How does one get bar-end (Shimano) shifters out of the bars so you can switch bars?
And it looks like the bar tape does NOT get tucked into the bar end. Is that right? (trim it with a sharp knife, I suppose.)

I haven't pulled apart my Shimano barcons yet, but I assume they are similar to the old Sun Tour barcons. You'll need to remove the lever by removing the screw on the side. That might be easier if you disconnected the cable, but maybe you don't have to. After the lever is removed, you should see an allen key fitting inside, right in the middle. This will be an expanding bolt that holds the lever in the bar. Loosen it a couple turns until the lever is loose enough to pull out.
The tape probably doesn't fit inside, but depends on the thickness of the tape. Easiest to cut the tape flush and then wind some electrical tape around the end to secure it.
Oil is good, grease is better.

Everything Deb said is correct. Once you get the side stuff off, you'll need a flashlight to see where that allen hole is way deep in there, and figure out the right size allen wrench.
An exacto knife works for trimming the tape. If you tape the bars STARTING from the bar ends it will hold itself down. I actually put a little dab or two of epoxy at the very ends of the tape on itself after trimming the tape, as your hand does a lot of rubbing there while shifting and it will hold better over time.

Lisa described the process for the first part well enough.
I don't tuck tape into bar ends anyway. I can never get it quite right and if you are going to be putting something in there that you may want to take out from time to time (like bar end shifters), it just makes it easier.

That's right, there isn't really space to tuck any tape into the ends under the shifter caps anyway. Too tight.
