Reesha - that looks incredibly delicious and thanks for the recipe!

    Yesterday:

B: Trader Joe's Whole Grain hot cereal (rolled oats, rye, barley and oats) - didn't have time to make steel-cut oats) with dried cranberries, walnuts, and skim milk. 2 scrambled egg whites and coffee

20 mile windy bike ride - had 1/2 a Cliff bar during the ride

L: Baby spinach salad with dried cranberries, pecans, a touch of blue cheese, vinaigrette dressing and a roasted/skinless chicken breast

S: tried making a smoothie: banana, skim milk, blueberries. It is a beginning

D: Garlic chicken sausage on a small whole wheat bun, green beans, 1 beer

2 or even 3. I actually added the silken tofu for the first time tonight (instead of a third avocado) and I'm afraid I'm a bit gassy this morning

Some people might handle the tofu just fine though!

This is good to know, I will add more avocado and leave out the tofu. It has that affect on me as well I love avocados but have been avoiding them for their high fat content - I know it is "good" fat - but if I just had small servings of this soup it would be fine. Thanks again! I get in a diet rut and this looks yummy

Just remember that avocados are jam packed with nutrients. I read somewhere that if there was one food that you were most likely to be able to survive off of successfully, it would be california avocados. It doesn't really surprise me. I like to top it with a splash of extra virgin olive oil. But still, if you're sensitive to all fats, definitely save up your fat grams for this delicious dish. Very worthwhile!
