I have a friend who enjoys really hot food - so we had him over for Thai and I made a dish that had some ungodly amount of those super hot tiny little peppers chopped up in it. The first step was to stir fry the peppers - tip *do not* have your face over or anywhere near the hot wok when you dump them in..... I think I know what it is like to have been pepper sprayed.... I literally couldn't breathe and I couldn't see. We had to open all the windows in the kitchen and turn on all the fans to clear out the pepper fumes before I could finish cooking.

Same reason Cajun crawfish boils are done outside, the seasoning mix has cayenne peppers in it, and you don't want that steam in the house.
