    Tonight - grilled chicken thighs (marinated in lemon/olive oil marinade, parsley, and whatever other fresh herbs I have in the garden); green beans; sliced tomato, cucumber, red onion salad with vinagrette.

    Maybe some ice cream for dessert? Or, maybe not? Just depends if I want to eat too much or not!

    I'm probably going to spell all of this wrong, but last night my husband and I decided to go get Indian food at this vegetarian/vegan place and it was delicious... And to think I didn't like Indian food until a year ago!

    We had Potatoe Pakora's, Paratha, Pulao Rice, and for desert we had peanut chew candy bars... mmm mmm!

    It's Monday. I am having my ultrameal shake while everyone else is having misc leftovers,
    DH: hamburger, corn on the cob, baked beans (from yesterdays cookout)
    DS: tomato soup with noodles and veggies (from Saturdays dinner)
    DD: I dunno. Probably a variety plate of cut up veggies, apple slices with PB, graham crackers.

    Spoke, your dinner tonight sounds a lot like our dinner last night: grilled chicken quarters, skin removed, marinated in olive oil with garlic, toasted cumin and fresh-squeezed juices of lemon, lime and clementine; grilled asparagus and sliced tomato topped with a drizzle of olive oil, a little s&p and a basil leaf each. Dessert was dark chocolate gelato.

    Tonight is an experiment. I am cutting up a bunch of fresh from the market tomatoes (mine are only little green things right now) and sautéing in olive oil and garlic, mixing in some chopped basil (which IS straight from my garden) and tossing with pappardelle pasta, ricotta and a little left-over spinach that I have on hand.

    Baked some chicken breasts last night. I think I'm having salad tonight...walnuts, goat or feta cheese, half a chicken breast and spring mix. Maybe some cherry tomatoes if they look good. I'll pick up some fruit too.
    At least I don't leave slime trails.

    Cooking for the kids tonight...

    Cheezy Chicken Cups

    2 Tubes refrigerated Biscuits pressed flat and put in muffin cups filled with the following mixture:

    1 can cream of chicken soup
    1/2 bag frozen peas and carrots
    Chopped cooked chicken
    1/2 C shredded cheddar cheese

    Bake 350 degrees for 20-25 minutes.

    I travel a fair amount to Seattle--is this restaurant right in the city? I'm a veg and love Indian food. I'd love to know the name!

    I'm home alone this week, so tonight I treated myself to wild salmon, marinated in lime juice, soy sauce, honey, and canola oil, accompanied by a salad with romaine, grape tomatoes, shaved parmesan, olive oil and balsamic vinegar, and a sweet potato. I just finished it with 2 squares of Trader Joe's dark chocolate.

    Sounds tasty, Crankin.

    Salad it was. Quarter of a chicken breast marinated in EVOO, honey, herbs de Provence, S&P for a little over a day (oops!), crumbled feta and walnuts over several handfuls of spring mix. The marinade for the chicken could have used a little extra salt if I were serving it on its own, but with the feta to add salt, it was pretty good. Just enough sweetness to make you go "what's that?" I added a few torn-up basil leaves (from the store; mine isn't happy at the moment) to the salad as well.

    I'm torn about dessert. Ice cream, or a square or two of chocolate?
    At least I don't leave slime trails.

    It was Pabla's Indian Cuisine, there's a location right here in Renton where I live and I believe one in Issaquah. You could probably look it up online.

    Tonight's dinner was spaghetti with vegan meatballs and vegan parmesan, garlic and rosemary bread with olive oil and vinegar to dip, and I'm currently making some whole wheat blueberry muffins, that I will probably have for desert!

    Last night we grilled salmon burgers and topped them with the avocado basil dressing I made last week. I made a spinach salad with strawberries, red onion and goat cheese.
