    Tonight we are having salmon glazed in honey mustard w/ toasted almonds over basmati rice with a nice big salad.

    Hm...I think dinner tonight may be peanut butter-sesame noodles with chicken. Veggies will either be peas or a salad.
    At least I don't leave slime trails.

    After a 40-mile ride and next to no lunch - whatever I can lay my hands on

    It looks like chicken, Basamati brown rice, and broccoli - and a small green-leaf salad. And a beer.

    Lamb chop, roasted brocolli drizzled with grapeseed oil, sweet corn on the cob. Sipping a lovely homemade (no mixes) margarita while it cooks.

    Then back to the Girl with the Dragon Tatoo after.

    Meat: Chicken breast dipped in a butter-lemon juice-spice mixture, then baked (I used garam masala with a touch of Madras curry powder for heat)
    Carb: Corn salad. I used freshly roasted corn, half a seeded jalapeno, lots of cilantro, lime zest, part of a green onion, and garlic. Dressing consisted of melted butter with lime juice, cayenne pepper and cumin.
    Veggie: Sauteed baby spinach with garlic
    "Weird" side: half a baked-then-broiled peach with a balsamic glaze and a bit of blue cheese.

    I think I'm doing the dishes, then getting out of the house for a while. It's hot, not aided by my doing all that cooking.
    At least I don't leave slime trails.

    After a long vacation, it's good to be back preparing one's own meals. And no it's not BBQ meal since BBQ's are forbidden on our condo balconies.

    Am making focaccia with sundried tomatoes, red peppers, onions, garlic and feta cheese.

    Dessert focaccia with fresh blueberries, raspberries, sliced apricots drizzled with honey, spiced with cinnamon, fresh ginger root, cardamon, nutmeg, and crushed aniseed. It's mixed up creative.

    Grilled chicken marinated in lemon, olive oil, and garlic that's served with a lemon-Dijon mustard sauce. I also made some green beans and roasted red potatoes from the local farmer's market.

    Ooooh, I made a really healthy dinner tonight!
    A big salad consisting of....

    Fresh picked from my garden:

    Butterhead & Simpson lettuces
    Dark red beet leaves
    scallions
    Sliced (cooked and chilled) chioggia beets
    cherry tomatoes

    and added from the store:
    cucumber
    fresh mozzarella

    Vinaigrette dressing

    a glass of milk

    For dessert: NJ blueberries and non-fat yogurt.

    I feel so veggie-pious today! lol!

    I've been using the livestrong website to track my nutrient totals and when it came to dinner tonight I was nearly at a loss. Somehow I managed to exceed my sugar 'daily allowance' earlier in the day by eating a salad comprised mainly of roma tomatoes (after having raspberry jam at breakfast), and my fat intake was also slightly surpassed. I'm hellbent on keeping my fat and sugar under my daily allowance total so tonight for dinner I had 4 scrambled egg whites and lightly salted cucumber spears. booooring

    I had a baked chicken breast with stir-fry veggies and the beer from Saturday that I never got around to drinking. For a snack later I had some no-fat cottage cheese and an apple.
