Congrats on finding the perfect (except for the paint job) bike! Bring her tomorrow along with Dulce de Luna and we can go to the paint store and find some cool colors. My kids would love to paint something while we're out riding. I'm sure your Bianchi would look fabulous and you wouldn't need to invest in bar tape.
