I'll take my tomatoes from the farm down the street with a drizzle of olive oil, lovingly brought back from Spain in my suitcase, mozzarella, and a sprinkle of salt and pepper.

Oh my, this sounds wonderful! The old fashioned tomato sandwich with nuttin' but mayo is a comfort food from childhood, for sure. What about with fresh mozzarella and fresh basil?
I love hummus. Especially MY hummus...but I am with Zen that it doesn't belong even close to my tomato sandwich.
I've a friend who loves PB, tomato and mayo sandwiches... now that just doesn't sound good but like she says, don't knock it till you try it
I like cheese instead of mayo with mine. A nice cheddar, especially if you add it to a BLT is a good sub, or you can forgo the bacon and use smoked cheddar...
Guess I have to go shopping today.
At least I don't leave slime trails.

One of my favorite soups is an adaptation of a Brazilian dish, which likely has roots in African cuisine. The 'broth' doesn't actually involve broth at all. It's tomatoes (the juice out of a can of them), beer, and ground peanuts. I've never put them in because it's too much work to grind them up.
At least I don't leave slime trails.
