    I just use plain, non-fat yogurt. Sometimes I mix in a little low fat mayo.

    I'm probably not a very good person to respond, since I detest mayonnaise and anything that resembles it...but olive oil is great where mayonnaise is normally used.

    well, I must admit my use of mayonnaise is fairly limited. These days I only use it for egg salad sandwich, and that happens maybe once a month.

    But what I'd like to know is, if olive oil can be used as a substitute for mayo, I don't really see it happening with egg salad?

    I use it so rarely that it's not even worth it to me to buy it. Homemade is so much better anyway, and the Joy of Cooking blender recipe is super easy.

    Some olive oil can be a little strong. Usually I use canola (organic only, because almost all other canola is GMO) or safflower.

    Can't help you, there. I don't do egg salad, either.

    But if you just want some on your BLT, olive oil is great.
