Make vegan desserts! I'm a vegan baker and always manage to have cupcakes and cookies on hand. I linked to a vegan blog that I love and have cooked from many times. The vanilla cupcakes there are my go-to. The only item you probably don't have in your kitchen right now is the almond milk and since nuts are out use soy milk instead anyway. I've made wonderful 'buttercream' frosting using Earth Balance margarine (it's non-hydrogenated) instead of butter and soy milk instead of cow milk.

ETA: The brand Enjoy Life makes allergen free chocolates that have worked pretty well for me.
