    For lunch yesterday I had a 600 calorie Symphony chocolate bar - woops!
    That brought my total calories to 1500 at 1:00pm.

    Dinner was, therefore, a salad with vinegar dressing. Had some serious calorie compensation to do!

    It was worth it!

    Ok let's see last night we had Soba noodle's with tofu,snap pea's,red bell's, mushrooms,cabbage with a peanut sauce. For dessert same as the night before. Dh had keylime pie I had keylime sorbet. Oh then around 9:00 we both had a nature's gate pop tart!
    Tonight is fiesta night at my friends house. I am bringing enchilada casserole. Made with ground turkey (don't do ground beef) refried beans, enchilida sauce and tortillas.

    I'm trying to convince myself to attend a work-related BBQ tomorrow evening at the worksite..where there will be even more calorie laden food.
    I swear you eat really healthy to me! I mean yu have fish with almost every meal! That is great! Lot's of omega 3's.

    This early evening was outdoor barbecue at workplace..which is at a construction site. There were over 80 other employees...all half-shivering in near freezing temperatures outdoors in a food tent out in a parking lot. It was catered.

    So this time tonight, I chowed down: 2 grilled chicken breasts, 2 grilled sausages with Dijon mustard on the side, 1/2 red small potato salad, some Greek salad, baby pickles, abit of bread, fresh cut fruit and hot coffee.

    Then buzzed from this industrial workplace...to near home, where I had gelato (chocolate, mango and pineapple choices) with my partner. Already it was 8:00 pm.

    Afterwards my body was ready to crash from high blood sugar. Next time..I will be better.

    Bowl of rice, raw sugar snap peas, and halibut. Nothing fancy for the halibut. Just a tiny dash each of salt and pepper, and grilled on both sides in a cast iron skillet w/ a TBSP of olive oil, and finished off in the oven to cook through. Nice crispy crust on the outside, tender and buttery on the inside. Yummy! BTW, the cast iron skillet finally has a nice coating on it, so the fish hardly stuck at all.

    Enchiladas, beans, guacamole, and a couple of Dos Equis! All served by a very nice waiter at our favorite restaurant.
