    Rum Cake to keep you warm!

    I just got back from 4 days in the British Virgin Islands (it was for work--I swear!) Since I couldn't bring back rum cake for all my TE buddies, here is the recipe. Think warm thoughts (Yes, it tastes like alcohol. No the rum doesn't burn off--don't take to work or give to the kids! You'd be surprised )

    Golden Rum Cake (optional: use chocolate cake mix & pudding mix)
    1 cup chopped walnuts
    1 (18.25 oz) package yellow cake mix
    1 (3.4 oz) pkg instant vanilla pudding mix
    4 eggs
    1/2 cup water
    1/2 cup vegetable oil
    1/2 cup dark rum
    1/2 cup butter
    1/4 cup water
    1 cup white sugar
    1/2 cup dark rum
    Preheat oven to 325 F. Grease and flour a 10” Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.
    In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/2 c. water, oil and 1/2 c. rum. Blend well. Pour batter over chopped nuts in the pan.
    Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate. Brush glaze over top and sides. Allow cake to absorb glaze and repeat until all glaze is used.

    To make glaze: in saucepan, combine butter, 1/4 c. water and 1 c. sugar. Bring to boil over med. heat and continue to boil for 5 minutes, stirring constantly. Remove from heat and stir in 1/2 c. rum.

    Ohhh...this is the same one my Grandmother makes. It's YUMMY!!! (though I'm not sure it's really that alcoholic at the end...)

    Sounds yummy! I have been down there sailing, your cake would go great with a Pussers painkiller!!!!!!!

    Had my first Painkiller while I was there--YUMMY! I brought back some Pusser's rum and mix

    The rum in the glaze doesn't cook out! Trust me--I've gotten a good buzz off this cake. We figure it's a shot a slice

    In case you are curious, and have some extra rum:

    PainKiller, Official Drink of the British Virgin Islands

    2, 3 or 4 oz Pusser’s Navy Rum
    4 ozs pineapple juice
    1 oz cream of coconut
    1 oz orange juice

    Serve on the rocks. Stir & grate fresh nutmeg on top!

    Sounds yummy! I would bet that if you make it with Pusser's or another quality dark rum it's quite a bit more rummy than if you were to make it with Barcardi or something else light. Maybe that's the reason for the booziness difference?

    Hmmmmm YUMMY. I have never made rum cake....so what is your vote: Yellow or Chocolate cake mix?
    Not sure there is a way to make a "light" or "low calorie" version of this!

    Glaze is made of the last 4 ingredients?

    Yellow - definitely. "Moist Deluxe" if you can find it.

    Nope! But a little slice goes a long way! I've even made mini-bundts out of it.

    1/2 the calories if you give half the cake away! My husband and I tend to try to eat the whole thing in one sitting--so I made in mini bundt pans to give away!
