I have the Frogs but my bike fitter is advising to go with maybe Look pedals in the future. What is the shim kit? Will this be advantageous to some of us with knee issues?

the shim kit will help with those folks that are having issues with the pedals unclipping when they don't want them to, instead of doing surgery, as I posted the PDF on another thread on how to do that.
Wow, I'm surprised the frogs have not helped your knees. More float than any pedal out there.
