I have a recipe from my grandmother but I don't measure and I'm not very good about putting it into words but here goes . . .
1 small onion
1 package thawed frozen spinach
2-3 eggs (or more depending on size)
A few pieces of sliced ham
A few pieces of sliced cheese (cheddar usually or whatever I've got around)
Olive oil
Pie crust (top and bottom)
Salt and pepper
Heat a splash of oil in a sauce pan and then saute onion until soft. Add spinach and cook a bit to get any excess water out. Then I add the eggs one at a time and stir in quickly. I just keep adding until I get the slightly fluffy texture I'm looking for. Sorry I can't be more specific. Salt and pepper to taste.
In a 9 inch pie dish, place your bottom crust. Add a layer of ham and a layer of cheese. Add in your spinach filling. Put on the top crust, crimp the edges however you'd like, and make a few slits in the top. Bake about 30-40 minutes until the crust is golden brown.
