Yesterday:

B: eggs scrambled with spinach, 1/4 avocado, coffee (down to 1 cup a day right now)
1 hour group training - this one was much lower in intensity - no crazy metabolic work. Unsure if that is what he had planned or if it is because I was there and he knows I've been ill. Followed with protein shake
L: Mulligatawny Stew
S: Kefir, small apple
D: Last of the Mulligatawny Stew

I am looking forward to a bit more experimentation in the kitchen this weekend with my new cookbook:) And...I've re-gained the weight I lost last weekend when I was so sick - and I am NOT complaining about that.

Today:

B: eggs and sauteed butternut squash
usual conditioning group training - and I felt fine :)
L: last of the Mull. stew (soup only - froze some last week), heated up with some seafood. Better than anticipated, small banana
S: chocolate ice cream. Said quart of yummy ice cream then went to the dumpster because I cannot be trusted with it in the house - apparently.
D: tried a new turkey/cranberry meatball recipe. It was ok, but I prefer pork or beef. Herb salad to go along with it.

I did recover fairly quickly, Catrin.
So, it's been 2 days of non-stop eating, with my kids here from LA. I haven't eaten too much, just stuff I normally might not eat. DH got really good food for my birthday party, including a decadent chocolate cake to die for. It's going with him to the office today. I'll leave Saturday out, but here's yesterday:
B: whole wheat bagel, lox, tomato, light cream cheese, coffee
took a 2.5 mile walk with the family
L: salad with lettuce, chicken, dried cranberries, goat cheese, fig vinegar, cup of tomato soup
D: we went out for Chinese food at a place near where my older son lives. Very authentic and it had to be some of the hottest stuff I've ever eaten. Had a variety of dishes, mostly eggplant, with a taste of noodles, chicken, pork.

I should skip posting yesterday's food. We went out to dinner at an awesome place and then went to see Louis Black. Way too much for a school night!
I did a really hard boot camp class, had half a Lara Bar before
B: eggs, kale, cheese, black beans, blueberries
L: lentil soup and an apple
S: ate the rest of the Lara Bar
D: Ok, we got to the place early, as we weren't sure how long it would take to get to Worcester in rush hour. Had one glass of wine and we shared 2 flatbreads between the 4 of us. One had proscuttio and the other had basil/cheese. Had another glass and a half of wine at dinner, which was salmon enrusted in pepper, with a cilantro sauce, brown rice, and cabbage.
I guess the appetizers were a bit much, but we were starving at 5 PM.
Louis Black is funny, but really, how many times can you say the f word without it getting annoying? He gave a very good description of Yuma, AZ, which had me laughing so hard I was crying, though (the armpit of AZ, 8,000 degrees out, just like I always said)

Can't remember what I ate Friday, but here's yesterday:
B: 2 poached eggs on sautéed spinach with bacon crumbles, coffee, an orange
S: half a Lara Bar before a 21 mile semi hilly ride
L: finished the Lara Bar and had a salad with tuna, grape tomatoes, goat cheese, with an apple
S: slice of Machengo
D: went to an Italian place near where I used to teach. They know us here. I had parpedelle with tomato and ricotta and a cup of lentil soup. I ate about 2/3 of the pasta and took the rest home. Had 2 glasses of Lambrusco.

Yesterday:
Tea with half-and-half and sugar (a little too much sugar, since I haven't had that particular tea in ages...), waffles with butter and maple syrup.
Apple with cookie butter
Chocolate pudding
2 chicken legs, fennel and arugula salad with homemade dressing, walnuts and Parmesean, 4 slices of buttered sourdough toast.
1 frozen "fun-size" Milky Way (though what exactly is more fun about less candy, I don't know).

Today:
Sourdough toast with cream cheese, smoked salmon, chives and fennel fronds, coffee with half-and-half and sugar.
19.3-mile bike ride (2 bottles of water, one Clif bar)
Glass of egg nog
I'm either doing stir-fry or a burrito tonight. Probably stir-fry so that I have a reason to make a ton of rice so that I have leftovers for the week.

Today:

B: "hot pot" - basically lots of veggies scrambled with a couple of eggs, some pork, and fermented veggies on top - YUM!
15 minute weight lifting session prior to usual crazy Sunday Funday workout - followed with protein shake
L: salad with organic grass-fed, nitrate free hot dogs. I know...but they are pretty darn good!
S: apple
D: roast pork shoulder, paleo tabbouleh (cauliflower rice rather than grains), roasted carrots. 2 small squares of dark chocolate for dessert.

Is there a brand on the hot dogs, or is it a local outfit? (DBF's a hot dog fiend, and I sort of like them, and I'd like to find ones that aren't terrifying.)

Applegate Organic Hot Dogs - here is a link (http://www.applegate.com/products/the-great-organic-beef-hot-dog-16oz). They are good and satisfy that occasional craving I get for more processed food - though I won't give into it if I didn't have access to something like this. They aren't cheap - $5 at Trader Joe's, unsure how easy they are to find at other stores.

I know Whole Foods also carries that brand - I haven't looked for the hot dogs, though. They might be able to order them, though.

I know the local Fry's carries the bacon (which is also pretty good). I've never seen the hot dogs, but I haven't looked. I'll check TJ's next time I'm there, and the Whole Foods should be opening up again fairly soon. If not, there's one over by Performance and I have to go over there anyway.

B: Smoothie (yogurt, peanut butter, banana, coffee, cocoa)
L: Stir fry (Chicken, onion, carrot, broccoli, bamboo shoots, baby corn, water chestnuts, red and yellow bell pepper and snow peas) over brown rice, with generous soy sauce and sesame oil, because dry rice is gross.
S: Tea with sugar and half-and-half, 3 gingersnaps, a small handful of cinnamon-sugar almonds
S2: Parsley and fennel fronds while preparing dinner.
D: Salad (spring mix, baby arugula, parsley, fennel (fronds and 1/4 bulb, yellow bell pepper) with canned tuna (packed in olive oil), walnuts and Parmesan; olive oil and lemon juice dressing (with pepper and garlic, of course).
Something for dessert and to go with my studying...I have pumpkin ice cream. Or peanut butter cup ice cream. Hm.

Ate half a Lara Bar before spin class (first of the year). Finished it on the 4 mile drive home
B:egg whites, salmon, goat cheese scramble, an orange with blueberries
then I went on a 3.3 mile hike with a friend. Went to a new trail, which was quite technical and good climbs (it's on the side of a chasm), but my friend is really slow. S: I ate some walnuts and dried apricots before and after the hike
L: cup of tomato soup, salad with tuna in oil, avocado, lettuce, fig vinegar
D: glass of red wine, sauteed veal, cooked in crushed tomatoes, broccolini, onions, garlic, over whole wheat cous cous, 2 squares dark chocolate

L: shredded chicken, melted light cheddar, green chili salsa, an apple
S: slice of Machengo, 2 ww pita rounds
DL one turkey burger patty, whipped butternut squash, salad, glass of red wine
I am definitely fighting a cold, despite the getting chilled thing is an old wive's tale. I couldn't get warm after my hike yesterday, sneezed a little in the PM, so I started using the saline rinse. Today I did more, took a Claritin, used some zinc all day, upped my vitamin C. No sneezing, no chills, but I feel off. Achy. Probably shouldn't have gone to boot camp, but no work tomorrow, and nothing more strenuous than gentle yoga and stretching.

I overdosed on sour gummy worms this weekend. (Backstory: I'm starting to think I have ADHD, but I'm trying to avoid an official diagnosis and meds right now, because student health insurance is terrible. One of the things that the counselor I'm working with suggested was to chew on something while studying to help with focusing. I don't like gum, so gummies were the obvious answer.) Blergh. LOL Crankin at the Danger Zone reference :) I weighed myself yesterday and was back to what I was before the holiday. My coach and training partner are both chastising me for not eating enough again...I need to add more starchy carbs back into my diet so have been working on that. 1,400-1,500 calories for my current activity level is NOT enough. I KNOW that, and I also know that I gain body fat when my calories drop that low...it is a challenge. I know that, and understand why it is that way, but I do forget.

Today (rest day)
B: frittata, 1 slice bacon, coffee
S: kefir with a small amount of protein powder mixed in
L: roasted chicken, kale chips

I KNOW that, and I also know that I gain body fat when my calories drop that low...it is a challenge. I know that, and understand why it is that way, but I do forget.

Today (rest day)
B: frittata, 1 slice bacon, coffee
S: kefir with a small amount of protein powder mixed in
L: roasted chicken, kale chips
S: small apple
D: sweet potato bacon chocolate chili - as soon as it is done! I will have it over baby spinach - this is a fantastic recipe with a great mix of spices. I have a LOT more spices in my cabinet than I once did...

Habits are hard to break!

B: Coffeeeeeee, leftover sweet potato casserole from Thanksgiving
L: Salami on crackers, an apple
S: Tea, buttered English muffin, handful of coconut chips from Trader Joe's

What is the marinade? I'm always looking for ways to cook chicken?

For 1-pound boneless/skinless chicken thighs:

1/4 cup coconut aminos
1 tablespoon sesame oil
1 teaspoon arrowroot powder
1-inch piece fresh ginger, grated (~1 tablespoon)
2 cloves of garlic, minced
1 teaspoon coconut oil

cut chicken into 1-inch pieces and add to marinade, refrigerate 2-8 hours. Cook in coconut oil ~3-4 minutes per side to get nice and brown.

There is a sauce recipe that goes with this, but I've not made it yet. I am making a double batch of this tomorrow so I can freeze some :)

Did I mention this is just YUMMY???

Crankin, I use the food processor method. I don't separate all of the little flowerets but they are pretty small when I put them in the processor. Small batches , low speed and I only run it 8 or 10 seconds, it doesn't take long. I do make certain that I've removed the stem, for lack of another word to call it. What problem are you having with it?

Crankin
01-01-2014, 04:07 PM
It got too processed, and certainly didn't look like the "rice" in the picture in the cookbook! I will try your method. We ordered a new food processor. Mine seems new, because I didn't use it for like, 10 years, but it's not working for the soups I make at this time of the year, as well as a couple of other things i hate. It is supposed to come tomorrow, so I will wait and try the rice again next week.

Catrin

It sounds like it was due for replacement. I would try small batches, low speed and brief whirls. I've not had it fail, and I am not the most talented in the kitchen.

Crankin, I've made the Rogan Josh with beef stew meat and it was good! I've been trying lots of good recipes from Well Fed 2 and like it even better than the first one. Also have NomNom Paleo, ot is a beautiful cookbook and am looking forward to working with her recipes as well. Her website is the first one I visit for recipes.

B: usual (need to get some variety going here) eggs, spinach, fermented veggies & coffee

1 hour group training followed by a protein shake

L: roasted chicken salad with romaine lettuce wraps, casablanca carrots
S banana
D: West African Chicken stew, cauli-rice, roasted mustard-garlic Brussels Sprouts.
S: peppermint tea with 100% cacao powder...pure chocolate goodness and peppermint...perfect for a cold winter night!

I looked at the nom nom Paleo site; the recipes look good and I liked her attitude, not "holier than thou" about Paleo. So, since I'm home today, and I had the ingredients, I decided to make the marinade for the Asian chicken. I had a much smaller amount of chicken thighs (1.25 vs. 4), so I adjusted the marinade amounts down a little. I got to use my new food processor, which miraculously, arrived in the blizzard yesterday. As with most recipes, I found the amounts of ingredients for the marinade were widely off of what I would have done on my own... not enough. However, since I had adjusted the amount down just a little, it ended up fine. I probably will cook the thighs the way I usually do, and not turn them half way. I find that this often ruins the coating and is not really necessary.
The marinade tasted great, and I have some nice broccolini to eat with it.

Crankin, you can't go wrong with her recipes, they are indeed nomnomnomnomnom, and she is just fun about it all. Her new cookbook is great, it is a large hardback that is full of comic illustrations that are right on target. They are also her way of sharing her life and family with her fans.

You might be interested in knowing the recipes in Well Fed 2 tend to be smaller, 1 pound of protein (generally) over the average of 2 pounds from Well Fed 1. There also isn't much duplication. I am having problems getting away from Well Fed 2 to try more recipes from the NomNom Paleo cookbook, but I will get to them! With a blizzard forecast for Sunday, I will get some cooking done that day...

Interesting about the Well Fed 2. I will be buying it soon.

It is longer than the original, has more recipes, and she takes a different approach regarding meatballs/bangers recipes. Well worth the money, that gives me 4 cookbooks and that is more than sufficient for my needs!

B: scrambled eggs, 2 slices uncured bacon, oranges and strawberries, coffee
S: 4 walnuts, 2 dried apricots
about a half hour of easy snow shoveling (snow was light)
L: chicken salad with almonds and dried cranberries in 2 romaine leaves, cup of tomato roasted red pepper soup
an hour or so of snow shoeing, 3.5 miles, including a big climb
S: handful of pumpkin seeds
D: 2 Asian chicken thighs, roasted broccolini, 1.5 slices of fresh pineapple. one glass of red wine, one square of dark chocolate
Catrin, I looked through more of the nom nom Paleo recipes... I am going to bring some of the Asian meatballs for appetizers to a friend's tomorrow and do one more easy dish from there. But, a lot of the recipes take way too long to prep for me during the week; except for Wed. when I only see one person. Also, there were a couple of duck recipes I wanted to make, but I have to figure out where I can buy the duck.

She is a least part asian and that is reflected in her recipes. They are well worth the effort, and I love her pork recipes :) I am more likely to use hers on Sunday's when I am doing major cooking anyway for the week.

When you get Well Fed 2 you need to make the West African Chicken Stew first :)

D: went to a friend's for dinner. Had about 4 of the Asian meatballs and some hummus with carrot chips for apps. dinner was salmon roasted with lemon and green beans with garlic and tomatoes. I skipped the rice. Someone else brought some "Zone" brownies, which I had a small piece of. They were OK, but not worth it, since they were made with fake sugar, which I never eat. B: eggs scrambled with spinach, bacon, coffee, 1/2 apple
L: NomNom Paleo's "Spicy Tuna Cakes" with a small salad. I don't especially care for tuna, but these were great! I didn't use the muffin tin as the recipe recommends, just dropped them on a parchment lined baking sheet. Worked out well! This is one of her more simple recipes - who would have thought that mashed sweet potatoes and canned tuna would go so well together!
S: 1/2 apple
D: Probably a couple more spicy tuna cakes with roasted kale and carrots, either that or a cold salad with smoked salmon and eggs, but I suspect I will want something hot.
At some point this afternoon a glass of wine will be involved.

D: slice of Machengo, glass of red wine. one small lamb burger patty on a bed of butter lettuce, topped by home made guacamole, fried egg, tomato, mushrooms, onions. sweet potato "fries" The cooking of the lamb in the oven caused so much smoke in my kitchen, I had to open the front door and one of the sliders! Not feeling so well today. My stomach was off Sat. and Sunday, but after breakfast today, it was really off and I had to take meds so I could leave for work. Rest day today, I am exhausted from 3 days in a row of winter sports. I feel like the intense exercise is setting off my symptoms from a few years ago, but also, today is the day I had to start telling my clients I am leaving, which=stress.
B: 4 ham roll ups with light veggie cream cheese and walnuts, an orange, coffee. Then, I felt sick, so I had a half a piece of dry matzah before leaving. It's the only thing that helps when I feel this way.
L: I ate some plain chicken breast shredded over left over salad DH made for dinner at friends Sat. I ate the chicken, just a little of the veggies. Half an apple
S: Lara Bar
D: I couldn't face the dinner I had planned, so I had wagon wheel pasta (yes, real, white pasta) with olive oil and cheese, and one left over lamb burger patty.Lots of seltzer water. Feel much better!

NomNom's spicy tuna cake recipe (http://nomnompaleo.com/post/31214225453/paleo-eats-9-8-12) is here - scroll down. Her recipes are always image heavy, and her cookbook is the same way. NomNom has a spicy shrimp recipe as well that I want to try, if I don't make it tomorrow then will do so this coming weekend. Yesterday I braised a large pastured pork shoulder roast, but I do like to have a choice of protein so I don't have to eat the same thing for every meal.

What sort of fermented veggies do you eat? Do you make them yourself? I want to try kimchee, but I'm afraid I won't like it. (And BF would hate it, I'm sure.)
Also, what is this spicy tuna cake of which you speak?

Owlie, I posted a link to the spicy tuna cake recipe in post #3390 (5 posts up). It is quite good and also inexpensive. Many of NomNom's recipes do take a fair amount of effort, but they are all great. This one is more simple than many.

I get my fermented veggies from Fermenti Artisan (http://www.yelp.com/biz/fermenti-artisan-indianapolis). Sadly they have no website and they do not have an internet side to their business. They've a wide range of fermented veggies, my favorite is the Curtido, which is a variety of veggies with a bit of a spicy kick to it. I think this is a kraut recipe from El Salvador, but it is awesome. They also have a non-spicy version that they call "Garden Kraut". They also offer Kimchee, pickled beets, etc., etc., etc. As their name implies, fermented veggies is all they do! They also are the only place where I will actually buy my lunch if I've forgotten mine, they have great salads with well-sourced ingredients, including the protein.

The West African chicken stew turned out well, even better than last time. The recipe calls for sunflower seed butter without sugar, and I couldn't find any. Last time I used some that did but I prefer to not use added sugar when possible. So I bought some raw sunflower seed kernals for < $2 and proceeded to attempt to make my own nutbutter. Apparently my food processor isn't powerful enough for that, after almost 30 minutes all I had was very, very fine sunflower...unsure what to call it - it is too fine to call meal but not quite fine enough for flour. Anyway, I used this, whatever it is, in my recipe and it worked out well. Since the volume didn't really decrease, I did add more to the stew than the 1/4 cup called for in the recipe.

Catrin, basically just using trigger point pressure on the 2 "bumps" at the bottom of my head (I have no idea what the scientific name is) and a neck/head stretch where you press your chin in and down. There's also one that you can do in the car, where you press your head back into the headrest.

Protein shake
L: bison chili over spinach, dried apricots
D: bone broth "soup" with veggies, organic hot dog.

Today (rest day)

B: 1 boiled egg, 1 slice bacon, coffee
L: (at church) 2 slices egg/cheese casserole
S: 1/2 cup bison chili over spinach
D: West African chicken stew over lemon/pine nut spinach. Debating on a beer, will probably have one double-chocolate stout to go along with 2 squares of 85% dark chocolate.

I like this stew so much that I made a double batch. There is a variation of the recipe that uses white fish and while I am far from a fan of fish (outside of pan-fried sardines), I am going to HAVE to try it.

I did have a great time, Catrin. We finally have a real gastropub here in the burbs and I don't feel so bad now. The plates for some of the stuff are small, so it's just a matter of choosing wisely. This place must have 25 beers on tap!
Doing some experimenting with my diet this week, as DH is away. Leaning toward more vegetarian this week! I know I couldn't do it 100%, but this style of eating is easier for me than Paleo. Still like all of those Paleo recipes, though, and it has opened up a whole new bunch of them.
B: cup of non fat plain Greek yogurt with blueberries, walnuts, dried cranberries. Slice of spelt raisin bread and walnut butter, coffee
I ate half a Lara Bar at the beginning of my 6 mile nordic ski. Then I went home and shoveled up some of the snow that fell this morning before it ices up.
L: cup of roasted red pepper/tomato soup, left over home made veggie burger with avocado, lettuce, salsa, sliced yellow pepper
S: some roasted kale I bought at the store. Now I know that experiment I did with the kale last year really was OK. Ate some carrots while I was cooking
Dinner will be lentil stew and a salad.
I am planning on no wine or beer until at least Friday...

Yes, and it is THE best recipe I've tried from her - and that is saying a lot! I would say the West African Stew is the one to start with in Well Fed 2 :) The lemon spinach is nice as well, a nice change to plain sauteed or wilted spinach. Going to try the Spicy Coconut Shrimp tonight from NomNom Paleo - another great cookbook I've come to love.

You were right, Catrin. Hemp milk is bleh. I bought one of those small cartons of it and got everything ready to make a sort of smoothie early this morning. One sip and down the drain it all went. I wasted some good blueberries!
I also woke up with stomach issues... ate half a Lara Bar and went to boot camp, though I had to leave once. Got home and felt kind of like I was having an allergic reaction (not the hemp!), as I felt weird all night. I ended up taking several meds, including some Pepto, so I could go to work. Thus, my eating has been comfort and carb loaded.
B: head of stuffed endive with lox and light cream cheese, blackberries, coffee. This was not a good idea, but I was hungry and sick at the same time.
L: almond butter sandwich on spelt raisin bread. I had to eat in my car today. The office is closed so I just drove from client to client. I also had about 30 oz. of water

\The tempeh (I keep seeing Tempe, my former home) tasted nutty to me, not soy-like. I liked it.

I didn't like Tempeh until I 1) found a local manufacturer and 2) started pre-steaming it. Before that, it was always bitter to me. Now, it has this lovely, wholesome, nutty flavor. I love it!

I weighed in on the morning of Day 11 a half pound below my goal and the lowest I've been in a decade. It led me to a bit of a freak out and I had not only my planned splurge, but I kind of gorged on plantain chips and guacamole. My calorie totals for the day were north of 3000! Today I weighed in up 3 lbs! I've done a little analysis of why it happened and now I'm moving on. On the positive side of things, I had a kick-butt 8 mile run today!

Day 11
B: eggs scrambled with spinach, shallots, bacon and then topped with pico de gallo and avocado, 1/2 orange, black coffee
L: leftovers - dolmas, baba ganoush, carrots, and plantain chips with home made guac. (I ate the WHOLE 6 oz bag of chips!)

D: My version of Chocolate Chili (from Well Fed 1), this had a mix of grassfed beef and pastured ground pork, added more spices, over roasted spaghetti squash and the last of the roasted green beans. I am addicted to roasted veggies... oh yes, I also had one beer.

I like both Well Fed cookbooks, but there is a big difference between them. The second one has more recipes, they are organized differently, and she has made some changes in some of the different types of recipes. For example, her sausage mixes from WF2 use cream of tartar and baking soda, while the mixes from the first one doesn't. In this case I merge them :) I've favorites in both. I do like the Taj Mahal, but I think I like the West African Chicken Stew best of all from the second one, at least right now. Did you like the West African Stew Crankin? I love it. I tried to make my own sunbutter and found my food processor isn't powerful enough. I might try to make it with almond butter, we will see. I DID use the results of my failed sunbutter experiment in the last West African Stew and it was fine. It was like a fine moist flour - at least almost. It was better than using the sunbutter with sugar from Trader Joe's. A lot cheaper as well. So far I've not found an unsweetened sunbutter and I won't order it online. Just too expensive when I've another alternative.

I liked the stew, even though I thought it had a slightly odd taste. I seasoned it more, and that went away. DH liked it, too.
I can buy suflower butter without sugar at the natural foods store, which is very close to me, but in the other direction from my grocery store and TJs. Very expensive, but worth it for the few things I need to get there. I buy my almond butter there, too.

L: home made cacao chili over more sauteed multiple veggies
S: 1 beer with a 13 grams of 85% dark chocolate
D: planning on a baked sweet potato and some braised beef roast. I used my favorite cumin/coffee/cacao rub before setting the "boiling beef" to braise. I've not head that term before and am unsure if that cut has another name. As it is grass-fed I added some bone broth to my braising dutch oven so it won't be dry. The cut was certainly far more affordable than other grass-fed roasts, which is why I am trying it ;)

This is the first time I've been brave enough to try chicken hearts - much easier to eat than liver! Not bad, I couldn't find a recipe that looked good to me so I just threw it together with things I thought would be good - I did have hot sauce ready just to be safe :) The chicken hearts were from pastured chicken, and organ meat just has so much nutrition!

Those tacos are great, aren't they Crankin? I love her recipes, I've yet to find one I don't like, her cookbook and Well Fed (1&2) are my go-to cookbooks. I still search NomNom's website as well, they aren't all in her cookbook :)

Woke up at 2:30 AM with extreme stomach distress, thought I might actually puke, but I lay down on the bathroom floor for about 20 minutes and I was eventually able to go back to bed. yesterday: Pfannkuchen (german pancake) with raspberries and blueberries and with coffee. Yumm. my pfannkuchen uses non-fat milk instead of half and half. and only 1/4 of the butter. But it still comes out really really good. Such an easy thing a 12 yo can make it.
turkey chilli with beans more of a soup than the thick pasty chilli.
dinner was steamed salmon with garlic mashed potato and peas and salad.
more decaf coffee. dinner

Today: shredded wheat, banana with non-fat milk. leftover Pfannkuchen. lunch leftover salmon ...

Went on a pretty strenuous, hilly 5 mile hike on snowy trails, with my microspikes. It wasn't snow shoe type snow, but there were lots of holes from other walkers. We ended up mostly walking on the frozen snow on the trail side, with an occasional "fall" into the looser snow. It was hard.
S: had banana bread Lara bar (mmm)

Crankin - glad you are feeling better!

Yesterday:
B: eggs scrambled with veggies, bacon, butternut squash/apple hash, coffee
1 hour kettlebell training session (different coach) Learned some good things about technique!
L: Last of the roasted chicken hearts and thighs over sauteed chard and other veggies, fermented veggies
D: West African Chicken Stew and Sweet-Salty Brocolli salad from Well Fed 2. This was the BEST chicken stew I've made so far from this recipe and I think it is because I gave up trying to find sugar-free sunbutter. I tried to make my own again, but THIS time it actually worked. Apparently it helps to roast the sunflower seeds first, apparently that helps persuade them to release the oils. I wanted to eat the entire recipe, but I did limit myself to one serving :) 1 beer

Today
Woke up to news of freezing rain and sleet before snow, so decided to stay home today.

B: made a huge veggie/ground pork/baked egg casserole/frittata (whatever it is), 1 slice nitrate-free bacon, coffee
Kettlebell workout at home - a 500-swing workout broken up with some work on my Jungle Gym
L: more of the West African Chicken Stew and Sweet-Salty Brocolli salad, last of the butternut squash/apple hash from yesterday
D: I've a pastured pork roast braising in the oven, and a couple of sweet potatoes are keeping it company. Will probably have some of both and saute some chard and, perhaps, roast some kale. Perhaps one beer and 1-2 squares of very dark free trade chocolate. I found a local source...which is a bit dangerous!

I want to say again how incredible that homemade fresh sunbutter is - it makes me want to toast some almonds I have and try my hand at almond butter. I won't, however, as I doubt I COULD resist that temptation with fresh almond butter. Sunflower butter isn't my favorite, but it goes SO well in the chicken stew recipe - and who can beat $2 for a huge bag of them? Certainly far less expensive than buying sugar-free sunbutter!

Your wish is my command :) Here is the recipe for the West African Chicken Stew (http://www.nopieceofpaleocake.com/2013/11/recipe-west-african-chicken-stew-from.html).

I've tried to double up the recipe, but my spices must have been off because it just wasn't as good as making a single recipe. Very easy to make, though I must admit I've yet to use the Bay Leaf called for in the recipe. I mean to get it, but always seem to forget it.

YES, agree with both of you! As our bodies adjust to real food, and well-sourced fats, they do seem to become less tolerant to bad foods and cra**y oils. Considering how much better I feel these days, it is worth it!

I wasn't sure which one, so I gave you the first one :)

The homemade sunbutter couldn't be easier. First of all, I cheated and bought a large bag of roasted-but-unsalted sunflower seeds from Trader Joe's. You can buy raw and toast them in the oven first if you want.

Turning them into butter couldn't be easier. I tossed roughly 1.5 cups of the sunflower seeds into the small bowl of my food processor. Let it run on low for 5 minutes. stir. 5 more minutes. stir again. 5 more minutes and when I opened it to stir/scrape down the sides I had sun-butter! The consistency was a bit coarse, probably because I was making so little, but it was indeed nut-butter, NOT the moist 'nut-flour' than I had last time.

I'm in 100% agreement, too! I rarely eat out these days and when I do, I stick to known items so that I don't pay the price later on.

I have another cookbook recommendation for your folks - The Ancestral Table by Russ Crandall. It's a little less traditional paleo in that he does include white potatoes, rice and some cheese. He also uses a lot of gentle cooking methods, so there are not too many short cuts to be made. Gorgeous book and I marked a TON of recipes that I want to try. I've only made one recipe so far and it was delicious! (Colcannon - essentially mashed potatoes with leeks, kale and butter) My husband gobbled up the leftovers and usually if something has kale in it, he avoids it after the first serving!
