Here is one that I've been using. It is a "looser" type of granola...not clustery like some. I mix in a few teaspoons of it into my greek yogurt everyday for some nice texture and crunch. Sorry I do not have the calorie or nutritional data on this recipe.
4 cups Rolled Oats
1/2 cup wheat germ
1/2 cup ground flaxseed
1/2 cup unsalted pepitas (raw pumpkin seeds)
1/2 cup unsalted raw sunflower seeds
1/2 cup unsalted soy nuts
1/2 cup chopped walnuts
2 tsp cinnamon
2 tsp vanilla extract
2 Tbl butter (I use "light" butter)
2 Tbl brown sugar
1/2 cup honey
1 cup dried cranberries (or any other dried fruit)
In a large bowl, combine oats, wheat germ, flax, seeds, and nuts. Add in the cinnamon and stir until combined.
In a small saucepan, melt butter. Add honey, vanilla, and brown sugar and heat on low just until warm and melted...stirring constantly.
Pour the warm honey mixture over the oat mixture and stir until combined.
Line a large, shallow baking pan(s) with parchment paper. Spread a thin layer of the granola mixture onto the lined baking pan(s) and bake at 325 for 30-35 minutes. Stirring the mixture about halfway through. Let granola cool before adding the dried cranberries or other fruit. Store in an airtight container or ziploc bag.
