Red or black beans and rice? You could make it the night before. But would be better made in the morning- I think they take 15 minutes? What if you had an insulated lunch box? Then you could take cold chicken, sushi, that kind of thing. My favorite cold pita food is Steakums, mushrooms, green peppers and onions. A good thing to make the night before, keep in the fridge, then stuff the pitas in the morning. I guess if you're vegetarian, though, I'm not much help! What about a bean and cheese and onion burrito? I could definitely eat that at room temp.
