I thought about just making turkey breast. I just love turkey. Kit thinks it will still be too much. I don't have any idea how you can possibly have too much turkey though.

My advice would be to cook a small chicken instead.
Cornish Game hens are very yummy, especially with a fruity sauce, but if you think they are small when you buy them, then wait til they cook and shrink even more! Way too small to stuff, and they are a bit like eating squab. The drumstick has like only one bite of meat, for instance.
I always make roast chicken for Thanksgiving and Christmas because my family asks for it rather than turkey. They really like my roast chicken.
Try looking for one of those "natural" or vegetarian-fed chickens they sell nowadays. Even better, look for a free-range grown chicken. They are smaller (perfect for two people) and taste wonderful and are moist. Not cheap, but they are SO much yummier than those icky greasy fatty giant yellow Perdue chicken cannibal mutants that taste like stale plastic.eeeeewwwwww
A small natural chicken would be wonderful roasted, with stuffing on the side and cranberry sauce, sweet potato, maybe asparagus, and chicken gravy.
I make twin chickens this way for holiday meals, and then I have lots of good chicken meat left over for all kinds of stuff. At the very end, I pick over the last of the chicken and freeze little sandwich size bags of the meat pickings to make chicken soup later on.
If you like to try my roast chicken recipe, it's very easy and very good- I just sprinkle the whole chicken all over with equal parts paprika and Cajun seasoning (McCormick) and roast it at 350 for about an hour and 15 minutes. I don't stuff it because I'm paranoid about cooking meat thoroughly.
I make Stovetop stuffing separately, adding some celery, extra sage, and apple to it, then put the stuffing in a roasting pan next to the chicken, with a piece of foil covering the stuffing very loosely so it won't burn.

I've never made game hens, it's something I've wanted to try. Here's one recipe:

Cook's Illustrated has a whole article on hens, along with recipes for two. I'm not sure the link will work, let me know and I'll send the recipes to you. They have Roasted Stuffed Hens for Two, Roast Butterflied Hens, Wild Rice Stuffing with Carrots, Mushrooms, and Thyme for Two, Wild Rice Stuffing with Cranberries and Toasted Pecans --- dang these are making me hungry!![]()
I'm not into stuffing birds either for that very reason BSG. Just say no to pink chicken meat.I don't even like stuffing for the most part. I make it for Kit. I love roasting chickens. I have an injector and like to really inject a lot of the juices back in. I tend to brown the chicken first to sear in as much juice as possible and then cover it. Then inject back in what I can over the last 1/2 hr or so. I usually slide a few cloves of garlic and dash some spices on top too. It works for me. I really need some turkey though. I may just go the route of buying just the breasts and baking that. We have a lot of natural ones to pick from here. That's a plus living here compared to where I'm from. Back there, they love additives and fat.
I may keep the game hens for another meal just because I really love turkey leftovers for Thanksgiving. We went to visit friends last year and I tried the tofurkey. It tasted good but the texture was a little offputting. I knew it going in though so it didn't affect me too much. I've definitely come to like tofu more over the last year.
Tons to do on my week off and I still haven't left the couch. *sigh* Off to clean and make room for the tree...

A reasonably sized turkey breast won't be too much for 2, if you like leftovers. That's what we usually do. I do love cornish hens - my mom has a recipe where they're stuffed and quite yummy. Roast chicken is good too - but for Turkey-day you really need a turkeyAt least if you like them
We just cooked a tofurkey (as an experiment). I didn't mind the "meat" - I eat tofu, tempeh, etc all the time - but I really didn't like the stuffing. I've never seen a non-stuffed version. And I LOVE stuffing (but usually cooked separately).

Snap, those recipes titles make me drool too! But- any stuffing you make for cornish hens would mostly have to go on the side since the stuffing cavity inside a cornish hen is about the size of a small chicken egg!![]()
Well you sound like you already know your way around a roast chicken! That sounds really yummy. Just go with that and add cranberry sauce, gravy, etc. I'd say!

I'm just gnashing my teeth because we have to go to the inlaws for a catered affair. These days I'll eat the turkey, so Thanksgiving has become a four-day orgy of meat for me. I'm actually very disappointed that we won't be having leftovers this year![]()
