mmm sounds yummy. If you can find Azumaya silken tofu in your area I love to use it for recipes like this one since it has a lot less of that raw tofuey taste.

This turned out so yummy and it is a protein bomb...
Yield: 4 servings
1 pack silken Tofu (firm or soft)
4 tbs Lemon juice
1 tbs Dijon mustard
1/2 Garlic clove, minced (or one if you like it but it is strong)
1 can Anchovies, drained
1/2 ts Salt
1/3 cup Parmesan cheese, freshly grated
4 tbs Olive oil
1 ts Sugar
Generous amounts of Pepper
In a blender, blend lemon juice, mustard, garlic, anchovy, salt, sugar and pepper. Add tofu, cheese and oil and run blender until it explodes (or the dressing is smooth).
We increased the amount of oil and anchovies over the original. This tastes a bit of the tofu it is based on (i.e. cardboard) - but only until you put it on your lettuce.
We added pan-grilled chicken seasoned with salt, pepper and paprika.
Argh my mouth is starting to water.
