In Louisiana - they're called crawfish. Up north, we called them crayfish. But then again - we didn't eat them either.
Etoufee is essentially crawfish tails smothered in butter (lots of butter), onions and seasoning. The crawfish "fat" makes it creamy. Very yummy stuff!
And that's a no on the crawfish sushi. Way way way no.*******************
