These muffins are fabulous. With a cheese-and-nut based batter, they are an excellent protein source for vegetarians (or anyone). They are sturdy enough for a biking snack, too, for those who bring real food on bike rides. They did stick to the paper muffin cups when I made them, so I'm looking for a solution to that problem.
I'm ordering a cookbook by this author (Rose Eliott) hoping to find more good stuff.

I once bought this silicone baking sheet which started smoking in the oven when I was making focaccia.
This, I'm assuming, is not normal? I've since tossed it out and have been rather fearful buying another. Have either of you experienced anything like this? what brand did you buy?
Ew. No, I've never experienced anything like that! I have several brands, Kitchen Aid is the only one I can name, but I know I have silicone kitchenware from at least three other non-"name" manufacturers, and never had a problem. One of my spatulas does tend to absorb food odors, another is getting a little chewed up after probably 7 years, that's as much of a problem as I've had with any of it.
I'm guessing your baking sheet still had some mold release compound on it, if that was the first time you used it? I do remember some of my bakeware did seem that way when I bought it. Scrubbed it all really well before first use. Not so easy with the muffin cups, either, but yeah, I hit it all with Scotch-Brite and baking soda.
Interesting tidbit from my DH, who has always been fascinated with spaceflight: silicone was developed for use as gaskets in spacecraft, since it's stable and flexible at such a wide range of temperatures.
