My mom is Celiac - that means she can't touch anything that has ever touched flour. If she eats something that touches a pan that had flour in it 2 washings ago, she is violently and completely ill to the point of having to go to the hospital. (last night someone put blue cheese dressing on their salad, then gave her a olive off of it that hadn't touched any dressing and, well, she's laid up today incapable of functioning)
I am gluten intolerant - that means if I eat a piece of bread I can't go too far away from a bathroom for 24 hr but will be fine. I can eat blue cheese just fine, and love the stuff.

I think it's important to know the levels you need to be prepared. I have 2 cutting boards in my house, 2 crock pots, 2.... one "gluten free" and 1 for every day use.
