Frittatas bake relatively quickly and/or can be reheated easily. I just made one this past weekend that had ham, spinach, potato, onion and a bit of white cheddar in it. The potato and onion are cooked on the stovetop first and then the egg, spinach, cheese and ham mixture are added to it as it goes into the oven for 15 minutes. Of course, you can put just about anything into a frittata.
