    Since we need and respect diversity in this forum, I say wait. Pies have a much more esthetic quality uncut.
    Oil is good, grease is better.

    Ohhh...tough call....I'm in the camp for wait to share with your sweetie (but then I'm strange - I always enjoy food more when I'm sharing with others)....

    Now the important question - do you have a favorite recipe? (your cookie recipes were knock your socks off good!)

    Not only that, you could have your peice for quality control purposes of course. Then lovingly plate a large peice complete with acoutrement - whip cream, cheddar cheese, ice cream - thereby preserving the presentation, possibly even bettering the presentation of a whole pie.

    Now next question - who here thinks it's just wrong to eat cheddar cheese with apple pie?

    Pies have feelings, too. Imagine if you were a pie, lovingly crafted and baked to perfection, a symbol of Americana, smelling sweetly, innocent, waiting to be partaken upon by the hard-working and faithful Thom...

    Then you find yourself unceremoniously stabbed by a stainless steel knife... carved up into neat slices... pieces of you torn apart...
    goopy apple sauce dripping down fingers...
    sweet apple chunks slowly... falling... onto... the... plate....

    This is a freakin' huge pie. My pie dish is ten inches across and the apples top out about five inches above the dish.

    It's actually a rather ugly pie today. The top crust broke as I was putting it on. Actually all my apple pies end up being ugly. I'm crust challenged. But they taste pretty good. It's breakfast food here.

    It's a pretty standard recipe. The crust has a tablespoon of vinegar added to it. It helps keep it from getting tough as you roll it out.

    I add a third of a cup of Scotch to the apples as I put them in along with a sugar, cinnamon, nutmeg mixture.

    Do you test the Scotch?
    How much nutmeg? (Anything < 1/2 a nut is a waste of hallucinogen)

    Both these ingredients are only "effective" un-baked of course!

    Well, if the pie is ugly, it might feel better if you showed your love by having a piece. It might develop issues if left to stew in its own juices, waiting to be admired by a man. As it's creator, I think its your responsibility to make it feel good about itself.
