    left over quinoa and veggies, with some chicken thrown in, apple

    salmon burger without bun, cole slaw, sweet potato, piece of dark chocolate

    I think I'll make it to the end of Passover, although I might be ending it Sunday instead of Monday.... since I have a day at the MFA/lunch with friends, a ride, then dinner at same friend's house.

    everytime I see this post I want to respond: EVERYTHING!

    So I have a random question for you: how do steel cut oats differ in taste from, say, quaker oats? And how do you cook them? I was at the store the other day and stopped by the bulk bin section and saw steel cut oats (they look very strange). It said to cook them for 90 minutes. Egads, man- I don't have that kind of time.

    Tri Girl, I think there's a method where you let them sit overnight? There's a thread about this somewhere.

    yesterday:

    egg white omelette, cheese, half a melon, coffee

    nuts and cranberries

    went out to lunch. had a cup of chicken soup and Cobb salad, which was not a traditional Cobb salad; it was much healthier, with broiled chicken, red pepper, lettuce, a little goat cheese, olives. But, DH decided he was done with Passover. At the end of the meal, I succumbed, too, when I ate one of his onion rings . No lightening has struck me yet.

    small white mocha latte with skim milk (had to stop at the coffee place after lunch)

    swordfish with a sauce of garlic, almonds, orange juice, red pepper, whole wheat orzo, salad, one piece of dark chocolate

    They have a very different texture as they are less processed, and are just plain yummy That 90-minute thing sounds bogus, I cook mine for about 30 minutes and that works fine. I will cook 3-4 servings at the same time, this is the only oatmeal I am aware of that reheats well.

    The trick is to stir them a lot to keep the oats from sticking to your pan overly much. I add the oats to boiling water, let them boil for a couple of minutes until they start to thicken, then turn down to a simmer - stirring frequently - until they are to the consistency that I like. For 4 servings this is about 25-30 minutes, if I am making less it might not take that long. At some point in the cooking process I will add frozen blueberries or chopped walnuts, both, or other things. I also like to mix a little peanut butter in it afterwards with a smidgen of milk. Yummers!

    This works for me, I think there are some here that use an overnight crock-pot method but I can't seem to find it.

    Today is the Eastern Orthodox Christian Pascha, and one of the years it coincides with Western Easter - this only happens about every 4 years or so. Unsure what happens in Catholic/Protestant churches for Easter, but we begin with a service that starts shortly before midnight, goes to about 3:30-4 am, then we feast. Then we go home for a few hours for a nap, and gather again in the afternoon and feast some more and enjoy the company of everyone.

    So I've been feasting and enjoying the day. Lots of great food, good beer, and nary a worry about what enters my mouth. I figure that I can do this two days out of the year and this is one of them.

    So, I have to say that I've been pretty much been eating everything today - Pascha is about the only time I will eat red meat, and someone made some fantastic lamb! Couldn't ride today if it wasn't damp and drizzling rain, too much food and beer - and speaking of beer, I think I hear one calling to me from the fridge

    I don't think I will step on the scales for a few days
