CC, this sounds great. I saw the bibimbop recipe you posted but knew it was unrealistically complex for me (isn't that what restaurants are for?). This one seems doable for me!

I'm making this for dinner tonight as it looks delicious! Another recipe found in the latest Cuisine(NZ) magazine, p 91
2tblspns rice vinegar
3 tspns caster sugar
1/4 tspn salt
1 cup short grain rice
4 tblspns miso paste
2 tblspns mirin
1 tblspn peanut oil
200g firm tofu cut into 2cm chunks
4 cups chopped winter veggies-pumpkin, carrot, kumara, parsnip
2 cups mushrooms
1 1/4 cups water
1/4 cup pickled ginger
2 tblspns black sesame seeds
4 spring onions
soy sauce & wasabi
Stir rice vinegar, caster sugar, & salt til dissolved
Heat oven to 200C
Whisk together miso paste, sugar, mirin, oil then add the tofu, veggies & mushrooms, toss n coat. Spread on a baking tray lined w baking paper n roast for 25min
Cook rice & once done pour vinegar mixture over then add roasted veggies n tofu-mix carefully. Top w pickled ginger, black sesame seeds n spring onion
Serve warm w soy sauce & wasabi on the side
