    B: 3 slices of ham, red pepper, zucchini, and sweet potato stir fried, side of blueberries and strawberries with a little Greek yogurt. My stomach is still a little weird from the antibiotic.
    S: one slice of uncured bacon
    L: kale, broccoli, orange pepper, with 3 slices chicken breast, and a little egg whites, fried up. an apple
    went on a 3.5 mile hike, which included a 350 ft. climb. I was wearing my hiking shoes and ice spikes, which were fine until we got to the climb and the snow was a little deeper, so it was a lot of work. Had a handful of nuts and cranberries at the top
    S: small skim milk mocha latte
    D: made the beef stew and orange gremolata from Well Fed. Had a green salad with tomatoes and green onion, balsamic vinegar. glass of red wine.

    B: eggs scrambled with mushrooms and spinach, 1 slice fresh side, coffee
    45 minutes spinning (solo, at gym) - felt good, no pain
    L: chili over baby spinach, 1/2 cup blackberries
    S: 1 slice baked fresh side (might as well call it bacon
    D: Beef tip roast salad (sliced sauteed beef tips, onion, and mushrooms over fresh parsley), strawberries

    Today:

    B: beef tip roast from dinner and 2 eggs, coffee
    1 hour hard group training session
    L: very last of the beef tip roast, banana "muffin cup" (banana, 1 egg, almond butter - all microwaved together - yummier than it sounds
    S: 1 slice bacon
    D: Shepherds Pie and sauteed Lacinto Kale with a few blackberries for dessert. This is the first time I've made this recipe out of Well Fed (I used ground pork rather than lamb), while it fell apart and I didn't have enough cauliflower for the topping - it tasted very good - so much that I ate more than I should have...I will make this again.

    The same thing happened to me when I made the Shepard's Pie. I'll try again, too.
    I am exhausted from 2 hours of Well Fed cooking. I love to cook, but, I didn't plan well. I had planned to make the spinach-meat muffins this morning, but I didn't. Got home from a short snow shoe, showered and started at 4:15. I had planned to make the Pad Thai for dinner, too. I hadn't cooked the chicken thighs (obviously no grilling), and even though they only take 25 minutes to cook in the oven, the muffins took 40, and I had to prep the Sunshine sauce, and eggs, veggies.
    It better taste good. Going to put it together now.

    I love the Sunshine sauce, and did enjoy the Pad Thai when I made it. This kind of cooking is teaching me how to be more thoughtful about my shopping and how better to organize my cooking time/kitchen. I certainly do enjoy having the fruits of my labors throughout the week

    I have no issue with the shopping, as I always have planned the meals and make my list accordingly. The Pad Thai was delicious! Since I am allergic to peanuts, this was a great sub for me. However, I did use my soy nut butter instead of sunflower butter, as the only sunflower butter in my regular grocery store had sugar and other gross stuff in it. I will probably sub almond butter I get at the natural foods store next time, as well as have pre-cooked chicken.

    B: DH made me a breakfast sandwich on Ezekial bread, with 2 poached eggs and chicken sausage, as well as a bowl of blueberries and orange slices. I've had a good eating week, so I am not guilty about the Ezekial bread, as it's better than the white flour waffles he usually makes! But, I had too much coffee.
    L: We went to do a couple of errands in the snow storm, and then went to a restaurant for a late lunch. I had a cup of chicken-veggie soup (good, but too salty), and a very plain salad with arugula, grilled chicken, roasted red pepper, and a little sprinkle of walnuts, with vinaigrette.
    S: nuts and cranberries, with chocolate bits
    Did a 3.5 mile snow shoe in the heavy, wet snow. I didn't bring my poles and it was very tough going up the ridge to my street. I'm tired!
    D: Paleo Pad Thai with spaghetti squash noodles, chicken thighs, red cabbage (I hate snap peas), sauce as noted above, and a sprinkle of almonds and cilantro.

    Mashed Cauliflower on top! Her recipe for mashed cauliflower is pretty darn good, I will be using that again for other recipes.

    Speaking of which, I have plenty of shepard's pie left for dinner tonight, it is SO good

    I don't particularly love cauliflower as a veggie, but the mashed cauliflower is delicious and tastes like a puree you would find in a fine restaurant. I am now using it as a side at least one night a week.

    I didn't use the frozen florets she recommended, but as I had a fresh head, I just steamed it until very soft so there wasn't any problems with it getting waterlogged. I HAVE, however, begun to suspect that I need a larger food processor....

    I use the fresh, too. I microwave (gasp) it in a little water for 10 minutes and just throw the pieces in the food processor.
    B: 6 oz. almond milk and 2 dried apricots before boot camp, 2 eggs over easy on top of kale, with 3 slices low salt ham, an orange, coffee
    S: more coffee
    L: left over Paleo Pad Thai, an apple
    S: nits and cranberries
    D: home made butternut squash soup (so easy), and a salad with lettuce, avocado, left over chicken thighs, sprinkle of goat cheese, chocolate vinegar and oil, glass of red wine

    When I read your posts, I always feel like I eat way more than I maybe should be!
    B: Butternut squash, apple & bacon hash with half a turkey sausage thrown in. 1 orange, coffee w/cream.
    S: Coffee w/cream
    L: 2 tblsp. mixed raw nuts, Spaghetti squash fritter, 1-1/2 slices meatloaf, mixed baby greens with balsamic vinaigrette dressing.
    S: 1 tblsp. mixed nuts & banana
    D: pork loin chop, brussels sprouts, sweet potatoe fries, slice of paleo apple tart with tea

    Maybe it doesn't look as bad when I write it down!
