What saddles have you tried?
When I was doing spin classes at the Y, the saddles there caused me tailbone pain, every time. It would last for several days after. Ugh. I've never had this problem on my mountain bike, though.
One other thought, though -- is it possible that it's not the seat, but the geometry of your bike?
Do you know where your sitbones are, and is your weight resting on them while you ride?
