    Sweet Potato Waffles sound good Crankin! If I had a waffle iron...but what I need more is a potato ricer or some other tool that will allow me to shred sweet potatoes and squash properly for hash. I prefer the shredded rather than diced version.

    Yesterday:

    B: eggs scrambled with pre-cooked ground pork and coffee
    1 hour intense Funday workout
    S: macadamia nuts and a few dried cherries
    L: mustard glazed roasted chicken thighs, roasted kale and chard, 1 slice paleo banana bread
    S: 1 beer (Founders Breakfast Stout)
    D: Egg Foo Yong with special sauce - quite good!

    Today:
    B: Last of the Egg Foo Yong
    1 hour group training session - even more intense than yesterday, it finished with my doing a Farmer's Carry with two 50 pound kettlebells for 200 meters!
    S: egg whites and 1/2 small baked yam
    L: Planning on roasted chicken, the rest of the small baked yam, and sauteed brussel sprouts - offices closed due to snow until 1
    D:? Who knows? Time will tell. Probably some thawed beef tips and a salad.

    B: cereal, strawberries and bananas, milk
    snack: few pieces of mango
    L: 1/2 chicken breast
    Snack: gaucamole, chips
    D: roasted cauliflower/potato soup pureed soup w/sprinkle of parmesan cheese, small piece sirloin steak, roasted white and sweet potatoes, roasted broccolini, 1 glass red wine

    Like a cheese grater? I usually use one like this that I got at the grocery store:

    Or, if I'm doing it in quantity, the shredding disk on my food processor. And I use the regular food processor blade to make cauliflower 'rice'. It's ridiculously messy, so I don't do it very often.

    I was good all weekend but I don't remember what I ate so I'm not going to record it here. I will say that I am quite proud that I was able to steer clear of any treats (or sugar) this weekend even on the heels of my indulgence on Thursday night. I certainly had a lot of sugar thoughts and cravings, but I didn't cave and I think that today, I'm past it. Phew!

    B: last piece of sausage, kale and onion frittata, avocado, pineapple, black coffee
    L: sausage and cabbage 'noodles'. clementines
    S: hard boiled egg, banana (if I need this)
    D: chicken and veggie stir fry - I'm trying the stir fry sauce from Well Fed for the first time. Hope it's good!

    Oh, Catrin - I made that banana bread recipe you linked to use up 4 brown bananas. It was REALLY good! Even my non-paleo husband liked them. I added chopped walnuts and nutmeg and made them into muffins and they worked great. Luckily, I have a lot silicone muffin cups because I needed all 18 of them to use up all the batter!
