Yeah I was eyeballing the big carton of egg whites wondering if it was a better value than a tray of 18 large eggs. There was no estimating in that fashion. Still, I have a place for the yolks. Once I'm doing making my egg whites, I just dump the yolks in the pan while it's still hot and they cook on the residual heat. Then chicken treat time!

I buy the big carton of egg whites. I started out just dumping the yokes a few years ago, but since I buy organic eggs now, that's way too wasteful and expensive. We manage to still go through quite a few eggs a week, even with me using the whites from a carton. Sometimes I mix the whites with regular eggs, sometimes I just eat regular eggs. But, since this is the only way I can up my protein at breakfast (I'm allergic to whey), it works.
