    This was really good!

    Chicken and Sweet Potato Stew

    Makes 6 servings

    ACTIVE TIME: 20 minutes

    TOTAL TIME: 5 hours 20 minutes

    EASE OF PREPARATION: Easy

    6 bone-in chicken thighs, skin removed, trimmed of fat
    2 pounds sweet potatoes, peeled and cut into spears
    1/2 pound white button mushrooms, thinly sliced
    6 large shallots, peeled and halved
    4 cloves garlic, peeled
    1 cup dry white wine
    2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1 1/2 tablespoons white-wine vinegar

    Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours. Before serving, remove bones from the chicken, if desired, and stir in vinegar.

    NUTRITION INFORMATION: Per serving: 285 calories; 6 g fat (2 g sat, 2 g mono); 50 mg cholesterol; 35 g carbohydrate; 17 g protein; 5 g fiber; 519 mg sodium.

    Tonight my husband and I had Chicken & Sausage Jambalaya. For dessert it was my favorite: Buttermilk Banana Bars!!!

    Snapdragon.. that sounds wonderful! I've been looking for a good slow-cooker recipe. I'll have to try that. I LOVE sweet potatoes.

    We had fresh caught halibut from the waters of the Puget Sound! Caught on my DH's pole, but it had been borrowed by a friend! DH spent all day yesterday trying to get some king salmon, but came home with only a sunburn.

    Mmmm Mmmm good -- grilled with a soy-ginger marinade. WW pasta with asparagus and cherry tomatoes. Bread on the side. Should have had wine, but I just woke up from two nights of work... it's still a little early for me! Just water tonight.

    Shrimp and leek quiche, side salad of spring greens with local strawberries, raspberry vinigrette dressing. Washed down with a glass of sangria. The shrimpies were local too

    It is politically incorrect to buy imported shrimp or crawfish in this part of the country. Besides, ours taste better.

    Ok we had last night for dinner marinated Ahi tuna, lemon pepper (fresh) pasta, and snow pea's (from farmers market) and for dessert my dh had homemade keylime pie and I had homemade lemon/keylime sorbet with waffle cookies!

    Frozen chicken pot pie. I know. Pathetic. But I did get in a 18 mile ride between work and dinner, and used up my "cooking" time so it had to be something quick.

    Tonite we had curried basa fillets (fish) w stir fried cauliflower (w garlic and sesame). For desert we had plain yogurt flavored with unsweentened cocoa powder and stevia (how I get my chocolate fix with no added sugar).

    blackened cajun chicken with salad, accompanied by crispy kale chips and followed with organic chocolate (Dagoba Mon Cherri - dark chocolate, berries and vanilla). Yum.

    You're right. A bit unhealthy.

    I'm trying to convince myself to attend a work-related BBQ tomorrow evening at the worksite..where there will be even more calorie laden food.
