    1 hr mat Pilates

    (Lunch was not as planned - I had forgotten my Pilates clothing so I had to go home at lunch and that was all we had that I could prep quickly!)

    L: sausage and cabbage 'noodles', clementine

    B: egg whites with a couple of slices of ham and chicken, green chili salsa, 1/4 avocado, an orange, coffee
    S: handful of walnuts
    L: salad with chicken, black beans, sprinkle of low fat cheddar jack cheese, tomatoes, lettuce, salsa, side of blueberries and strawberries
    12 mile hilly ride
    S: 2 dried apricots, piece of matzah with margarine
    D: It's Restaurant Week, so we went to the Blue Room in Cambridge. You get a 3 course dinner for a fixed price. Except for the dessert, I did fine. Had a shaved veggie salad for my first, grilled Arctic Char on a bed of parsnip which looked like a potato pancake, and an upside down apple crumb cake with vanilla ice cream. The portions were smaller, which means they were normal. I could have done without the dessert and I left most of the cake part.
    And I had 2 two glasses of rose wine. Feeling very spring-like.

    B: fried matzah (it's like French toast with matzah), 2 chicken sausages, blueberries
    L: salad with lettuce, black beans, tomatoes, chicken, salsa, an orange
    22 mile ride, ate a handful of nuts, cranberries, and chocolate
    S: glass of almond milk, two dried apricots
    D:a few slices of red pepper with hummus, flank steak with chimichurri sauce, sweet potato, broccoli, salad, glass of rose wine, small scoop of chocolate frozen yogurt

    L: Tuna salad with lettuce wrap
    S: banana
    Short bike ride
    D: Sauteed shrimp/veggies with jicama "home fries" first time I have made or eaten jicama and missed the part where it said to slow-cook the jicama first. Still good and cooked with Parsley.

    Yesterday:

    B-oatmeal with skim milk, fresh strawberries, blueberries
    small slice of Easter stollen cake-bread, 2 cups of tea with skim milk

    Snack- coffee with milk, a small slice of cornmeal savoury bread (near end of a 35 km. ride)
    Tea with milk later, a tangerine, small slice of goat cheese
    more tiny slice of stollen

    Dinner-smoked salmon sandwich on French baguette with tomato, onion, goat cheese, basil, mustard
    Tea with milk, a chocolate handmade EAster egg

    THis is not ideal..

    B: eggs scrambled with veggies, fresh side "bacon", coffee
    14 mile easy bike ride
    85 minute hard group workout with a protein shake afterwards
    L: beef shanks in broth with spinach and a poached egg, sweet potato
    D: Moroccan Meatballs over cauliflower-rice with Velvety Squash - and both were lovely! I was going to make some cauliflower rice pilaf but am tired of cooking, will probably make it tomorrow night.

    HERE is the recipe for the velvety squash - and it is VERY good. Any winter squash or even sweet potatoes will do - I chose to use kobacha squash. I really like them and I can cut them far easier than butternut squash.

    B: very small endive (the leaves fell apart) stuffed with low fat veggie cream cheese and lox, piece of gefilte fish, an orange, coffee
    L: chicken leg, 1/4 avocado, cup of roasted red pepper tomato soup, an apple
    13.5 mile windy and hard ride
    S:walnuts, cranberries, chocolate (a handful), followed by 2 little pieces of Machengo cheese about an hour later
    D: DH made blueberry waffles, which I ate with walnuts and one very spicy jalepeno chicken sausage, 2 squares dark chocolate

    My weekend eating was nuts. Well, not actual nuts! I did not eat anything that would be considered 'off plan' but my eating wasn't good. Except for a good breakfast each day, I hardly ate normal meals. I snacked a lot. I also biked on Saturday (yay!).

    Today things will be more back to normal on the food front (I hope!)

    B: eggs with mixed greens, bacon and scallions in them, sausage patty, few pieces of roasted sweet potato
    S: banana with almond butter
    L: chicken apple sausage, steamed mixed veggies with olive oil and seasonings, apple slices
    S: (if needed) hard boiled eggs
    D: salmon, asparagus, green salad, blueberries

    Catrin - I've made that recipe before (Velvety Squash) but I found it was WAY too garlic-y for me. I probably should have been smarter and recognized that when she said a head of garlic, she didn't mean a head of home grown garlic which is much stronger than most store-bought stuff. I should try it again and cut it in half, at least.

    I like garlic I only made a small squash so I cut the garlic in half. I didn't have pecans so I used what nuts I had. Very tasty and a different way to make squash and to get some good carbs into my diet.

    L: 3 very small left over chicken pieces, about half a cup of black beans, an apple
    S: corn tortilla with hummus, a few nuts
    D: taco on a bed of lettuce. No shell, ground turkey with home made taco seasoning, home made guacamole and salsa, dish of strawberries, 2 squares dark chocolate
