Honestly, I think I'd buy 2 bikes if I were in your situation: a cheap singlespeed for errands and beach trips, and a nice steel road bike with "road sport" geometry for long road rides and light touring. Something like the Gunnar Sport or Soma ES would fit the bill (for me). Of course, this all hinges on having enough storage space.

I would consider any Soma to be mighty steal-worthy, if I were one to steal bikes, which I am not. Just sayin. If you want a bike that will not be attractive to thieves, get an old beater bike. Anything else is going to be shiny and worrisome when you leave it somewhere.
Ahhh....I forgot to mention that I can get quite a nice discount on the Surly bikes as I'm working for a LBS that is a Surly disturb. This is also motivation to want a Surly. ;-)
I'm going to ride a LHT today and then research the heck out of the X-check. I think the head instructor in the ladies cycling group I belong to rides a X-check until Tri training when she busts out her Orbea road bike. I'm going to talk to her tonight.
Anyone know the weight difference between the X-check and the LHT in the same size?

Awesome! I was *this close* to going to a couple of my local shops to try one of these out when my frugal side took over again. They are so pretty. I prefer the bar end shifters...who knows, maybe I'll get one yet. I DO have a milestone birthday this year...

Worked well for me in rough areas so far.
Also, go ahead and scrape the logos off your Surly if you're worried about theft. The head-badge too. You could get a hand made head-badge to replace it.
And always, carry a big lock. Something with a small-shackle as long-shackle gives more pry-bar room for thieves. I lock all my bikes (beater or not) with two locks. Yup. Over cautious, much? Maybe.
