I've never tried baking steel cut oats. I just cook mine in a rice steamer. They come out nice and a little chewy, just the way I like them. If you want them creamier add more liquid.

I have never made steel cut oats by baking. I have, however, eaten them made that way, but didn't inquire about the details. I'd start by doing it the same.
Also, one can use steel cut oats one for one for arborio rice in risotto. Really tasty.
