    D: 2 ww pita crackers, slice of Machengo, glass of red wine. 2 very thin veal scallops, with ww bread crumbs, sautéed in canola oil, with spinach, 1/4 cup whole wheat angel hair, organic marinara, 2 squares dark chocolate with almonds

    I realized I haven't posted here in 2 days.
    Tues:
    B: smoked salmon ups with cream cheese, on sliced zucchini , an orange, coffee
    2.4 mile run
    L: home made chicken salad with almonds and cranberries, an apple
    S: nuts, chocolate bits, cranberries
    D: salad with veggies, steak tips, green beans, glass of red wine
    Yesterday:
    B: egg whites and kale, blueberries, coffee
    Hard trainer work out
    L: sliced chicken over a corn tortilla, with low fat cheddar, green chili salsa, cup of low salt butternut squash soup, an apple
    S: nuts
    D: veal meat loaf with mushrooms, whole wheat quinoa, salad, glass of red wine, 2 squares dark chocolate

    B#1 before boot camp: 8 oz. almond milk, slice of raisin Ezekial bread with soy nut butter
    B#2, before I saw my first client (i.e. I ate in the car ): 2 hard boiled eggs
    S: coffee, finally at 10:00 AM
    L: salad with chicken, chick peas, yellow tomatoes, fig vinegar, an apple
    Lots of water
    S: nuts, cranberries, chocolate bits
    D: I was exhausted when I got home. DH made me a panini of low salt ham, cheddar, with mustard on a spelt roll, with cole slaw and a glass of red wine

    B: sausage/veggie frittata, coffee with cream
    training session, protein shake following
    L: Artisan lettuce salad with roasted chicken, 1 medjool date and veggies, small amount of dressing (home-made)
    D: "Hot plate" made with pastured ground beef (cooked in garlic and onions) and bok choy with spices

    On Sundays I've started something new - cook enough animal protein for at least 5 days, and steam-saute many different types of veggies and roast a squash or two, or sweet potatoes. The veggies aren't cooked all the way, just enough. Makes meal preparation much easier and quicker during the week and allows far more variety. My body needs more than protein and baby spinach or kale This is my first week with this new approach and it seems to be working well. I get home from work 3 hours before bed time so there just isn't much spare time to spend in the kitchen on weeknights. With the right mix of spices and veggies I create quite a variety of "hot plates" without a lot of work or expense.

    S: Milk and whey powder, after lifting
    L: Salad with parmesan cheese and dried cranberries and Ceasar dressing.
    S: Half a banana blended with a cup of frozen strawberries and blackberries. I was hot.
    D: I am going to have a salmon pinwheel. And a small glass of wine.

    S: had a handful of nuts and cranberries both before and after 10K x country ski on easy terrain
    L: 4 slices chicken breast over sliced tomato and avocado, an apple

    1 hour HARD group training session, followed by hemp protein shape

    Catrin: How do you make Pork shepard's pie paleo - sweet potatoes on top?

    L: bowl of beef vege soup, 1 piece wg bread with butter
    Snack - small amount of potato chips

    Mashed Cauliflower on top! Her recipe for mashed cauliflower is pretty darn good, I will be using that again for other recipes.

    Speaking of which, I have plenty of shepard's pie left for dinner tonight, it is SO good

    I don't particularly love cauliflower as a veggie, but the mashed cauliflower is delicious and tastes like a puree you would find in a fine restaurant. I am now using it as a side at least one night a week.

    D: bone broth with veggies, a poached egg and taco meat (sounds odd but quute good). Fresh pineapple.

    L: one chicken thigh, cole slaw, an apple
    S: nuts and cranberries
    D: roasted red pepper soup (very quick home made vegetarian recipe) and one 6 inch whole wheat and flax pita round baked with sun dried tomatoes and a sprinkle of goat cheese, 2 squares dark chocolate
