For me, my body always holds onto fluids for a day or two after a big ride or heavier strength trainig session - it does this regardless of what I may have eaten. Then I take a day off and am always surprised at how much weight I've lost the next morning. Perhaps your body does the same thing?
Weight loss isn't about what you do over the course of one day. It's really about consistency.

I always weigh more after a long ride too - for a couple of days. As long as I am eating less calories than I am burning I know the weight will slowly keep coming off. I use Fitday and log my food and workouts - it is very accurate.
