Carnitas from Well Fed?

GLC1968
03-13-2013, 10:29 AM
No, actually. I bought prepared carnitas from Costco. The ingredient list was OK, so I figured they would be good to have in the freezer for emergencies. I probably wouldn't have eaten them on a Whole30 had I planned ahead, but they were already defrosted when I started this round, so I didn't want to waste them. They are good...but not Well Fed good.

GLC did you make the coconut flour tortillas? I have been shy about trying!

GLC1968
03-14-2013, 09:43 AM
I did. They are from Paleo Comfort foods. They are extremely simple to make, but time consuming to cook. You need a good, new-ish nonstick pan or they are very frustrating. I usually do it with two pans at once to speed up the process.

Though, I think next time, I'll try using my best cast iron skillet.

The recipe makes a ton, so I halved it this time and it was perfect for just me (it made 7 - 8 small tortillas).

Actually, I just found this online: (same recipe)

I don't have the cookbook....and I don't have a non-stick pan! I know, that is almost sacrilege, but I prefer stainless steel. Now that I think about it, I've a tiny non-stick skillet I use when I go camping for the camp-stove. It doesn't get used much so it should be fine. I will try that recipe Saturday :) Our Funday workout this week is on Saturday and he has already warned us that it is going to be "conditioning" day - he doesn't often give us such warnings so I can likely afford the treat for dinner :)

I've been resisting getting another cookbook, what do you think of that one? Is it significantly different from the recipes offered in Well Fed and Practical Paleo? I also have the Caveman e-cookbook, I find I don't care for those recipes as much.

I like Paleo Comfort Foods. I think it's my second favorite after Well Fed and slightly ahead of Everyday Paleo (because the photography is way better). I was actually expecting not to really use it all that much because most 'comfort foods' just don't appeal to me. BUT, the book has tons of recipes for basics like ketchup, tortillas, nut based pie crusts, etc. Every thing I've made from the cookbook has been excellent. There is a paleo chili that uses two different cuts of beef that is really wonderful. And a sweet potato pie that I took to work for the holidays and all the non-paleo people raved about! There is also a delicious spiced nuts recipe that was a big hit at our last party, too.

I think the assortment of recipes is similar to Make it Paleo and the photography is of the same excellent quality, but I've never had a dud from Paleo Comfort foods and I've had two of them from Make it Paleo (where the recipe failed...not that we just didn't like it).

I don't have Practical Paleo though, so I can't compare it to that one. (yet) Oh, and I haven't made anything from the Cavemen e-cookbook either - nothing inspired me!

When we got back to our hotel last night, there was a coupon for a free brunch at the very nice restaurant at the Lenox Hotel.
Ate about 1/4 of a Luna Bar
I worked out for 30 minutes on the elliptical (intervals) and did a few sets of bicep, triceps, and flys at the hotel fitness center

we walked quite a bit around the Museum of Fine Arts, got home around 1:30.
L: 4 slices of chicken breast rolled up, piece of cheddar, half a spelt roll dipped in olive oil, blueberries
D: grilled chicken breast with tomatillo-green chili salsa, side of refried black beans, salad with lettuce, oranges, walnuts, sprinkle of goat cheese, grapefruit vinegar and oil, 2 squares dark chocolate, glass of red wine

Today (and my Whole 30 is officially over)

B: Paleo "French Toast" (thinly sliced sweet potatoes rather than bread), bacon, coffee
1 hour very creative and challenging group workout!
L: big salad with flank steak
S: Mocha - probably the BEST mocha I've ever had in my life with great coffee, pure cacao and no added sugar!
D: Rogan Josh (beef rather than lamb) - (out of Well Fed), VERY good - spices rocked though I used too much liquid. I put it over baked spaghetti squash and also had a small salad. A Founders Breakfast Stout (lovely chocolate stout), and a fresh pineapple spear for dessert.

Homemade Rogan Josh seasoning recipe here (http://www.theclothesmakethegirl.com/2011/05/24/homemade-rogan-josh-seasoning/), and Rogan Josh recipe here (http://www.theclothesmakethegirl.com/2010/07/13/paleo-rogan-josh/). If you like richly layered spices then you should like this.

I looked at the Rogan Josh recipe yesterday, while preparing my shopping list. I am trying to stay away from too much beef/lamb until I get my blood work done for my cholesterol reading.... however, I will make this eventually.
And, I like the fact it has the name Josh, my older son's name. That's why I first tried it in an Indian restaurant.

B: eggs scrambled with spinach, 1 slice bacon
S: banana
L: Rogan Josh from dinner last night, over spaghetti squash and berries for dessert
Easy 40 minutes on the trainer
D: Citrus Carnitas (used too much lemon/lime juice this time - I was experimenting with the recipe, still good though) with sauteed kale
S: Paleo banana 'bread' experiment with a small amount of butter

I was also going to make some Italian Sausage Eggplant Strata (from Well Fed) for the week, but I decided that I had spent enough time cooking for one evening. I will make it tomorrow night if I am not too tired.

Friday night, I didn't have one of the ingredients for the dinner I'd planned, so we went out. I had wild Alaskan salmon topped with asparagus and a pile of roasted root veggies on the side.

Saturday
B: bacon, 'waffles' - egg and sweet potato cooked in a waffle form. I ate mine plain, my H put maple syrup on his. Tea.
L: 1/2 a carnitas salad from Chipotle
D: I have no idea what I ate for dinner. I was making chili, so I had a couple of bites of that to taste it but then I just snacked. I know I ate some guacamole with carrots, but I didn't sit down to a real meal because I just wasn't in the mood.

Sunday
B: bacon, eggs with kale, onions and zucchini, melon, black coffee
L: grass fed beef burger on a bed of mixed greens and tomatoes with guac
D: a couple of blueberry sausages and a couple of clementines before bowling, and then I ate the leftovers of my carnitas salad and a banana afterward.

Monday (today - planned)
B: sausage, kale and onion frittata, canteloupe, black coffee
L: beef stew over acorn squash, mixed green salad, banana
D: carribbean seafood stew, mixed green salad, clementine

I'm going to have to try that rogan josh, except with yogurt (because I have some in the fridge, and since it's northern Indian food, the coconut seems sort of out of place). (I'm half Indian. That means I can be picky about it, right?)

B: Cereal with 1% milk, tea,
S: Chex mix.
D: 2 helpings steak and ale pie (beef, potato, onion), and sugar snap peas with mint and butter. It's a pretty shallow pie--one potato, one onion, 1.3 pounds raw of beef in a 9x13 dish, because that's all I have, so it's about an inch and a half deep and about a quarter of that is the crust. It's starting to look like 1/4 of the pie is a serving.

When I got home last night, I had zero desire to cook or eat, so my H ordered a pizza and I just snacked a bit before my Pilates class. I'll be making the sausage and cabbage 'noodles' tonight since the ground beef is already defrosted.

B: apple cinnamon hot mash, blueberry sausages, hot tea
L: chili on a bed of spinach
S: hard boiled egg and a clementine
D: sausage and cabbage 'noodles', mixed berries

The apple cinnamon hot mash is also called 'Jicama Oatmeal' but it's so far from being oatmeal that I don't like that name at all. It's good though!

S: walnuts
L: frittata with one egg and egg whites, broccoli, half a sweet potato, an orange,
S: nuts, cranberries, chocolate bits

Here is the link to the recipe. (http://civilizedcavemancooking.com/grain-free-goodies/paleo-banana-bread/) I ordinarily just use a "muffin cup" recipe where I mash 1 banana, 1 egg, a bit of almond butter (and sometimes a bit of quality dark chocolate) into a tall coffee cup and microwave for 2 minutes. I do not normally use coconut "flour" for anything, but I had wanted to try it to see what it was like. It doesn't have much coconut flour and almond flour would also work. It makes a nice banana bread loaf that isn't TOO dense and has nice flavor.

The same guy has a "Lara bar" recipe that I want to try at some point.

Here is a recipe (http://balancedbites.com/2012/10/easy-recipe-pumpkin-pancakes-from-practical-paleo.html) for pumpkin pancakes (no "flour" of any kind). You can add a banana to the mix which really turned out well for me. It does increase the number of pancakes - but it is nice. I make this on the occasional weekend morning - especially if I've got something going on where I decide I need a few more carbs than normal for brekkie.

Interesting. I actually have the Civilized Caveman's ebook and haven't made anything from it. And that recipe would never have appealed to me (except that it uses 4 bananas!) but I'll try it based on your recommendation.

That pancake recipe is similar to the waffle recipe I use if you were to sub mashed sweet potato for the pumpkin. I hadn't thought of trying it in pancake form but that's a great idea!

Thanks!

The banana bread recipe would likely be even better with nuts -it just depends how much fat you want in it :) I mixed it in my blender which was fine. Nice and moist, the flavor is decent but I think I might tweak the spices if I make this again. It DOES fill that "dessert bread" kind of place.

I have his e-book as well and so far have only tried one thing out of it. I am finding that I prefer actual books when it comes to cookbooks, I suspect I would have tried more of the recipes by now if it were a physical book. I've printed a few recipes out for later use but haven't made them yet.

I agree. I bought the Mark Bittman vegetarian cookbook for my Kindle and I never use it. I really need to feel and see the pictures.
I printed out the banana bread recipe. I think I will use almond flour/butter because almonds and bananas sound like a good combo to me.
B: 4 oz. almond milk, half a Luna Bar before boot camp. Coffee, egg white frittata with chicken and broccoli, an orange after class
L: salad with lettuce, grape tomatoes, left over chicken legs, red quinoa, an apple
S: right after lunch I ate some dried cranberries and nuts, at 5:00 I ate the other half of the Luna Bar from this morning.
D: DH made a salad Nicoise recipe from the new Cooking Light. I am so full. I could have saved a bit of it; each ingredient alone was not more than I would eat, but together, even the veggies filled me up.

I'd be terrified of getting anything on an electronic device, seeing as how nothing in my kitchen stays clean for more than 15 minutes.
Late B: Cereal, tea with sugar and half-and-half
S: More tea, a handful of walnuts and a cookie.
D: Piece of steak-and-ale pie, sugar snap peas with butter.
S: A few bites of the tabbouleh I made for lunch, an apple. I'll probably have a mug of hot chocolate later.

Edit: Scratch the apple. I'm having a bowl of pineapple chunks with shredded coconut.

Let me know what you think of it! There are a couple of cookbooks I've been considering but I don't need an entire shelf of paleo cookbooks! The funny part is I've avoided cookbooks my entire adult life - preferring just to put things together. While that worked, I am finding that actually using cookbooks encourages me to use different spices and combinations that I wouldn't have considered on my own.

When it was just me, I preferred to make my own way in the kitchen. Now that I cook for me and my husband, I kind of like having someone else's recipe for new things. That way, if it's gross, it's not entirely my fault! ;) Typically, I make a recipe as close to as written as possible the first time and then put my own twist on it for repeats. And I totally agree about the spices. I love trusting that unusual spice combinations in recipes from certain authors I can totally trust to work out even though they seem odd. I've found that with both Melissa Joulwan and with the woman from Everyday Paleo (I can't remember her name).

The Paleo Slow Cooker looks awesome. The writer is Armenian, so there are lots of recipes that really appeal to me (I'm Greek and they share a common palate). And I spent some time reading the back half of Practical Paleo and there are some recipes in there that I'm really excited to try as well. What are your favorites from that one?

Yesterday's evening meal was quite a bit different than I had planned. My parents send my H and I a lobster dinner for two from Legal Seafood for our anniversary. So I ended up eating lobster with drawn butter, roasted veggies and Boston cream pie for desert. 10 year anniversaries only come around once in a lifetime if you are lucky, right? Oy. I did have the foresight to freeze both the crab cakes and the clam chowder that also came with it but there is no denying that I broke my Whole60 for an anniversary desert. And guess what? It was worth every. single. bite. :D

Today I am back on track:

Nothing wrong with the occasional indulgence - no reason to feel guilty & it sounds like you had a great time!

I enjoy trying different things, so the cookbooks really help that. I love Practical Paleo - if my budget allowed it and I actually thought I could go without eggs for a full month I would love to try her autoimmune protocol for a month - but right now that isn't in my budget. Eggs can cause an autoimmune response and my psoriasis is the only thing that hasn't resolved since going Paleo - as THAT is an autoimmune issue I would like to try that protocol at some point.

I've really enjoyed all the recipes I've tried. I really like the seasoned salts - I had never thought about doing that! Other favorite recipes include the balsamic braised short ribs, orange braised beef shanks, sweet potato pancakes, roasted chicken, the lemon & artichoke chicken, just to name a few favorites. I also really like the candied carrots, sauteed red cabbage with onions and apples & the spinach salad with walnuts and artichokes. There are still a good number of recipes I want to try, such as the roasted figs with rosemary. Lots of good recipes to choose from!

Thanks for the inspiration, Catrin. I have a pot of Rogon Josh on the stove right now. I didn't use the same recipe, and I decided to spring for the lamb (cause I love it!). It needs to simmer more, and I'm not going to serve it until tomorrow, but I'm already happy with the results!

:) I've never actually had it at a restaurant, so I don't know if what I made was really like it but I really enjoyed the flavors from the recipe I used.

I tried the Egg Foo Yong recipe out of Well Fed tonight - very nice! Half of it will be for breakfast tomorrow.

Sweet Potato Waffles sound good Crankin! If I had a waffle iron...but what I need more is a potato ricer or some other tool that will allow me to shred sweet potatoes and squash properly for hash. I prefer the shredded rather than diced version.

Yesterday:

B: eggs scrambled with pre-cooked ground pork and coffee
1 hour intense Funday workout
S: macadamia nuts and a few dried cherries
L: mustard glazed roasted chicken thighs, roasted kale and chard, 1 slice paleo banana bread
S: 1 beer (Founders Breakfast Stout)
D: Egg Foo Yong with special sauce - quite good!

Today:
B: Last of the Egg Foo Yong
1 hour group training session - even more intense than yesterday, it finished with my doing a Farmer's Carry with two 50 pound kettlebells for 200 meters!
S: egg whites and 1/2 small baked yam
L: Planning on roasted chicken, the rest of the small baked yam, and sauteed brussel sprouts - offices closed due to snow until 1 :)

Like a cheese grater? I usually use one like this that I got at the grocery store:
http://www.amazon.com/Progressive-International-HG-925-Deluxe-Grater/dp/B000HMAF6A/ref=sr_1_5?ie=UTF8&qid=1364228432&sr=8-5&keywords=cheese+grater
Or, if I'm doing it in quantity, the shredding disk on my food processor. And I use the regular food processor blade to make cauliflower 'rice'. It's ridiculously messy, so I don't do it very often.

I was good all weekend but I don't remember what I ate so I'm not going to record it here. I will say that I am quite proud that I was able to steer clear of any treats (or sugar) this weekend even on the heels of my indulgence on Thursday night. I certainly had a lot of sugar thoughts and cravings, but I didn't cave and I think that today, I'm past it. Phew!

B: last piece of sausage, kale and onion frittata, avocado, pineapple, black coffee
L: sausage and cabbage 'noodles'. clementines
S: hard boiled egg, banana (if I need this)
D: chicken and veggie stir fry - I'm trying the stir fry sauce from Well Fed for the first time. Hope it's good!

Oh, Catrin - I made that banana bread recipe you linked to use up 4 brown bananas. It was REALLY good! Even my non-paleo husband liked them. I added chopped walnuts and nutmeg and made them into muffins and they worked great. Luckily, I have a lot silicone muffin cups because I needed all 18 of them to use up all the batter!

The shredding disk on my food processor just doesn't work. I hadn't thought about a cheese grater, thanks! Also glad to hear you liked the recipe. It is good and also good for non-Paleo events :)

It looks like a cheese grater is a less expensive option, so I may go with that. A julienne peeler will also work but I think the grater is probably quicker - and certainly easier to find at a local store.

I've already posted most of yesterday, outside of dinner. I had the last of my home-seasoned Italian sausage/ground pork and scrambled it with veggies and 2 eggs. I was HUNGRY and unwilling to wait for more dinner-like preparations.

Crankin - while I don't bloat/hold water near as much as before moving to Paleo, I still hold some fluids the day after an intense workout. Is it possible the weight gain you've noted could simply be that? I know this is frustrating to you. My trainer changed my Tuesday session this week to Thursday so I have an unexpected rest day :) I was going to go in anyway, but decided after the last two days that my body would appreciate a rest. I know ... it is so hard to do that! It really is one of the few things I've not set aside in my efforts to adopt a more Paleo/primal lifestyle. I think part of me is afraid that if I stop watching the scales those almost 100 pounds I've worked so hard to lose will start running back. The ironic part is I KNOW other things are going on with my body that the scales can't measure. I've dropped more sizes since July than my loss of 9-10 pounds explains - it is about far more than numbers on a scale.

Hi! My name is Catherine and I am addicted to the scales...

When I stop weighing myself, my weight goes up. Believe me, this has happened a few times. I do go by the fit of my pants and some of them are a bit tight. At first I thought it was because I had just washed my jeans, but it's all my jeans and pants. Of course my huge cycling calves and quads don't help here. I like those things, but when the hips of my pants get tight, that is a cue.
I bought new black ankle length pants in the smaller of the 2 sizes I wear, because the reviews said they stretch out (this brand does). They are really tight, but I am wearing them now to remind myself not to over eat tonight.

Catrin - I've made that recipe before (Velvety Squash) but I found it was WAY too garlic-y for me. I should try it again and cut it in half, at least.

Well then, you are welcome! I probably need to reduce my fruit intake a bit but it adds such variety that I haven't bothered.

I am going to have to start paying attention to my starchy carb consumption (particularly timing) as I start biking more, but for now, I don't really think about it. The sweet potato was HUGE! I estimate that it weighs at least 6 pounds, possibly more. I set the oven on 200 degrees and forgot about it. After 6 hours it was still hard, so I bumped the temp to 250 & went to bed. It was ready by morning and I will use most of it in a recipe tomorrow.

As far as the brisket is concerned I found a recipe where it is baked on a bed of onions and mushrooms. It is only 1 pound, I did not want to risk a larger brisket until I figure out what to do with it...

L: Leftovers from dinner last night...so 3 pieces of breaded fried chicken  (but it was so good) and bell pepper strips
20.2-mile bike ride
A small handful of pita chips while I cooked dinner

S:small skim milk mocha latte. too sweet and I forgot my Lactaid. Had a couple of whole wheat pita rounds when I got home and lots of water
2.2 mile hilly walk
D: went out. Shared a plate of proscuttio/Caprese salad with DH (delicious) and had swordfish with veggies and angel hair. The fish was delicious. I ate half the fish and 3 bites of the pasta and had the rest boxed up. I honestly can't remember the last time I had pasta, any pasta either at home or out. This was freshly made, so worth it, but I've kind of lost my desire. One glass of red wine.

I get almost all of my meat from a local butcher, they have their own cows/pigs, etc., so I can get however much I want. In the end I get what I want for less than I would pay at the store where I am limited to whatever they have packaged AND I know how the animals have lived/been fed. If I like this recipe I will get a larger brisket eventually and make some for the freezer. I just don't have much time for real cooking during the week...

OK, two questions...

1) you cooked a sweet potato for 14 hours? Where?

2) how are you cooking your brisket? (I've never cooked one either)

Update...even after 14 hours that Sweet Potato Boulder wasn't cooked quite all of the way! 99% of it was, but I found a couple of hardish spots when preparing it for a recipe yesterday. I got it from a local market that had it on sale for $1 - they usually charge .99/pound so that was probably the only way they could have sold it.

The brisket came out well, I may try my hand at corning a brisket at some point - the idea of grass-fed corned beef sounds really good.

GLC: Homemade guac?

Normally, I do make my own. On Friday, it was from Whole Foods because I was feeling lazy (and I had to pick up some ketchup for my DH anyway!).

I cooked my brisket in the crock pot yesterday. I've only just tasted it, but I'm serving it for dinner today, so we'll see how it is!

B: chicken apple sausage, apple with almond butter, black coffee
S: banana muffin
L: czech meatballs, sauteed veggies
D: mashed cauliflower, greens salad, smoky brisket and onions

This weekend I made the czech meatballs, the brisket and some spice mixes. Tonight I'll be rendering some pork fat, starting some sauerkraut, roasting some veggies and making a frittata to eat in the week ahead.

I won't say everything I ate today. I did go on a very hard 22.5 mile hilly ride, during which I ate a Luna Bar.
We went out to a sushi restaurant to help Oakleaf carbo-load for the marathon. Of course, I did not need to carbo load, but I ate a huge amount of sushi and white rice, for the first time in about a year and a half.
I also have a cold and it's making me crave food I never eat.

Catrin,

It is very good, moist and flavorful! The spice combination is really a good one, though I might toss in a bit more garlic and chili powder next time - but I happen to like those things quite a lot. The sauce is very nice as well, and I reserved some of it for other things rather than keeping all of it in the pulled pork when I refrigerated it. This seems a good recipe for a loin end roast.

Buying it. While I like to cook, I am not that ambitious! A new olive oil/vinegar store opened up in town and while it's pricey, it's cheaper than ordering it from Spain, which I had been doing after my trip in 2010. I also have chocolate infused vinegar.

L: I took myself out to lunch and had a veggie omelet, fruit, and one one slice whole grain toast
S: orange

Grocery shopping time! I need more veggie variety! Loving the new/larger food processor - I don't know if it is because it is larger, or a different brand, but I find myself using it even more than my Cuisinart before it broke and it seems easier/more effective.

I've a conference for the next 5 days and frankly I am concerned over the food. I am sure that I can find meat and veggies, and can ignore grains, it is the oils/hidden ingredients that I am trying not to stress over. I will do my best, spend some time in the hotel fitness center, and try not to stress too much. I just know how bad I feel when I eat things I know I shouldn't eat...and I won't be more specific than that :o 5 days is also a long conference!

Crankin
05-05-2013, 04:24 AM
Don't stress about it, Catrin. Just get back to what you normally do when the conference is over and do the best you can while there. Otherwise, this stuff becomes obsessive.
Even though I'm not following Paleo anymore, last night, after my carb fest, I realized how guilty I felt about eating pasta. This is not good. I realize I still eat very healthily compared to the general population and now I just need to chill.

Catrin
05-05-2013, 11:19 AM
It is more about the physical consequences of eating things my body is sensitive to. I know what I can get away with in moderation, but grains & pseudo grains aren't one of those. At least that is obvious enough that I can avoid them  Looking forward to the conference!

Ok, I need some accountability here:

Yesterday:
Started the day out in the hotel fitness center - not what I am accustomed to but I did a little time on the treadmill and tossed a few weights around.

B: omelet with meat and veggies, a small amount of potatoes, tiny chicken feta sausage, cappochino (well, 3 of them - but they were small!! and no sugar...
L: angus beef wrap sans wrap, coleslaw, salad with balsamic dressing
D: salmon, some kind of veggies (have no idea what they were), a few fish roe was served with the dish. Ignored the couscous on the plate :) Went to a VERY nice restaurant with a couple of co-workers. Very expensive salmon, but not NEAR as expensive as the 5-course Morel meal they tried to sell us. I will go somehwere else tonight.

The conference snacks and breakfast they provide are pure sugar...so ignoring those.

Today:
Started out at fitness center this morning and got a better workout in.
B: see above...snagged a banana for a mid-morning snack.

Good conference by the way :)

Yeah, my stomach isn't doing so well....but I've been drinking a LOT of coffee - much more than normal so I blame it on that. I've wound up spending all of my time technical troubleshooting long distance (remote connections) and conferring with some of the specialists at the conference rather than really attending sessions. It is neccessary, and the specialists wouldn't have been available if I weren't here so it is good that I am.

I don't need to eat so much anyway since my activity level isn't normal - reporting here keeps me from diving into the chocolate desserts that my caffeine infused brain REALLLLY wants. I did succomb to tasting a bite earlier but it was so sweet I could hardly swallow it - so that helps. I love chocolate, but there are better ways to get it.

B: 2 eggs, scrambled with cheddar and 2 slices low fat uncured bacon, blueberries, coffee
S: before 50 mile ride I had a piece of raisin Ezekial bread with almond butter. We didn't leave until 11:15, so I was already hungry! Ate a little of a Luna Bar along the way.
L: had a turkey, lettuce, tomato sandwich on a roll (which was not whole wheat, yuck) and some baked potato chips.
At mile 36, I ate the rest of my Luna Bar. I was starving. Unfortunately, it seems that Nuun is bothering my stomach. I have to find a new electrolyte drink, without Sorbitol.
S: had a 6 inch whole wheat pita with avocado and a piece of Machengo cheese
D: I went to friends for dinner. I ate way too many appetizers, cheese, pita rounds, and spinach dip. Dinner was scrod on roasted tomatoes with bread crumbs, a huge salad, and 2 glasses of white wine. I also had ice cream.
Today:
B: egg whites scrambled with a corn tortilla, salsa and avocado. Pineapple chunks. Coffee
went on a 40 mile ride. Ate 1/2 a Lara Bar before I left.
L: sandwich of 2 slices raisin Ezekial bread and almond butter, one Shot Block. I bought some Gu2o when we stopped and sipped that. My legs were killing me.
S: I ate a Lara Bar before the end of the ride and had a corn tortilla with melted cheddar when I got home. Total liquid was one bottle of Gu2o, 1 bottle of water
D: salad with seared scallops, glass of red wine

Oh, Crankin. If you're feeling a little guilty about what you've been eating, how should I feel?

Crankin

I don't know, Owlie.
But, I think you can be a little more forgiving of yourself, since I'm old enough to be your mom. I just wish I didn't get so hungry from hard riding. It's so predictable, so I try to deal with it.

Crankin, please let me know how your electrolyte drink search goes. The sorbitol in Nuun, etc. bothers my stomach too. Finding a low- or no-sugar replacement has been a challenge thus far, so I'd love to hear suggestions from others.

Murienn, the Bolthouse Farms drink would be more than I need. I basically just want electrolytes. I get everything else from real food or Shotblocks when I need a lift. I used to use Accelerade, but it's too sweet for me and hurts my stomach, too.
I might try the Heed if I can find a packet in a LBS. yesterday, the Gu20 was fine, but again, too many calories.

Crankin, I've come to really like the Skratch. It isn't as sweet as Heed and it has a nice electrolyte profile, it really helped me out the other day on a humid ride. I like the pineapple :) I will also use this at my more challenging gym workouts and will CERTAINLY use it Saturday at a local Crossfit military charity fundraising event.

Where do you buy it? Can you get it online, i.e., at a decent price? I think I looked into it once and it was ridiculously priced. I'll do it, if I have to, but just wondering.

It is all too expensive...I paid $19 for 1 pound at my LBS...Amazon charges more than that!!! Still less than what I paid for Heed, but there is a bit less of it. Their "Everday Hydration" has a slightly different profile, so check them both out. Perhaps someone local sells the individual servings so you can at least try it out? I need this for really hard effort/hot days, but will try other things for less intense purposes to make it last longer. I really like the ingredients, I can pronounce them all!

Same here. I have to separate my fueling from my hydration or run the risk of becoming very dehydrated. Nuun was perfect for my needs until I discovered my sorbitol intolerance.

Chinese broccoli? I've not heard of that before, will have to look it up. I love the mixture of eggs and spinach so much that it is hard for me to mix up my morning veggies. I need to introduce more veggie variety.

Crankin - that Italian dish sounds amazing and I generally don't like eggplant! Sarah Fragoso is coming out with an Italian inspired paleo cookbook and I can't wait to try it for recipes like that one.

Catrin - Chinese broccoli is a new discovery for us (our CSA grows it) and it's awesome! It's kind of like regular broccoli but the heads are much, much smaller, the stems are more tender and you eat all the leaves. It's almost like a combo of kale and broccoli in one veggie.

Today
B: chicken apple sausage, 1/2 apple, almond butter, leftover chinese broccoli sauteed in bacon fat, black coffee
L: homemade chicken salad over greens and red pepper strips, 1/2 apple
S: banana
D: baked chicken thighs, greens salad, stirfry of bok choy, carrots, scallions and purple sprouting broccoli

And lets be realistic - I'm certain I'll have some dark chocolate after dinner.

Activity - run after work (2 miles)

Tonight I went for a post-ride burger to a place called brb - Be Right Burger. It was my second time there. The first time, I had a beef burger with pickles and tomatoes. The pickles were good. The burger was pretty tasteless. Tonight I had a turkey burger that was supposed to be topped with provolone, avocado and "chipotle mayo." It was greasy, with lots of cheese, very little avocado and either they forgot the chipotle mayo or it was completely flavorless. I won't be going back there anymore.

And now I'm going to have some black cherry flavored Greek yogurt, which is very tasty. And it's the store brand, so not expensive.

This past week has been filled with eating stuff with family members and friends --have been visiting in another province. Have tried to fit in cycling -- only 2 missed days out of 9 days during this trip.

Near the end of this time, there was a lovely wedding. But I couldn't finish 2 pieces of meat as my entrée on the plate --steak and chicken breast. Am rather surprised that 2 types of meat were served on 1 entrée plate.

I don't think I ate much less than you did yesterday. Less for breakfast maybe; but the tostada was big (turkey burger, pinto beans, rice, lettuce, salsa, little cheese, lots of lettuce) and I ate a half baked potato (BIG ONE) with sour cream! So, some days are small portions some are big - just depends on how much exercise I have!

1 piece wg bread, coffee
1 banana
leftover tostada
few pretzels
Not sure, maybe a big mexican meal??

L: salad with chicken, chick peas, lettuce, grape tomatoes, fig vinegar, an apple, handful of nuts, cranberries, chocolate

It just sounded small when I read it Spokewrench, though of course it is about the portions we need to fuel our activity level. We can't see portions when we read what other posters have entered :)

Today:

B: last of the current frittata, fresh side, coffee. (this probably sounds repetitive, but it works for me)
S: small banana
L: roast chicken salad with home-made hazelnut oil mayo on romaine lettuce wraps...I needed more veggies/food to go with this
S: strawberries/pineapple/raisin "salad"

kick-butt solo kettlebell workout (the "warrior weekly challenge"), followed by protein shake.

D: Czech meatballs and sauteed spinach - once again - more food was needed....have to get to the store! 2 small squares dark chocolate

Crankin - there is no way I could do that kind of workout with just 5 walnuts, I just can't do intense exercise in a fasted state. Of course, exercise fasting is better than NO exercise!
