    It depends on more than just the time for me. If it's a casual ride with friends or my SO I'll just have water for rides of up to 1 1/2 hours. If I'm riding hard I'll take water and a bottle of Infinit for rides over about 45 minutes. Anything much over an hour I'll bring water plus the Infinit.

    The difference between 45 min and an hour may sound picky, but after doing this for a few years, I've really noticed that 45 minutes is a key point for me.

    I usually throw some Emergen-C powder in my water for any ride over 30 minutes. But then, I often drink it anyway as a pick me up even when i don't ride.

    For a multi-hour ride, I use the Emergen-C "Electrolyte" formula. For short rides I use their regular stuff.
    I find it refreshing, like a subtle watery lemonade.

    I use the same! For long rides or even just sitting at my desk.

    As for eating, I know this is not the subject of the thread, but I've read that at about the 40-45 min is the point at which you should eat something to avoid compromising muscle mass too much. I've heard that if you are hungry, it's already too late.
