    I'm not cycling much these days other than short easy rides. I have adrenal fatigue, which makes me ... you guessed it ... fatigued. I need a lot of rest and I need to eat every two or three hours. I'm trying to up my whole foods, veggies, etc.

    BREAKFAST

    Trader Joes Instant Apples & Cinnamon Oatmeal w/ Almond Milk

    Trying to make myself switch to non-instant with no sugar, but someone has to finish the box first! Ha! I have Truvia in my oatmeal when it's not pre-sweetened. I really need to have more protein with each meal and I do find I can't last long on just oatmeal and almond milk. I am more satisfied when I have eggs, so that's my norm ... and what I had for lunch.

    LUNCH

    2 Eggs, sunny side up (organic)
    Half an avocado (not organic, cause it's not as important since I'm not eating the skin ... pricey to do organic, so I try to do the most important stuff organic.)
    3 slices of tomato (organic)
    1 slice whole wheat sourdough toast (with no sugar or preservatives)

    SNACK

    Organic Apple with Organic Peanut Butter ... no sugar added

    DINNER (haven't eaten yet, but this is what we're having)
    Sauteed Chicken Strips ... yep ... organic, uncaged, etc. (was going to grill the chicken, but decided to make the kind my daughter loves, since she won't like what else we're having!)
    Mashed Sweet Potatoes
    Salad

    SNACK

    Might have a piece of toast with peanut butter. I'm really trying to avoid sugar lately, so this is sort of my dessert. I might have a mango instead if they're ripe. I'm really not supposed to have a lot of fruit right now. The sugar makes my adrenals work harder.

    I'm going to a nutritionist tomorrow, so who knows what she'll do to my diet! It's a little scary.

    L: small turkey sausage, Ezekiel bread, apple
    S. Apple
    Pre-ride snack: Cliff Bar

    12 mile ride - too short but will take it!

    D: egg white omelet with a bit of turkey sausage, no-fat Feta, English muffin & skim milk

    13 mile ride in the rain on my hybrid... about 3/4 of a water bottle

    salad with chicken, avocado, left over cous cous, cup of butternut squash soup, an orange

    piece of whole wheat bread and slice of machengo cheese

    panini on a whole wheat roll with ham, cheese, spinach, sweet chow chow relish, cole slaw, handful of veggie chips, glass of wine, 2 squares of chocolate

    I had the same thing for breakfast and dinner

    pack of TJ's nuts and raisins (I like the ones with cranberries better)
    slice of whole wheat bread
    flank steak rubbed with chipolte chili powder (5 slices), with a cream sauce made with goat cheese, whole wheat cous cous with almonds, spinach
    2 pieces dark chocolate

    today and tomorrow= lots of eating and celebrating. Tonight theatre tickets and dinner at 5 Napkins (upscale burger chain new to Boston. I will have the tuna burger). tomorrow lunch at an Italian restaurant after graduation, then 2 parties. I might skip the first one to ride.

    Short (~3 mi, but entirely made up of false flats!) ride
    L: Chocolate chip muffin and a raspberry/strawberry/plain yogurt smoothie
    S: Handful of pistachios, another muffin
    D: Salmon burger w/ onion bun (it wasn't good), lettuce, tomato, red onion. Glass of water.
    ~2 mile walk
    S: bowl of cereal
    At least I don't leave slime trails.

    B: Steel-cut oats with PB and sugar (not a good pre-ride food. It just isn't.)
    ~18-mile ride
    During ride: 3 shot blocks (strawberry!), most of a water bottle
    Post-ride refuel: tall coffee frappuccino thingy with whipped cream. Yes, I will enjoy my whipped cream, dammit!
    Lunch: Out at Panera. Roast beef sandwich (w/ cheese, lettuce, onion and tomato), chips, small Dr. Pepper.
    S: Very small bowl of cereal, water
    S2: 1 chocolate chip muffin
    D: Small amount of garlic fettuccine made by a relatively local company (good for dried pasta!), four beef meatballs, tomato sauce, handful of raw broccoli
    Dessert: Greek yogurt with some strawberries

    Man, I eat a ton on ride days. I do notice, though, that I'm not mindlessly snacking so much.

    I don't even want to say what I ate yesterday, but here goes.

    2 eggs over easy, 2 slices of Machengo cheese, ciabatta roll with olive oil, an orange, half a cup of coffee

    lunch at a very nice Italian rest. after graduation: shared appetizer of the most fabulous stuffed ricotta, proscutto, olives, 2-3 small pieces of bread, main course of fusilli in tomato sauce, 2 glasses of red wine, lemon sorbet

    cup of tomato red pepper soup, scoop of chicken salad, piece of whole wheat bread

    I played 2 singles tennis matches back to back, probably about 3 1/2 hours of tennis and ate 3 handfuls of pecans, some watermelon between matches and a small piece of chocolate zucchini cake after

    1 chicken thigh, roasted new potatoes (red and yukon), salad with cucumbers, red bell pepper, avocado, italian dressing, and blue cheese crumbles
    small piece of chocolate zucchini cake

    L: salad from grocery store, with lots of veggies and chicken
    quarter of a Luna Bar before 23 mile ride
    finished the Luna Bar after the ride
    D: grilled eggplant, drizzled w/ olive oil an melted goat cheese with whole wheat cous cous, mixed with canelloni, 2 squares of chocolate
