    Working at making emily_in_nc proud by increasing my veggies. Thanks for the reminder! I bought more frozen. Excellent advice.

    yesterday:

    2 eggs and whole wheat toast
    an apple and small bowl of multi grain cold cereal
    sweet potato, corn and cheese quesadilla (I made this up, and it's really good), and a side of spinach
    peach yogurt with nuts, another apple, a kiwi
    hearty vegetable (mostly cabbage) soup and a couple of slices of whole wheat baguette
    some pineapple

    Yesterday
    B: Cereal (rice chex) with 1% milk, 2 cups coffee, glass of OJ, 1 banana
    Lunch: Bowl of chicken vege soup (potatoes, carrots, onions, cabbage, celery)
    Snack: Handful of Almonds
    Dinner: Roasted veges, yellow beets, yellow cauliflower, red onion, potato, green beans, small piece of ham; bottle of beer
    D: Piece of homemade carrot cake

    Good job, redrhodie! I've been preaching roasted veggies, dinosaur kale, and quinoa to my friends at the gym lately. They laugh at me being the poster child for veggies. It's funny b/c as a child I HATED veggies. Now, I just love 'em! Keep up the good work!

    B: whole grain cereal, protein powder, raisins on top, almond milk, coffee
    S: non-fat Greek yogurt (plain) w/blueberry topping (yum)

    <elliptical and weights at the gym>

    L: half a cheddar cheese sandwich on homemade whole-wheat w/lettuce & a little mayo, water
    S1: apple, herb tea
    S2: carrot/celery/spinach/apple homemade juice

    D: whole-wheat couscous, spinach, tomato, onion, and cheese casserole; glass of white wine
    Dessert: cup of hot chocolate made w/almond milk and unsweetened cocoa

    Breakfast: Whole wheat toast with 1 egg, ham and sharp cheddar cheese, coffee
    Snack: Piece of Carrot Cake
    Lunch: chili colorado (beef and pork) with brown rice
    Snack: Bowl of rice crispies with 1% milk
    Dinner: Roast chicken, mashed potatoes, gravy, peas

    This was probably more calories than I needed since I did almost nothing yesterday, but I was bored! That's when I eat too much, when I'm bored.

    Lunch: Pasta with asparagus chicken, onions, olive oil bit of parmesan cheese
    snack: corn chips and salsa
    dinner: roast chicken, peas, roasted veges

    multi-grain toast with Neufchatel cheese

    quesadilla (1 tortilla) with spinach, cheese, soy chorizo, chipotles and corn

    strawberry yogurt with pecans

    baked potato with sour cream, baked sweet potato, steamed broccoli, and roasted onion with garlic. I don't know how my bf can make an onion taste that good, but it's like a miracle.

    tiny left over bit of brown rice pudding with almonds and dried cranberries

    an apple and an orange

    Ah, a 1.5 oz bag - isn't that bad enough? I love potato chips a lot though so you are close as to how many I could really eat if I had access to them!

    That's why I don't buy the things have have them at home. The office bought chips the last time they went to Sams and I just could NOT RESIST! Resistance is futile!
