Anyone know if you can put an iron-on decal on a bike jersey? I asked a guy in my club and he seemed to think it'd screw up the jersey.

The heat of an iron and a cycling jersey? That just brings up an image of melting fabric in my mind!
Of course I have nothing to back up that thought - I'd suggest checking the washing instructions label in the jersy to see if there is a "no iron" indication.
Out of curiosity, I just checked a couple of manufacturer's sites to see if they said anything about irons. The Pearl Izumu site talks about using a dryer on a low or warm heat setting and explicitly says not to use a commercial dryer or a hot setting. Based on that I think an iron is definitely out!

Bummer, thanks though. My friend got me a microsoft jersey as a gag gift, and I wanted to put an iron on of the mac logo over the "o's"Maybe I can find some patches and sew them on.

If you take the jersey to a shop that does decals it should be ok as their machine is the right temp. That's what I did.

OK, now that you have the all clear to add the decals to your jersey... once you have it done, can you post a picture of the altered jersey? Sounds like something that will be good for laughs!
