    I used uncooked, quick cooking oats. Those pancakes are so different from any other pancake I have made before. You really have to keep them small, or they don't cook in the middle, btw.

    Not pancakes but...

    super tasty, and you can make it ahead of time. I made this yesterday for the first time and it will be a regular. I substituted whole wheat flour for white, smart balance for butter, vanilla greek yogurt for the plain, and chocolate chips for the peanuts, and didn't make the glaze.

    I've made these for a quick breakfast on camping trips.
    Cottage Cheese Muffins

    I also make sure to have washed and cut-up vegetables for quick and easy snacks. Raisins and walnuts. Bananas. Greek Yogurt with some granola.

    I like to make these ahead of time too and enjoy them while the kids and DH are eating hot dogs or burgers.
