Wow, that seems like a lot of wasted energy, actually.

I rarely peel my potatoes (the skin is the best part!) but if I do need to, my plan is to use my simple, hand-crank apple peeling machine. It's so fast for apples that I'm sure I could peel an entire pot of potatoes faster than it would take to get that water to a boil.
