    Cook on Sunday evening? I am starting to think about this as well. Right now it doesn't impact my outside schedule since I don't really HAVE one right now...

    That could potentially work, if I'm not racing on Sunday that week. I think it's going to come down to a week-by-week decision about when I have time to cook. Any ideas for paleo-friendly foods that don't require much prep? I would kill to find a company that makes paleo frozen foods, just to have as a back-up plan.

    Cook a bunch of protein in advance, freeze it in single serving portions, and then keep a lot of fresh veggies or salad ingredients in the fridge for a quick stir-fry or salad? It is easy enough to thaw single servings of protein or simply set them in the fridge the evening before to slowly thaw..

    I do the same thing, so don't feel bad This is certainly far more cost-effective then buying some "paleo-food", paying more for the marketing than anything. This also got me to thinking as well...I am going to invest in a better cooler for my car so I can take food with me on my warm weather excursions. My little cooler only lasted 1 season before I somehow managed to poke a hole in the bottom
