for while I am thinking of doing the couch to 5K program and some kind of work with weights, which is hard to do when living in a motorhome and traveling about.

The body fat goal will be affected more (positively!) by the weight training than by diet.
It sounds like you are doing pretty much what I do, but on a much more stringent basis. The kickstarting your metabolism is exactly what I did by changing to a lower carb diet and changing my exercise patterns to rely less on just aerobic stuff. But, at this time of year, I mostly just ride and do a little core work. Just protein doesn't help me on rides, although I do eat those little packets of nuts and cranberries from Trader Joe's, sometimes, in place of a Luna Bar. But, on days I do really long or hard rides, my appetite is up a lot (after the ride) and I just eat. I don't eat junk, so it doesn't really affect my weight. I gain the same 1-2 lbs over the weekend and they are gone by Tuesday.
When I was in my thirties, I weighed about 92 pounds as a result of teaching 7 aerobics classes a week and eating really small breakfasts and lunches, on a diet high in complex carbs. That stopped working as I got closer to 40. By the time I was 45 I was 20 pounds overweight. I started cycling at age 47 and tweaking my diet. I've been at about the same weight for ten years, which is pretty much what I weighed in high school (106-107). Since i am almost 58, I am happy, but it takes constant vigilance to keep it in control.

I wish I would have started riding 10 years ago and looking at my diet then! But, it never is too late for healthy habits. :) I figure that constant vigilance will be the rest of my life.

I wholeheartedly disagree, actually. Diet is king for body recomposition. Weight training is key for adding lean mass (or maintaining it), but you cannot add appreciable lean mass in a deficit. You can manage it with a cyclical type intake (days in surplus, days in deficit), but it must be very controlled and it's not for everyone.

Weight training is very, very important for maintaining your lean mass while losing body fat, but the nutrition is the more critical factor for fat loss.

Goldfinch - awesome job with the weight loss so far! Those last 10 are usually the hardest to get off (I've never done it!), so don't give up. It sounds like you have really done your homework. :)

Sorry, GLC, I guess I had my science mixed up. But, I know that weight loss is easier for me when I am doing resistance work. My body fat % rarely changes unless I totally stop moving for a few days! I guess that my whole point is that sometimes we get so caught up in the endurance stuff, we forget the other.
I guess it's a good thing that the 2 times I had to lose weight, and also after my pregnancies, I was able to lose weight my way, because I could not be so caught up in calorie counting, etc. I upped my exercise, cut portions a little, and cut out the carbs. The first time I had to lose weight, after college, I was not exercising, more than a little walking and some calisthenics. It took me a year to lose 25 pounds. Slow and steady. But, that's when I cut out the junk food and started eating right. I just can't deprive myself that much!

But, I know that weight loss is easier for me when I am doing resistance work.

I totally agree! And you are absolutely right - in the midst of endurance training, we often neglect weight training and its so important.

I think for me, the biggest benefit of resistance training (besides making me feel stronger all around) is the whole 'mix it up' factor. If I do all of one thing, loss always stagnates quickly. I need lots of variety in my activities to keep me 1) enjoying it and 2) actively losing. :)

I can't find the cite so my memory may be faulty. . .

I believe that if I ingest at least my basal metabolic rate worth of calories I am unlikely to lose muscle when dieting. I recall a study comparing dieters that were and were not exercising and also comparing the type of exercise, aerobic or aerobic plus resistance training. All lost fat not muscle. But the reason likely was that the diet did not severely restrict calories.

But I agree with you folks, mixing it up on the exercise front is good. For motivation and for health.

Congrats. goldfinch. Just keep on cycling/engaging in physical activity that you love so that your body become addicted and wants it often each week. Endomorphins induced by exercise are real motivators for weight maintenance.

I doubt I'm a great example. Today:

B
cornflakes with fresh blackberries and skim milk, tea with skim milk
Snack: coffee with milk, some cherries and 2 golden plums

L
roasted sliced duck with brie cheese, lettuce and tomato focaccia bread
Green tea panna cotta
coffee with milk

Supper
yogurt with fresh raspberries and blackberries
tea with skim milk

I went to a worker's retirement luncheon. Under such circumstances, supper is kept small. Right now it's 85 degrees F. Just came back from cycling 30 lbs. of groceries.

I nearly lost my box of cornflakes and toilet tissue at peak afterwork hrs. on the road.

Goldfinch, I've eased off bread alot in past 8 months. And am living in a city that has longer, colder and icier/snowier winters. So am cycling less overall. I think this latest diet change helped me. I naturally fell into it gradually over time without really thinking much about: I kept on forgetting to buy bread. :p

I've been back from my sailing adventure for a while, but on the boat we all pretty much feasted upon carbs. Fresh foods were hard to come by in the tiny island communities and pasta was oohhhh so addictive when it's wet and cold outside. :D

Since I've gotten home I've been cooking up a storm and James and I have been working on building up our spicy tolerance! He already started a spicy challenge at a Thai restaurant.

That said, I made green curry with rice for lunch. I sauteed chinese eggplant, green pepper, onion, bamboo shoots and pressed tofu and then added the green curry paste, coconut milk, palm sugar, and fish sauce. It was pretty good, although light coconut milk has a less than desirable consistency I think.

Dinner? Carne asada tacos with fresh squeezed lime on soft corn tortillas w/ habañero sauce! Yummo.

On the morning news they reported that research has shown what moderate alcohol consumption (1 drink a day for women, 2 for men) has been shown to reduce the chance of Alzheimers, and a bit of daily chocolate (of any kind) is apparently good for other things.

I forget which one of us generally has a bit of dark chocolate most evenings, but she is ahead of the trend ;)

I don't know about drinking every day, that is just too many empty calories, but the news makes me feel better about my single beer on Friday, Saturday and Sunday evenings. Shades of my Baptist childhood where ANY drinking was a thing-of-the-devil...

half a Luna Bar so I wouldn't starve. Got to my office at 2:00, but was afraid my chicken salad from above Idylwidle farms was going bad, despite being in a baggie with a cool pack. I ate a few bites and finished the Luna Bar and dumped the salad. I had a pack of nuts and cranberries at 4 PM

I've been away the past 2.5 days and my diet included such things as a scallop roll, fries, and ice cream from Sundae School (those of you who go to Cape Cod will know this place). I did ride, but quite moderately for me.
I have been eating a lot, as my weight has been down. At the end of last week it's stabilized at my "regular" weight, but that means I have to be more vigilant so it doesn't go up. The next week will be tough. Crazy busy with work on Mon-Tues., sort of normal on Wed. and then Thursday afternoon-Saturday I am going for a 2.5 day review class for my licensing exam. It's in SE MA, I am staying down there. Food is all on your own. I doubt I'll get any exercise on Friday, and not sure about Sat., since I don't get home until 6 PM. The class is at a state university, so I hope, at least for lunch, there will be some OK choices. Dinner was whatever I could grab but can't really remember outside of an actual cheeseburger (first one of those in about a year)...several beers with friends.

I also got in 3 hours mountain biking in two days + some hiking. A little over 1 hour of of the riding was pretty hard/intense (for me). A few shot blocks and another couple bananas were consumed.

I must ask...what is "clean" eating? Is this basically no processed foods? I've read so many different descriptions on this on the internet that I've become a little confused. I've started to fall back into my old bread addiction, so while I am addressing that I am looking at other ways to eat healthier...probably by simply adding more fresh/frozen veggies.

Crankin
09-14-2011, 04:54 PM
Not for me, although I don't really eat any processed stuff. I just meant less restaurants this week and next, not so much wine or beer.
I've just had a lot of social stuff. It seems like my life revolves around riding and eating! DH is in Asia for almost 2 weeks, so I can concentrate on eating less, although tomorrow I am going to a 2.5 day class and am staying in a hotel, since it's about 60 miles from here and I don't want to drive back and forth. This will involve some Marriott bistro meals and probably lunch from the university cafeteria, which should be fine, since there will always be a salad bar. But, it will involve a lot of sitting. I can ride tomorrow in the AM, but will have to use the fitness center and pool at the hotel.

I've been wondering this for some time, it's been obvious to me that the term is used in different ways and was curious how women on this forum use it. It is helpful!

I hardly ever eat at restaurants, the rare times I do it is a treat. I think the only times I've done so this year has been with certain TE women

1 cup whole wheat pastry flour (bob's red mill or something like that)
1/2 tsp salt

I am terrible at rolling sushi, but my partner and I figured out a good solution. Last night we had poached trout sushi 'rolls' in the easiest way possible. Wrote a blog entry detailing how we do it:

L: Salmon, roasted potatoes, cabbage, carrots

D: Half a Boboli crust pizza (tomato sauce, cheese, one spicy Italian sausage, half a bell pepper, a clove of garlic and a fifth of an onion over the entire pizza). Leftover Brussels sprouts from last week.

Oh god, Philadelphia rolls were my downfall when I waited at a sushi place in college. Evil evil evil!

I've been using the sushi method to get in my servings of oily fish. It's a shame how hard it is to find fresh mackerel around here though :( I guess that serves me right living in the heartland. The bowl helps limit the amount of rice I have... 1 cup cooked max!

Yesterday:
Cereal, w/ 1%
2 slices ww toast with Red Dragon cheese, and turkey on one slice and roast beef on the other. The turkey tasted better--you could taste the cheese.
Dijon chicken (1/2 of a breast half--this looks like it was one freaky bird!), cider-glazed roasted root veggies (though it turned into me pouring hot apple cider with nutmeg over them...and I drank the rest of the cider!), brussels sprouts with a bit of garlic and bacon.
B&J's mint chocolate cookie ice cream.

Today:
It was going to be pumpkin bread with cream cheese, but I discovered that that part of the PB wasn't cooked all the way through. So it turned into PB crusts with cream cheese. :( Tea with milk and sugar.
Frappucino while studying, three mini scones.
I was so hungry by around four that I couldn't concentrate, and I got a chicken burrito bowl from a place near campus. It was edible...and that's all I can say for it. (Chipotle is better!)
Late dinner...roast beef on ww bread with a bit of cheese.
