ISO ideas -- food gift for a diabetic

Hello ladies,

A friend is currently in the hospital recovering from a problem with her blood sugar. She has diabetes.

When she gets home in a few days, some friends and I would like to give her some prepared food to make things easier for her while she recovers.

Any suggestions on what to give? I was thinking maybe we should just prepare some meat/fish that she could reheat for lunch or dinner. We can contact her sister for input on her likes and dislikes.

Sounds like a great idea, NY. Maybe worth asking sister if she likes pureed veggie soups or consommé veggie/chicken soup? Just thinking it would very nutritious yet not heavy on calories (if one doesn't use milk/cream nor butter. My home recipes never use any of these. Except we might serve with a dollop of plain yogurt.)

Sometimes meat doesn't re-heat all that well, but things like soups or stews (with meat in them) certainly do and you could easily make those acceptable to a diabetic. A big ole pot of chili would come in handy!

I've made casseroles before with spaghetti squash or zucchini instead of pasta.

I make a huge breakfast casserole that just uses eggs, ground meat, and lots of veggies. It also can be good for dinner when paired with a salad - though it has far more veggies than most salads I've a recipe for making lasagna with eggplant rather than pasta, haven't taken the time to try it yet though. Meatballs are small enough to reheat easily ine either oven or microwave, that might be a good idea.

Look around at low-carb recipes or low glycemic index. There are a few recipe sites where you can search based upon positive reviews. I had had good luck doing that. A lot of gluten-free recipes are naturally low-carb, too.
