And no, I haven't peed on itI am a little frustrated. I hate white saddles, but I bought this one because I got a killer deal on it. I have the same saddle, but in black on my MTB.
I don't use lotions or creams, so it can't be that. The only thing that could be touching it would be sweat (I do a lot of that) and chamois cream I suppose could theoretically seep through the shorts.
Any thoughts?

What have you tried so far? It is turning yellow all over or only in certain spots?

I'd put my money on sweat. If it's one of SI's leather-covered saddles, try regular soap.
At least I don't leave slime trails.
